1. Bake two sweet potatoes, wrapped in foil, at 400 degrees F for about an hour until soft. Let them cool, then peel and mash them.
2. Mix up the mashed sweet potato, butter, two egg yolks, brown sugar, salt, ground ginger, cinnamon, nutmeg, cloves, and evaporated milk in a blender until smooth.
3. Whip two egg whites and 1/4 cup of white sugar until stiff peaks form.
4. Fold the pumpkin mixture into the eggs until combined.
5. Bake at 350°F for 50 minutes or until a knife comes out clean.
6. Let cool before serving.
