Trying a New Recipe: Spicy Red Curry Coconut Noodles (vegan/gluten free) Sarah Rose Vlogs 2021-07-31 | Hope you enjoyed this cooking vlog!! INGREDIENTS (makes 2 servings):-1 shallot (can sub 1/2 a small onion)-1 oz fresh ginger-1 garlic clove (we used more)-6 oz baby bok choy-1 block extra firm tofu-2 tbsp red curry paste-5.5 oz coconut milk-1 tsp sugar-6 oz rice noodles (or udon)-1/4 oz fresh mint-1 limeDIRECTIONS:1. Bring a large pot of salted water to a boil. Once the water is boiling, add noodles and cook according to package instructions.2. Peel & thinly slice the shallot. Chop unpeeled ginger into large pieces. Peel & thinly slice garlic. Trim & thinly slice baby bok choy. 3. Drain the tofu. Pat out excess water with paper towel. Slice into 1 inch pieces.4. Heat 1 tsp of vegetable oil in a medium saucepan over medium heat. Add shallot, ginger, & garlic. Cook until ginger & garlic are slightly toasted. Add red curry paste, coconut milk, sugar. (Recipe says to add 1/2 cup of water here, but we didn't do this.) Bring broth to a boil, reduce heat to low, & simmer until ready to serve.5. Heat 1 tbsp of vegetable oil in a large skillet over medium-high heat. Add tofu and sprinkle with salt & pepper. Cook, tossing occasionally, until tofu is golden brown, 5 to 6 minutes.6. Pick the mint leaves. Halve & juice the lime. Remove ginger pieces from the broth & add sliced baby bok choy. Add 1/2 tsp salt & let broth continue to simmer a few minutes until bok choy is wilted. Remove saucepan from heat and add lime juice.7. Divide noodles between bowls & top with broth and tofu. Sprinkle with mint leaves.
