We all really enjoyed this recipe. It’s great for adults and little ones.
TODDLER TIP: If this texture is too much for your toddler, once the soup is ready, before adding the pastina remove a portion and transform it into a smooth creamy puree’. Cook the pastina on the side and add it to the puree’ to make a silky smooth meal for your little one!
INGREDIENTS:
2 carrots, peeled and finely chopped
2 leeks, thinly sliced
3 garlic cloves, minced
2 Tablespoons tomato paste
300gr. red lentils
bunch of kale (10 leaves)
200 gr. pastina
2 sage leaves
1 rosemary sprig
6 Tbsp olive oil
1 tsp sea salt

I roasted them at 400F for a bit more than one hour. I wanted them to fully caramelize to get that lovely sugary roasted flavor.

Bake in preheated oven to 400F for 25/30 min.
Some tips from experience:
1. Roll the pastry to reach a 2mm thickness. This is important to obtain a fully cooked final roll. If you don't roll and thin the pastry layer, it will not cook nicely in the center.
2. Don't use too much tomato sauce. I like the thickness of Mutti "passata". You can also use tomato paste. Any extra tomato sauce or a too liquid one will simply leak out.
3. Use shredded mozzarella cheese, not the fresh one in the liquid. You basically want to use not too moist ingredients.
4. Parmesan Cheese. This is a great addition, do not skip it. It really enhances the flavor.
5. Do not skip the "refrigerate for 20 min" step. If you don't have 20 min, place the roll in the freezer. It's important as it will make the slicing of the rolls easier before baking them.

The egg wash on top will give a lovely golden color to your Pizza Tree and will also keep the bites together. Add a cup of your favorite tomato sauce at the top and enjoy dipping the pizza balls, one after the other. The kids love the idea of finding a different flavor in each ball, like in a treasure hunt!

That’s it!
When the pasta water is boiling add the sea salt, pasta AND broccoli. Follow the cooking time on the pasta package, reserve 1 cup of boiling water to thin the sauce, drain and add the other ingredients. Add the starchy boiling water a bit at the time to keep the pasta creamy and not dry. I ended up using the whole cup. Enjoy!!

Every bite is loaded with flavor, it’s a beautiful colorful recipe that appeals to little ones too. I served it with a side of rice to complete the meal (protein + veggie + carbs = jackpot!).
INGREDIENTS:
1 lb. chicken breast or thighs, cut in bite size pieces
1 Tbsp basil pesto (See recipe link below)
1 Tbsp tapioca flour
3 medium zucchini, sliced
1 1/2 cup cherry tomatoes, cut in half
olive oil
sea salt to season
PROCEDURE:
In a bowl add the chicken stripes and the tapioca flour. Mix, cover and let rest for 10 min (while you prepare the remaining ingredients).
Trim the zucchini and slice them in 3mm slices.
Cut the cherry tomatoes in half.
In a large skillet add 2 Tbsp olive oil and let it heat up for 1 min at high. Add the chicken. Distribute the chicken evenly so that it doesn’t overlap and let it cook without stirring for 3 minutes so that it will form a lovely golden sear. Stir the chicken and keep cooking for another 8 minutes up until the chicken is fully cooked. Remove the chicken from the skillet. Add a drizzle of olive oil and the zucchini. Let the zucchini cook for 1 min without stirring to sear them and then mix. Cook for 5 min stirring occasionally. Add the tomatoes, the chicken and the basil pesto to the skillet. Mix for 1 min and serve.
Inspiration for this recipe = a small container of leftover basil pesto from a previous recipe. You can buy basil pesto or you can easily make some at home and freeze it for future needs. Here is my basil pesto recipe. buonapappa.net/homemade-basil-pesto

The crust is our favorite part. The double round of coating (egg + breadcrumbs + egg + breadcrumbs) creates a lovely crunchy and tasty crust that contains the moist and tender spinach and chicken filling. Thanks to the spinach the chicken doesn't dry out. Thanks to the chicken, the spinach does not have a metallic flavor. Perfect combo. 💕

Ingredients:
1 whole chicken, organic if possible
2 large oranges
Rosemary
Thyme
2 tsp Sweet paprika
2 cloves Garlic
Sea salt
Olive oil
Potatoes
In a bowl mix together the zest of one orange, 1 Tbsp minced rosemary and 1 Tbsp min ed thyme, 2 cloves minced garlic, 1 tsp sea salt, 2 tsp sweet paprika and 3 Tbsp olive oil. Mix into a paste.
Place the chicken (patted dry with a paper towel) in a large baking dish. Spread the paste all over it, spread some paste in between the chicken breast and the skin too.
Add 1 tsp sea salt inside the chicken all together with a few rosemary and thyme sprigs. Add also 1 orange cut in quarters. To release more flavor poke the orange skin with a knife.
Tie the chicken legs with a kitchen twine. Place the chicken breast up on the dish.
In a bowl add the potatoes: peeled and chopped in small pieces. Dress with 1 tsp sea salt and 2 Tbsp olive oil and mix. Place the potatoes all around the chicken.
Roast the chicken in preheated oven to 425F for 1.5hr. Once cooked remove from the oven, cover with parchment paper and a towel and let it rest 5 min before serving. Enjoy!
Leftovers are wonderful for a chicken salad or sandwich.

It’s an easy make ahead recipe.
☀️ 4 medium potatoes. Peeled, chopped in bite size pieces and boiled
☀️ green beans, corn cups, chopped in short sticks. Boiled.
☀️ 2 cups sweet cherry tomatoes. Chopped in half
☀️ 1 can chickpeas, drained and rinsed
☀️ 1 medium shallot, minced
☀️ 1 medium clove garlic, minced
☀️ 1 large tablespoon of basil pesto (you can add more for stronger flavor)
☀️ 10/12 basil leaves, chopped
☀️ salt and olive oil for dressing

Zucchini + cherry tomatoes + Taggiasca olives + shallots + mozzarella di bufala. Yum!
Did I mention that the recipe is ready in 20min total?
Start letting a large pot of water reach boiling point. Meanwhile cut 2 cups of sweet cherry tomatoes in half, 3 medium zucchini in half lengthwise and than in slices and 3 shallots in thin slices.
Heat a large skillet or wok at medium/high heat with 4 Tbsp olive oil. Add the shallots and cook for 3 min. Stir every minute, nothing more. That’s how you will get the golden brown color. Do not over stir. Add the zucchini and cook for additional 4 min. Adjust with 1/2 tsp salt. Same rule, stir every minute. Add the tomatoes and adjust with 1/4 tsp salt. Cook for 2 min. Turn the heat off. When the pasta is cooked (follow the cooking time on the packaging) drain it and place in a large bowl. Add the veggie mix, 3 Tbsp of pitted Taggiasca olives, 4 leaves of fresh basil and mix. Serve in bowls with cubes of mozzarella di bufala on top.

Summer ripen tomatoes + mozzarella ( I tried with burrata, gorgeous too!) + sautéed zucchini (8 min in the pan with one clove of garlic, olive oil and sea salt) + basil pesto + sea salt + extra virgin olive oil.
Kids version = exactly the same ingredients, simply chopped and mixed with any kid of pasta you like.
Hubby version = anchovies fillets on top on the basil
One family = one recipe = one meal together.
It’s beautiful plate too, mono portions. I would save the recipe if your would like to impress your friends for a dinner. 😉

My little one loves it. The cannellini beans are creamy and with a natural sweet background flavor. Perfect for little palates. Sunriped tomatoes are a gorgeous match. The feta cheese gives that lovely salty punch all together with the olives. Basil and red onion complete the mix.
It's a great idea for all ages.
I served the salad with some focaccia bread for everyone's happiness.
TODDLER Tips:
- You can serve the salad divided, not mixed. A bit of every ingredient in little piles on the plate. Limit the feta cheese to few crumbles as it's very salty and maybe just one tiny piece of red onion to get them used to the flavor.
- You can cut the pitted olives in half or quart
- If you feel the feta is too salty, substitute it with a tablespoon of ricotta or cottage cheese or mozzarella sliced in strips.
INGREDIENTS:
- 2 cans cannellini beans, drained and rinsed
- 3 medium "cuore di bue" tomatoes. Heirlooms or cherry will be awesome too. Try a bite, they need to be sweet.
- 4 Tbsp feta cheese in crumbles
- 2 Tbsp taggiasca pitted olives (in olive oil)
- drizzle of extra virgin olive oil
- fresh basil
- 1/2 medium red onion (Tropea onion), minced
These meatballs are juicy, tender and with a 50/50 veggie/meat ratio. They are a big hit at our table. The sauce is new too: I mixed tomato sauce with milk, almost equal parts. The milk eliminates the tomato acidity creating a very creamy and naturally sweet sauce.
Get ready with some ciabatta bread to enjoy the sauce once the meatballs are gone 😉
The suggested quantities will give you enough meatballs for two meals for 4. I usually cook half of the meatballs and freeze the rest before cooking them.
For the zucchini I used a very special Italian variety called “trombette” (aka trumpets). They are famous for their trumpet shape and sweet taste, no seeds at all. They are in season now and easy to find here, but any zucchini you can find will work.
MEATBALLS INGREDIENTS
400gr ground beef
200gr pork sausage
2 medium carrots, peeled and grated
3 medium zucchini, grated
1 medium egg
70gr. parmesan cheese, grated
100gr. breadcrumbs
1 Tbsp italian parsley, minced
1 tsp sea salt to season
SAUCE
half red onion, minced
250gr. tomato sauce (I love the Mutti passata)
200ml whole milk
3 Tbsp olive oil
1/2 tsp sea salt to season
PROCEDURE
In a large bowl mix all the ingredients for the meatballs: the grated carrots and zucchini, ground beef and sausage (remove the skin), egg, parmesan cheese, breadcrumbs, parsley and sea salt. Mix everything to combine well. Roll with your hands small meatballs with 1 Tbsp of the mix. You can now cook the needed quantity for your meal and freeze the remaining meatballs. I usually consider 2 meatballs for the kids and 3 for adults.
In a large skillet, heat the olive oil and add the onion. Cook for 1/2 minutes at medium heat up until golden. Add the meatballs and sear them nicely all around for 2/3 minutes. Mix the tomato sauce with the milk, season with sea salt and add them all around the meatballs. Reduce the heat to a simmer and cook uncovered for 15 min up until the sauce thickens.
Serve warm and enjoy!

Yes, the same lunchbox can be adapted to different ages. One family = one lunchbox!
🌿 The featured one is appropriate for an older kid +6yrs.
For a toddler you can make the following changes:
💕 Reduce the quantity. This portion might be too much. I would cut the quantities in half with the exception of blueberries (they are super sweet and rich in antioxidants).
💕 Cut the tomatoes in half
💕 Serve the cherries already pitted (btw. do you know the metal straw method to remove the pit?)
💕 Cut the mozzarella bites in 4 pieces
💕 Pistachios. It's a choking hazard for little ones. Too hard to swallow and they need to learn how to chew them. Substitute them with raisins, dried strawberries or a piece of cookie.

This is a quick and easy meal you can prepare for your little ones.
🌿 you can prepare it in 5 minutes
🌍 you can fill the sandwich roll with your favorite ingredients (pb&j + hummus&carrots + cream cheese&cucumbers....anything you like!)
🌷you can switch the spinach/cucumbers with broccoli or kiwi or green grapes
🌈bonus if you add the spinach as base: it’s extra exposure and your little ones might snack on them
🌳the decoration can keep going with so many more details. Add a smiling sun with mango/pineapple/banana for the sun and blueberries/rasperries for the eyes and smile
🌍make this lunch a fun activity. Prepare this idea as example and let your kids create their own tree. Place the ingredients on a cutting board in front of them and the empty plate as canva.

Ingredients
CRUST:
150 gr butter (1 stick and 3 Tbsp)
3 gr sea salt (1/2 tsp)
10 gr sugar (2 tsp)
1 medium egg
70 gr. Grated Parmesan cheese (2/3 cup) + 3 Tbsp to grate on top
250 gr all purpose flour (1 2/3 cup)
FILLING:
600 gr potatoes, boiled (5 medium)
1 medium onion, chopped
200 gr provolone cheese, sliced (7 slices)
TOPPING:
3/4 Tbsp Grated parmesan cheese
Drizzle of olive oil
Bake in preheated oven to 400F/180C for 40/50 minutes.

My hubby even asked if they were fried for how crispy the crust was. 😍
The secret is toasting the breadcrumbs before coating the fish and using a grid to bake the sticks so that the air circulates all around the coating keeping it crisp. Extra points if you use an air fryer, it enhances the crispness even more.
INGREDIENTS:
1 lb. white fish fillets, cut in sticks. I used rockfish.
2 cups Panko breadcrumbs
Cooking spray (either olive or coconut oil)
1 tsp garlic powder
1 tsp sweet paprika powder
1 tsp dried onion
1 tsp sea salt
2 eggs
2 Tbsp milk
Bake the fish sticks in preheated oven to 400F or air fryer for 15 min.

This is a great recipe to offer spinach to your kiddos. The bechamel sauce embraces the ricotta and spinach balls in a delicious way. The ham and provolone on top contribute to the tasty flavor.
It’s a great make ahead recipe. Easy to make and perfect to freeze. Great for dinner but also for family gatherings.
INGREDIENTS:
700ml Bechamel sauce (see below for separate recipe)
200gr. ham, thinly sliced (7oz)
200gr. provolone cheese, sliced (7oz)
5 Tbsp breadcrumbs
2 Tbsp olive oil
4 Tbsp parmesan cheese, grated
FOR THE SPINACH BALLS:
700 gr. spinach (two 12oz bags)
500 gr. ricotta cheese15oz
2 eggs
4 Tbsp parmesan cheese
8 Tbsp breadcrumbs
1/2 tsp nutmeg
1/2 cup flour
1 tsp sea salt
FOR THE BÉCHAMEL SAUCE:
500 ml milk
100 gr butter
100 gr flour
1/2 tsp nutmeg
3/4 tsp sea salt
