Satay and peanut sauce is a classic Thai street food that's usually made from pork, but the satay that was first introduced to Thailand via Indonesia was made from beef and lamb. This is the steak salad that will "redefine" steak salads for you. I discovered a great way to use up basil that's about to go bad. This recipe is a fantastically versatile Thai basil sauce (which can be made with Italian basil or holy basil) that you can put over any kind of protein, or use as a stir fry sauce. You can make the sauce whenever you need to use up the basil, then keep it in the fridge and there's a quick meal ready to go!
The flavour of this sauce will be reminiscent of a "Thai basil stir fry" that you might have had from your local Thai restaurant. Goes great with fish, chicken, tofu...really anything, so feel free to use it as a base and add to it whatever you have!

A dish to celebrate chilies, in Thai we call this kao pad nam prik pao ข้าวผัดนำ้พริกเผา. We use 3 different types of chilies: Thai chili paste (nam prik pao), roasted chili flakes, and fresh chilies, plus Thai basil to tie it all together. Each chili is added for its unique qualities, and they come together into a beautiful, delicious dish! I am making this with chicken, but any protein can be used. This recipe is what I believe something called "chili garlic noodles" should be. In Thailand we have a dish where spaghetti noodles are stir fried with garlic, dried chilies and Thai basil...which actually sounds much better than it is. SO I decided to take that flavour combination and create a version that I think this dish should be.
The result turned out fantastic! Al dente noodles coated in a super umami sauce, loaded with smoky dried chilies and lots of garlic, with anchovies for depth and a touch of Thai basil for freshness.

Every October, many people in Thailand celebrate "Jay festival" or "Nine Emperor Gods Festival" where people eat a vegan diet for 10 days. Something a little different in this video—the cooking portion is done IN REAL TIME with no cuts, so you see that once all your prep is ready, each batch only takes 3 minutes to cook. In this video you'll learn how to make northern Thai jackfruit curry with pork ribs and tomatoes and lots of healthy greens.
Have you ever cooked with young jackfruit (or green jackfruit)? It's a vegetable you can probably find at your Asian grocery store, and in Northern Thailand it is used in this healthy curry with pork ribs and tomatoes. It's a water-based curry so there's no coconut milk, making it a light curry, much like a soup. The curry paste is the easiest paste you could possibly make. It's also naturally gluten-free, and if you don't eat pork, try it with chicken wings!

Use can use this sauce as is, or jazz it up when you cook with tips in the video, but this will save you a lot of time when you need food fast. It works as a stir fry sauce for meat, vegetables, and even for fried rice and fried noodles. You can also use it for a meat marinade! In this video I also demo how to use the sauce in a basic stir-fry that you can modify using whatever ingredients you have.

I've never been a salad eater...that is until I came upon this delicious dressing! Deep roasted sesame flavour in a dressing that's not too light, not too rich, with the perfect balance of salty, vinegary and sweet. The commercial version is super popular in Japan for good reasons, and I've been able to recreate a version that is almost exactly the same, except with even MORE sesame seeds! Super easy to make at home and can be made gluten free using gluten free soy sauce.
