The most important thing to keep in mind is that this salad is not one that can be mixed ahead of time without running the risk of losing its most essential and pleasurable feature: the combination of flavours that remain distinct and individual. To enjoy its beauty as well as its taste, it should be set out ( as in the markets) arranged in colourful mounds on attractive flat dishes from which guests help themselves, mixing their own portions according to personal taste.
