-3/4 cup (180g) applesauce
-3/4 cup (135g) cane sugar
-1/2 cup (130g) coconut butter
-3/4 cup (180g) almond milk
-1 tsp vanilla extract
-1 tbsp apple cider vinegar
-1 1/2 cups (185g) gluten-free flour
-2 tbsp (15g) coconut flour
-2 tsps baking powder
-1/2 tsp salt
-1/2 cup (80g) rainbow sprinkles
Glaze
-1 1/2 cups (180g) powdered sugar
-2-3 tbsp almond milk
-½ tsp vanilla extract
Preheat the oven to 350°F. Whisk together applesauce, sugar, creamed coconut, almond milk, vanilla, and apple cider vinegar (all at room temperature or slightly warmed). Add the flours, baking powder, and salt. Whisk to combine. Fold in the rainbow sprinkles. Pour into a 8x4” loaf pan (lined with parchment or sprayed with nonstick spray) and smooth the top. Bake 50-55 minutes at 350°F. Cool for 15 minutes in the pan, then transfer to a cooling rack to cool completely before glazing. Whisk together glaze ingredients until smooth and thick. Glaze the cooled cake, slice, and serve.

1. Preheat oven to 350°F.

* 1 cup (200g) almond pulp
* 1/2 cup (35g) shredded unsweetened coconut
* 1/4 cup (35g) hemp seeds
* 1/2 cup (40g) rolled oats (sub with cashews for paleo)
* 2 tbsp (15g) chia seeds
* 1/3 cup (85g) almond butter (or nut/seed butter of choice)
* 1 tsp vanilla extract

* 1/2 tsp baking soda

* 1/2 cup (25g) mini vegan marshmallows
1. Preheat oven to 350°F.
2. In a food processor, blend pitted medjool dates, almond butter, almond milk, prepared flax egg, and vanilla. Process to a smooth paste (a few chunks are okay).
3. Transer to a bowl and stir in almond flour, salt, and baking soda.
4. Fold in marshmallows and chocolate chips.
5. Scoop onto a lined baking sheet, leaving room for them to spread. Add a few extra chocolate chips on top.
6. Bake 11-12 minutes at 350°F.

* 1 15oz can coconut milk*
* 1 cup Organic SunButter
* 1/4 cup maple syrup
* 1/2 cup cocoa powder
* 1 tsp vanilla extract
* 1/2 tsp salt
* Toppings of choice
1. Pour coconut milk into an ice cream tray and freeze overnight (shake before opening).
2. Blend all ingredients in a high speed blender until smooth. You will need to use the tamper and stop to scrape down the sides frequently, try to avoid adding extra liquid.
3. Spoon into bowls as is. Or transfer to a piping bag, freeze for 30 mins or so, then swirl into bowls or cones for that "froyo" effect.
4. Top and enjoy!

Ice Cream
* 2 cups (250g) raw cashews, soaked 3+ hours and drained
* 1/3 cup (105g) maple syrup
* 1/2 cup (120g) full-fat coconut milk
* 1 tsp vanilla extract
Caramel
* 1/4 cup (70g) tahini (or nut/seed butter of choice)
* 3/4 cup (150g) pitted medjool dates, soaked 30 minutes
* 1/4 cup (50g) coconut oil
* 1/4 tsp salt
* 1/2 tsp vanilla extract
* 1-2 tbsp water as needed
1 cup roasted chopped cashews (or peanuts if not paleo)
4oz dark chocolate, melted
1. Blend ice cream ingredients until very smooth.
2. Pour into a loaf pan lined with parchment paper. Freeze.
3. Blend caramel ingredients, adding water one tbsp at a time as needed (some chunks are okay).
4. Spread on top of the ice cream layer. Top with chopped cashews. press in lightly.
5. Freeze overnight.
6. Slice into bars, coat in melted chocolate, chill until set.

* 1/3 cup (105g) maple syrup

1. In a saucepan combine coconut oil, almond milk, SunButter, maple syrup, and vanilla.
2. Bring to a boil, boil for 2 minutes stirring constantly.
3. Remove from heat and immediately stir in the oats.
4. Scoop cookies onto a lined baking sheet (a cookie scoop works best here). Top each with a few chocolate chunks.
5. Refrigerate at least 1 hour until firm.
6. Eat! Keep leftovers in the fridge.

1 flax egg (1 tbsp ground flax + 3 tbsp warm water)
1/2 cup (125g) Chocolate SunButter
1/2 cup (80g) coconut sugar
1 tsp vanilla extract
1 cup (85g) rolled oats
1/2 tsp baking soda
1/2 tsp salt
1/2 cup (60g) chocolate chips or chunks
1. Preheat the oven to 350ºF.
2. Prepare flax egg and set aside to gel.
3. Combine Chocolate SunButter, coconut sugar, flax egg and vanilla. Beat with a hand mixer until well combined.
4. Add oats, baking soda, and salt. Beat again to mix.
5. Fold in chocolate chips or chunks (reserving some for on top)
6. Scoop onto a lined baking sheet, leaving room in between for spreading.
7. Bake 12 minutes at 350ºF. Add a few extra chocolate chunks/chips on top and bake for another 2-3 minutes until melty.
8. Cool for 30 minutes on the pan (they are fragile when hot) before transferring to a cooling rack.
9. Keep leftovers in an airtight container in the fridge for up to a week, or freeze for longer storage.

Cupcakes
* 1/4 cup (37g) gluten free flour
* 2 tbsp (10g) cocoa powder
* 1/8 tsp salt
* 1/2 tsp baking powder
* 3 tbsp (20g) coconut sugar
* 5 tbsp (75g) almond milk
* 2 tbsp (32g) Chocolate SunButter
* 1/4 tsp vanilla extract
* 1 tbsp (15g) dark chocolate chips
1. In a large mug or ramekin, whisk together flour cocoa powder, coconut sugar, baking powder, and salt.
2. Add almond milk, Chocolate SunButter, and vanilla.
3. Mix to combine.
4. Stir in the chocolate chips.
5. Microwave for 1:30 to 2 minutes OR bake in the oven for 23-25 minutes at 350ºF until the top bounces back when lightly pressed (*see notes)
6. Cool for 5-10 minutes, top with ice cream, whipped cream, or a dusting of powdered sugar. And eat!

Cupcakes
1/2 cup Hu Gems
3/4 cup coconut sugar
1 1/4 cup almond milk
1 tbsp apple cider vinegar
1 1/4 cup cassava flour
1/2 cup cacao or cocoa powder
1 tsp baking soda
1/2 tsp salt
Frosting
1 can coconut cream, chilled 24 hours
1 cup freeze dried raspberries
1. Preheat the oven to 350ºF
2. Melt the chocolate with the almond milk. Stir until smooth
3. Whisk in the coconut sugar and apple cider vinegar
4. Add the rest of the cupcake ingredients and mix
5. Spoon into a cupcake pan with paper liners, filling each ¾ of the way
6. Bake for 25 minutes at 350ºF
7. Cool completely before frosting
8. For the frosting: Scoop out just the solid part from the can of coconut cream. Beat (preferably in a chilled bowl) until fluffy. Blend the freeze dried raspberries (in a DRY blender) until powdery. Stir in freeze dried raspberry powder to desired color/taste. Chill to thicken
9. Frost cooled cupcakes and eat.

Ingredients
Mousse
* 1 cup nut/seed butter
* 1 cup coconut cream
* 2 tbsp maple syrup
* 2 tbsp cocoa powder
* Pinch of salt
Jam
* 2 cups frozen berries
* 1 tsp coconut sugar
* 1 tbsp water
* 1 tbsp chia seeds
* 1/2 tsp vanilla extract
1 cup (180g) dark chocolate, melted
Instructions
1. Combine mousse ingredients in a bowl, and whip until fluffy. Refrigerate.
2. Combine berries, coconut sugar, and water in a saucepan. Bring to a boil, simmer 2-3 minutes until berries are soft.
3. Add chia seeds and simmer 5-6 more minutes over medium heat until thick.
4. Remove from heat and stir in vanilla. Transfer to a bowl, and cool for 30 minutes.
5. Line a mini muffin pan with paper liners.
6. Fill each 3/4 of the way with mousse. Top with berry jam.
7. Freeze overnight.

Ingredients
* 1 cup almond flour
* 1/3 cup coconut flour

* 1/2 a vanilla bean (or 1 tsp vanilla extract)
* 1/4 tsp salt
Chocolate Fudge Filling
* 2/3 cup Hu Gems
* 1/4 cup (60g) coconut milk
Instructions
1. Whisk almond flour, coconut flour, cinnamon, cloves, baking soda, zest, seeds scraped out of the vanilla bean, and salt.
2. Add maple syrup and coconut oil. Mix to form a ball of dough.
3. Roll out between two pieces of wax paper to 1/4 inch thickness.
4. Cutout with a linzer cookie cutter, you should get approximately 16 cookies.
5. Transfer dough to a pan and freeze for 30 minutes (this makes transferring to the baking sheet easier.
6. Preheat the oven to 350ºF.
7. Use a spatula to transfer cookies to a lined baking sheet.
8. Bake for 8-9 minutes until golden brown.
9. Cool completely.
10. For the filling, melt the Gems with the coconut milk. Stir until smooth.
11. Spoon a dollop of the filling on each whole cookie, top with the cutout cookies, and chill until the chocolate is firm.

Instructions
1. Preheat the oven to 350ºF.
2. Blend the dates with coffee, apple cider vinegar, and peppermint extract (or oil) until smooth.
3. Transfer to a bowl and stir in SunButter.
4. Add the flours, cocoa powder, baking soda, and salt. Whisk/stir until combined.
5. Scoop into a cupcake pan, filling each to the top (you should get 7-8 cupcakes depending on your pan).
6. Bake for 22-25 minutes at 350ºF until they bounce back when lightly pressed in the center.
7. Cool completely (even overnight) before frosting.
8. Frost, garnish, and eat!

Ingredients
1 1/2 cups rolled oats
1 1/2 cups roasted pecans
2 tsps baking powder
1 tsp cinnamon
1/4 tsp nutmeg
1/2 tsp salt
1/4 cup nondairy yogurt
1/4 cup almond milk
1/2 cup maple syrup
2 flax eggs (2 tbsp ground flax + 6 tbsp water)
1 tsp vanilla extract
Glaze
1 cup powdered sugar
2 tbsp maple syrup
pinch of salt
1-2 tsps almond milk (if needed)
Instructions
1. Preheat the oven to 350ºF.
2. Prepare flax eggs and set aside.
3. Grind the oats and pecans in a high speed blender to a fine flour. Sift of whisk in a bowl to remove all clumps and lighten/aerate.
4. Add baking powder, spices, and salt. Whisk to combine.
5. In a separate bowl, whisk together yogurt, almond milk, maple syrup, flax eggs, and vanilla.
6. Add wet to dry, and mix to combine.
7. Pipe into a greased donut pan.
8. Bake for 20-23 minutes at 350ºF. until golden brown on top. They should bounce back when lightly pressed.
9. Cool for 5-10 minutes before flipping out onto a cooling rack to cool completely.
10. For the glaze, whisk together powdered sugar, maple syrup, and salt. Add milk slowly if needed to get a drizzle-able glaze consistency.
11. Dip or drizzle the donuts with glaze, and eat!

3/4 cup pumpkin puree
1/2 cup almond butter
1/2 cup maple syrup
1 tsp vanilla extract
2 tsps pumpkin pie spice
1/4 cup coconut flour
1/4 cup tapioca flour
1/2 tsp baking powder
1/4 tsp salt
To decorate:
1/4 cup dark chocolate chips, melted
1 cup powdered sugar
1-2 tbsp almond milk
Optional: a few drops red and yellow food coloring
2 dark chocolate peanut butter cups
Sprinkles for decorating
Instructions
1. Preheat the oven to 350ºF.
2. Whisk together pumpkin, almond butter, maple syrup, and vanilla.
3. Add flours, spices, baking powder, and salt. Stir to combine.
4. Divide into 4 greased mini bundt pans.
5. Bake for 30 minutes at 350ºF until golden on top and spring back when lightly pressed.
6. Cool completely.
7. Cut off excess cake with a bread knife to flatten the bottoms (bigger side) of each bundt cake. Use melted chocolate as the "glue" to stack into 2 pumpkins.
8. Whisk together powdered sugar and almond milk to make the glaze. Add food coloring if desired.
9. Drizzle glaze on top of the pumpkins, place a peanut butter cup in the top to make the stem, add sprinkles, and refrigerate until glaze is set.

Ingredients
1/4 cup coconut oil
1/3 cup coconut sugar
1/3 cup cane sugar
1/2 cup pumpkin puree
1/2 tsp vanilla extract
1 1/4 cup gluten-free flour (or all purpose flour)
1 tsp baking powder
1 tsp pumpkin pie spice
1/4 salt
Frosting
1 cup coconut cream
2 tbsp maple syrup
1/2 tsp vanilla extract
1/2 tsp pumpkin pie spice
2-4 tbsp arrowroot (if needed to thicken)
Instructions
1. Whisk together pumpkin, coconut oil, coconut sugar, cane sugar, and vanilla.
2. Add dry ingredients and mix to form a dough.
3. Scoop/roll/press onto a lined baking sheet.
4. Or roll out the dough between two sheets of wax paper to about ¼ inch thickness and cut with a cookie cutter. Freeze for 15 minutes after cutting to make them easier to transfer to the pan.
5. Bake for 12-14 minutes at 350ºF.
6. Cool completely before frosting.
7. For the frosting, chill a can of full fat coconut milk or cream overnight. Scoop out just the solid part.
8. Whip with a hand mixer, adding maple syrup, vanilla, and spice until combined. If it is too thin, add arrowroot one tablespoon at a time until thick and spreadable.
9. Frost cooled cookies, and eat!
