Making Pumpkin Chocolate Chip Cookes #recipe #recipes #cookbook #baking Beyond Books 2024-10-11 | Join me and my hungry co-host Raina as we bake some Pumpkin Chocolate Chip Cookies and make some delicious doggie treats!Pumpkin Chocolate Chip Cookie Recipe (my version)adapted from Mayim's Vegan Table CookbookIngredient'sNonstick cooking spray (I just use parchment paper)8 tablespoons (1 stick) vegan margarine (I used butter)3/4 cup brown sugar3/4 cup granulated sugar1 cup canned pumpkinEgg replacer to equal 1 egg (I used 1/4 cup applesauce, other suggestions are 1/4 cup mashed banana, vegan egg replacement products or an actual egg, if you don't mind non-vegan cookies) 2 teaspoons vanilla extract2 1/2 cups all-purpose flour1 teaspoon ground cinnamon1/2 teaspoon ground ginger1/4 teaspoon ground clovespinch of ground nutmegpinch of mace (I did not use nor have I ever used, it is optional)1 teaspoon baking powder1 teaspoon baking soda1/2 teaspoon salt (I did not add any additional salt, I try to stay low sodium as much as I can)1 cup vegan semisweet chocolate chips (I used regular chocolate chips, but unfortunately that part of the video got mistakenly edited out - SORRY!)350 degree ovenUse a large bowl to mix margarine and sugars until creamy. Add the pumpkin and mix. Add the egg replacer and mix, then vanilla and stir well.Stir together the dry ingredients in a separate bowl. Add the dry ingredients to the pumpkin mixture, stir to combine. Fold in the chocolate chips with a spoon or spatula. (for some reason, I did not get this part on video - but I did add 1 1/4 cup of the chocolate chips)Spoon the batter in 1/3 cup measures onto the prepared baking sheets, leaving 1 inch between the cookies. Bake for 15 minutes or until lightly golden brown. (I had to go about 17 -18 minutes to achieve a nice color and fully baked cookie). Let the cookies rest on the pan for 1 minute after removing from the oven and then cool on wire rack. Enjoy with coffee, tea, cocoa or your favorite hot beverage! Another Walk in the Park featuring Raina, the Mole-Hunting Wonder Dog! Beyond Books 2024-08-15 | Join me and my furry friend as we take a little walk around Freedom Park in Williamsburg, VA. Freedom Park has a rich historical background dating back to the 1650s. This park is the site of an 18th Century cemetery, the Revolutionary War Battle of Spencer’s Ordinary (1781) and a 17th Century domicile which is revealing much archaeological research of the early colonial period (1680-1730). Freedom Park was also home to one of the nation's earliest Free Black Settlements in America from 1803-1850. Three historically accurate recreated cabins are located in the park, and are furnished with items authentic to the period.This 600-acre forested retreat also features approximately 2 miles of multiuse trails, including a 1-mile ADA accessible paved trail, and more than 20 miles of mountain bike trails winding through historical sites, forests and along creeks and open meadows. The bike trails are designed, built, and maintained by the Eastern Virginia Mountain Bike Association. The Williamsburg Botanical Garden is also located at Freedom Park. Members of the Garden developed and maintain the area which features more than 800 species of native vegetation. The Garden also offers monthly educational programs, and special events throughout the year.

Buffalo TOFU? Its whats for dinner! Beyond Books 2024-08-11 | Join me as I cook up a delectable batch of Buffalo Tofu! It's an uncommon American treat, but very nutritious - full of protein and very little fat!Here's the basic recipe, but really - I made this up, so it's pretty fluid and I would love to hear about suggestions you may have -1 block of firm Tofu (usually 12 oz) - drained well.1/4 cup Olive Oil1/4 cup lime juice (or the juice of 1-2 fresh limes)1 TBSP honey (or agave)3 -4 cloves of garlic, minced (I used more, but I'm a Gar-li-holic) Sprinkle of salt and pepperYour favorite Hot Wing or Buffalo Sauce (my choice is Frank's Red Hot Wing Sauce)Cut tofu in small cubes. Each cube should be about 2 bites size. Whisk together oil, lime juice, honey, minced garlic and salt and pepper. Toss in Tofu pieces and toss bowl until they are well-coated. Put in fridge to marinate for 1 -2 hours. Preheat oven to 400. Add sauce to tofu mixture to desired amount. Spread pieces out on cookie sheet covered with parchment and be sure to cover will all your delicious sauce. Bake for about 30 minutes, then remove from oven and turn tofu. Return to oven for about another 20 minutes or until somewhat crispy. Enjoy with a little additional Buffalo Sauce, fresh lime spritz, sour cream, etc.....These bits make a fun and surprising taco or burrito filling with lettuce, tomato, onions, etc..Stay healthy!Here's a link to a good article about the benefits of eating tofu.
