Traditional Lao way to cook sticky rice is to use steamer basket (huat) to steam the rice which had been soaked in water for 2 hours to overnight. Using this rice cooker method, the rice does not need to be soaked first.
Note: This is only ideal for cooking small amounts of rice if you intend to eat the rice the Lao way (roll into balls with your hands to eat with other food). If you cook too much rice in this cooker, the rice will be wetter and stickier, harder to eat with your hands. If you intend to use it for making desserts like sticky rice mango, cooking larger amounts is ok.

- Hello, my name is Nana [Khamvongsa] Sanavongsay. I live in America. I teach cooking on YouTube.
Q: How did you get started?
A: (After I moved to Calfiornia) My friend called me to ask how I make my Khao Piek Sen. I told her over the phone, but she said, "no, no, no, I tried what you told me. Can you make a video to show me?" I asked my husband to record the video for me and share with my friends on Facebook. Later, he put the video on YouTube without telling me. I was shocked when I found out because I didn't want strangers to see it, because I'm quite a shy person. Then I sat and talked with my mom and husband about making more videos to show the younger generation how to make Lao food so that it will not be lost of forgotten.
Q: What language do you speak in your videos?
A: In the beginning I spoke English because it was easier. When I was younger, I mostly spoke American English. When making the videos, I did not think that other people who didn't understand English would watch my videos. I tried doing some videos in Lao, but eventually decided to do them mostly in English because that is the language most of my audience can understand.
Q: What kinds of reactions did you receive?
A: I received mix of reactions, but they were mostly positive. There were some people who were questioning why I'm teaching non-Lao people how to make Lao food, etc. I feel very happy and proud to show the new generation how Lao food is made.
Q: Who are your followers?
A: My followers include a wide: Lao, Hmong, Mien, people in America, and many different countries. For example, there are some Lao American military people in Japan who watch my videos when they want to make Lao food and they tell me it tastes just like how their parents make it.
Q: Do you have a favorite video you've done?
A: Some of my favorite videos are the first ones I did where you could sometimes hear my mom in the background, [guiding me or scolding me]. There was one where I was making "hoo moo yen" and she yelled at me when I accidentally poured too much black pepper into the broth. When I go back and watch some of the old videos I can feel my mom's presence guiding me to pass on to future generations. I feel very blessed to have been able to learn from my mom because she is no longer here with us. My kids also like Lao food, and I am grateful that I can make it for them.
Q: What is your favorite Lao food?
A: I have a lot of favorites, but I think my top favorite is sticky rice with jeow padek. My mom loved to make jeow padek and I would love to dip it with hot sticky rice. And also gang khiilek. I can sit and eat that all day.
Q: How would you describe Lao food?
A: For people who have never tried Lao food, I would say Lao food is delicious -- it has hot/spiciness, saltiness, savory(MSG)ness. We don't have very many sweet dishes. We have the aroma of ginger, galanghal, lemongrass...
Q: Any messages to the Lao Food Festival 2021 participants?
A: I would like to tell the people back in Laos, that even though we have left a long time ago, we have not forgotten about our food. We still want to pass it along and teach the future generations.

Why we moved?

The owner of the house gave us 60 days to find a new place because they wanted to move back in. Since we got the notice from the property manager, we started looking for a new place, but it was very hard, and we still have not found a new place. Now, we have our things in storage and are staying with relatives until we can find a new place of our own. Even the storage was hard to find!

I'm using three pounds of chilies. If you don't want to make that much, just scale down the ingredients. I like to make a lot a time so I don't have to clean the pots and utensils too often and because it takes a while to boil the chili peppers. This paste lasts for a long time in the fridge and even longer in the freezer.

In American, the dish was popularized in Thai restaurants, but you can also find the dish under different names in Cantonese restaurants.
This is my rendition of this dish. When you make it yourself at home, you can customize it any way you like. Like all my other recipes, adjust the taste, the darkness, and amount of gravy to your own liking after you see how I do it.
The sauce I made it this video can be used for other stir-fry dishes. By mixing ahead of time, you can get a consistent taste when you have to make lots of servings. Some people like seafood, chicken, beef, pork, or other meat.

INGREDIENTS:
-- Vegetables (You can use any veggies that don't have strong taste)
Bok Choy
Mustard Greens
String Mushrooms
Oyster Mushrooms
-- Roasted Herbs
Shallots
Ginger
Chili Peppers
-- Broth
3 cups Water
1/4 cup Padek (fermented fish sauce)
1 tbsp MSG (optional)
1 tsp Salt (if needed)
2 stalks Lemongrass
3-4 Kaffir Lime Leaves
-- Topping
Cilantro, chopped
Sesame Seeds, pan roasted
INSTRUCTIONS
* Steam the vegetables
Make the broth
* While the vegetables are steaming, boil the water for the broth.
* Add lemongrass and kaffir lime leaves to the boiling water. You can also add ghalangal.
* When the water comes back to boil, add padek and MSG.
* Stir and taste the broth. Add salt if needed.
* Remove the broth from the heat and allow to cool.
* Smash the roasted herbs together with a mortar and pestle.
* Pour some of the broth into the mortar and mix.
When the vegetables are steamed to the softness you want, remove from the steamer and allow to cool.
Pour the broth from the mortar into the steamed vegetable and mix evenly.
Taste and adjust with salt or other seasoning as needed.
Mix in the chopped cilantro and roasted sesame seeds.

If you don't have time to make the sauce the way I showed in the video, you can just use those other sauces straight from the bottle. The Mae Ploy sweet chili sauce is good already, but this recipe will bring the flavor up a few more notches.

INGREDIENTS:
3 pounds Lean Ground Pork
2 tbsp Vegetable Oil (or other oil)
2 tbsp Fish Sauce
1 tbsp Salt
1 tbsp Sugar
1 tbsp Chicken Flavor Soup Mix
1/2 tbsp White Ground Pepper
3 tbsp Corn Starch
3 tbsp Lobo Accord Phosphate Powder
2 cups Ice Water
I said, "flour" but I meant to say, "corn starch" when I added the first white powder in the ice water. If you can't find the Accord powder, you can use baking powder or more corn starch.
It is very important that you keep the meat cold while mixing the ingredients and shaping into balls.
In my next video, I will show how to make a quick dipping sauce and also show what the meatballs look like deep-fried and steamed.
