UPDATE 2: I called this out in the video, but after another month of heavily using this pan, I really want to re-emphasize that you really need to keep the handle dry. For example, we made some cream of wheat this past Sunday in the Falk. I put the pan in the sink and ran some water in it afterwards, then we had people coming over for lunch and I started cooking that meal, forgot about the pan, and it stayed in the sink until later in the day. It got really wet several times. Again, I had to clean some flash rust off the handle (just had to wipe it with vinegar/paper towel...not all that big of a deal). Now the instructions clearly say to not leave the handle wet... dry it after washing the pan. But in real-world use in a family household setting, sometimes this just doesn't happen. So I am going to knock off 1/8th of a thumb on my thumbs-up rating here for excess maintenance. The pan is still fantastic in terms of cooking, but for the non-pan-enthusiast, just know there is a little more handle maintenance than you might be used to with a stainless steel or non-stick pan.

- The pan is NOT induction compatible.

- The pan works nicely on gas and electric.

- Falk makes the same pan with a stainless steel handle (if the cast iron seems to be too much work).

- Falk claims to have created the saucier-shaped pan.

- The copper will develop a patina over time. You can polish it to keep it shiny, or what I do is just let the patina develop. It looks rustic/beautiful and is less work.

- The cast iron handle does get HOT. I think due to the slower transfer of heat through the cast iron, it actually seems to continue to heat up for a bit even after you take the pan off the burner as the copper keeps transferring heat to it. Regardless, it got hot on gas and even on electric.

- The stainless steel cooking surface is 18/8 stainless.

These baked beans are also called "Roosevelt Beans," as they are famously served at the Roosevelt Lodge in Yellowstone National Park. In this video, Uncle Scott makes a big batch in a Le Creuset dutch oven and spins a few yarns about the good old days of working in Yellowstone National Park, including time at Mammoth Hot Springs and Old Faithful, a bear story from Roosevelt Lodge, and a few crazy Yellowstone tourist stories too. Yellowstone (Roosevelt) Baked Beans Recipe
Ingredients
- 1 lb. bacon
- 1 lb. sausage (spicy or regular, or beef)
- 1 medium to large onion, chopped
- 1/2 cup brown sugar
- 1/2 cup ketchup
- 2 tbsp. mustard (I use yellow, some use spicy)
- 2 tbsp. apple cider vinegar
- 1 large can Pork & Beans
- 1 can kidney beans
- 1 can lima beans
- 1 can butter beans
- 1 can great northern beans
- salt, pepper, cayenne, and garlic powder to taste

Directions
1. Chop and brown bacon & sausage in a dutch oven, soften onion when they are close to browned
2. Mix flavor ingredients well (ketchup, mustard, vinegar, brown sugar, spices)
3. To the dutch oven with the meat mix, add the beans and flavor ingredients and mix well
4. Bake at 325F for at least an hour
5. Chow down

Variations: You can use a frying pan for the meat and mix everything together in a big mixing bowl and transfer it to a baking dish or crock pot. You can use beef instead of sausage. You can leave out the meat and serve these as a side; with the meat they can be served as a main. You can use less bacon and sausage (but boy are they delicious!).

Estimated calories in the ENTIRE recipe: 6,250. If you get 15 bowls, 415 calories per bowl.

**Previous Update** I just heard back from Matfer and here is the important news:

"We are presently preparing a set of communication to bring further clarity to this matter, and address all the concerns surrounding the report issued by the local (provincial) French consumer protection authority. Our goal is to be as transparent as possible, to share all pertinent factual information, and bring assurance to our customers that our Black Carbon Steel Fry Pans meet the stringent standards established by the French national consumer protection authority...

... We are also working with all appropriate French authorities on this matter to bring clarity to the circumstances surrounding this specific test that was carried out by the local (provincial) French consumer protection agency.

We are approaching this matter with a great sense of urgency. Our utmost concern is for the safety of our customers, and am confident we can present the facts that will bring much needed assurance to the public regarding the quality and safety of our products. Thank you for being the voice of concern, and for the questions you presented, which I know is on everyone’s mind. We will provide you with the answers to your questions as soon as possible. Thanks again for your patience."

They also asked for a little patience as they need to run all the communication through various teams, which I think is understandable.

Previous updates:
**UPDATE 3:** What was the old Paul Simon song lyric about the sounds of silence? The call I was supposed to have with Matfer on Tuesday got moved to Wednesday morning, then they just didn't call. I hope they get in touch today. I really do understand they are in a bit of a hornet's nest at the moment, but at the same time, I really think it would help everyone to have more information and communication and I hope they get more details out soon. I will keep trying and updating as this all develops.

**UPDATE 2:** Lots of people have been asking about whether they should use their pans or not.

My opinion is that right now, I think we're waiting for more info... the pans are not recalled in America and Matfer says they stand behind the safety of their pans. On the other hand, it seems the same pans are recalled in France and if they are dangerous there why are they safe here?

For me, I'm going to put my pans on the shelf and wait and see for a week or so... wait for more info to come out, and then decide to keep using them or not when we have more accurate/complete information.

The Recipe for Steak Au Poivre (so far)
Ingredients
- Good, high-quality steak like a filet or NY strip or ribeye
- Freshly-cracked black pepper
- Heavy cream
- Butter
- Stock
- Green peppercorns (if you can find them)
- Minced shallot
- Cognac (optional to flambè)
- Tomato paste
- Oil

Equipment: Oven-safe frying pan and a mortar and pestle

Directions
1. Crack some black pepper, dry and salt both sides of the steak, press only ONE side of the steak into the cracked black pepper
2. Heat a pan and add some oil, peanut oil works nicely, and when hot, add the steak with the peppered side UP
3. Cook a couple minutes, then flip it, add butter to the pan and baste the steak
4. Transfer to a 500F oven for 3-4 minutes
5. Remove steak from pan and let it rest, drain excess fat from pan if necessary
6. Add 1-2 tbsp butter and the shallot and soften; add a teaspoon or two of green peppercorns
7. If you choose to flambè, carefully move the pan away from open flame, add 1/4 cup cognac, keep pan away from body/flammable objects and light, allow the alcohol to burn off
8. Return pan to burner, add 1/2 cup stock, a squeeze of tomato paste, and 1/2 cup heavy cream, stir and reduce by half
9. Return steak and any juices to pan, peppered side up, to re-heat; plate the steak, and 1 - 2 tbsp butter to the sauce and incorporate, then spoon over steak
10. Chow down and resolve to start a diet the following day
