Refractometers, How Do They Work? (And Should You Buy One?)jkim makes2022-01-25 | Let's talk about how refractometers work, when they're useful and when they're not.

The Silent Puck Ejector Tool is actually an lcd removal tool, but it works really well for ejecting spent pucks from a bottomless portafilter. I use this every day and it's quickly becoming one of the best quality of life improvements I've encountered lately.
You can find these at various retailers, but my dad also sells these on his Etsy shop. Consider buying one from him if you'd like to support him in his retirement!
Many thanks to longpvo for letting me know about these!Baca Drops: Easy Water Dialing for Espressojkim makes2022-07-22 | Water dialing for Espresso is almost impossible using conventional water recipes. With “Baca Drops”, testing different water recipes is much simpler. Instead of changing the hardness of the water in your espresso machine for every shot, you can just add concentrated hardness to the top of your puck before pulling a shot. Baca drops can help you fine tune your espresso when you’re happy with your other dialing parameters.

With it, the beanconqueror app, and a smart scale, I can record full pressure and output profiles. Pressure profiles are recorded using the Popsicle, a custom built bluetooth pressure transducer designed by Mike and Shay. The Popsicle uses a commonly available automotive pressure transducer coupled to a bluetooth capable board and custom battery management software. Altogether, this is one of the most advanced machines you can get at a fraction of the cost.
I highly recommend the BeanConqueror App. It's an easy way to standardize data gathering for coffee brewing and it's really helpful if you want to track changes over time. beanconqueror.com

Here I present vernier scales for the Fellow Ode, Option-O Lagom P100 and the DF64. The Ode and P100 mods can be printed on a paper printer. The DF64 requires a 3d printer.
If you don't have a 3d printer, consider supporting my Dad in his retirement by visiting his Etsy Shop. He makes and sells a lot of my designs.

These modifications allow the Ode to grind fine enough for espresso, lower retention, and provide precise control over grind size. In this video, I highlight the modifications I’ve made to my Ode to turn it into a daily driver espresso grinder.
Disclaimer: Perform these at your own risk and do not expect Fellow to honor their warranty after making these modifications.

In this video, I explore the interesting mechanism that C. arabica utilized to form a stable and fertile hybrid from divergent species to produce the speciality coffee that we enjoy today.

On a decent, it also means not hitting any pre-programmed flow or pressure limits. For those of you with pump machines already pulling shots in the ~15s range, you are already pulling this style of shot.
This profile works best with lighter roasted wash coffees where it accentuates fruit and floral notes, leaving behind darker bitterness and chocolate tones in the puck. Not recommended for naturals as it can accentuate unpleasant fermentation notes, but try it if you'd like.

I've heard a lot of Ditting Lab Sweet cast burrs, but have never been able to try them. When the opportunity to buy some early access 64m SSP cast burrs, I jumped at it. Aligning these burrs in a Fellow Ode is a bit unconventional, but in the end not too difficult if you have a good starting point. Hope this video helps the handful of you ultra coffee nerds with your new burrs!Mid-Tier Unimodal Espresso Grinders: DF64+SSP MP vs Forte+Ditting Burrsjkim makes2022-02-21 | What’s the most budget friendly way to get into unimodal style “ekspresso”? In this video I compare two popular options: the DF64 with SSP Multi-Purpose burrs and the Baratza Forte/Vario with steel Ditting brew burrs. Is one better than the other and what does it take to get them to produce the same espresso quality of grinders five times the price?
Special thanks to fam from the espresso aficionados discord for his tips on using the forte.
