Remove, roll out, and run sections through a pasta maker from the widest setting to the narrowest, occasionally folding in half to strengthen the glutenous bonds."MEAT" SAUCE: Onions, finely diced mushrooms, broccoli and cauliflower, garlic, fresh basil, two tins of tomato.Sautee onions in vegetable oil, with a pinch of sugar. Add mushroom, broccoli and cauliflower. One vegetable stock cube, balsamic vinegar to taste. Two tins of tomato. Garlic and fresh basil late in the cooking process. You want everything to soften down but retain its zingy flavour."CHEESE" SAUCE: Heat up 300ml cashew milk in a saucepan, throw in a few handfuls of a good vegan cheese. Add a quarter teaspoon of asafetida, and preferably some nutritional yeast flakes. Lots of salt and black pepper. Scoop up a small amount of your heating sauce and add half a teaspoon of corn starch. Mix into a slurry and reintroduce to thicken your sauce.Assembly: Lightly oil a casserole dish. Add a layer of pasta, then the "meat" sauce, then the "cheese" sauce, and then another layer of pasta. Keep going til you can go no further and top with a handful of vegan cheese.
