My father in-law is cooking a Korat style, Thai vegetable soup with pak wan (sweet leaf vegetable) with Korat’s famous rice noodles. This Thai soup is called gaeng pak wan mee korat เเกงผักหวานใส่หมี่โคราช . Nakhon Ratchasima (known as Korat) is the largest province in northeast Thailand (Isaan or Isan region). Lots of famous Thai dishes such as papaya salad (som tum - ส้มตำ), BBQ chicken (gai yang - ไก่ย่าง) with sticky rice (khao neow - ข้าวเหนียว), minced pork salad (laab moo - ลาบหมู), and many more have their origin from the Isaan region.
My mother-in-law will stir fry a Thai eggplant recipe. A stir fry Thai long eggplant with duck egg มะเขือยาวชุบไข่ทอด to dip in the famous Thai shrimp sauce dip (Nam Prik Kapi - น้ำพริกกะปิ). Nowadays, it’s common to fry vegetables with egg and flour, but my mother-in-law prefers her old style with no flour, and dips the eggplant only in egg. Duck egg has a much brighter orange yolk and richer flavor than chicken egg.

With the right ingredients, this tom yum recipe soup with shrimp is quick and easy to make. If you have ever visited Thailand, I’m sure this soup was at the top of the list in terms of authentic food to try.
Tom = to boil Yum = to mix Goong = shrimp (prawn)
Tom yum goong ต้มยำกุ้ง is an authentic, aromatic soup bursting with flavor, thanks to the abundant healthy Thai herbs used as the foundation for the broth. Best to use prawns with heads and shells, which give the soup broth a full/rich flavor. It’s loaded with lots of fresh, healthy Thai herbs. The 3 most important that make tom yum complete are lemongrass, kaffir lime leaves, and Thai ginger root (ka). This tom yum recipe soup can also be made with other types of seafood, chicken or pork, but most commonly cooked with shrimp. When simmering, tom yum goong is very fragrant and smells amazing!
There are 2 main versions of tom yum, this is the clear version. The other version of tom yum recipe soup is creamy, with sweetened condensed milk added.
Ingredients: ½ kilogram prawns (devein, Best to use head on with shells) 4 cups water 3 stalks lemongrass (use and cut bottom half) 1 inch piece Thai ginger root (ka ข่า ) 3-8 Thai chilies (to taste) 3-5 Cilantro ROOTS 6-8 cloves garlic (can use whole or coarse chop) 1 medium onion 1 medium tomato 1-2 handfuls of mushroom 6-8 Kaffir lime leaves 2 stalks Green onion Handful of sawtooth coriander (Pak chi farang, if you are able to get) Handful of Cilantro LEAVES 6-8 or more fresh limes (to taste) 3-4 Tablespoons fish sauce (to taste: nam pla น้ำปลา ) 1 ½ Tablespoons Thai chili paste (nam prik pao น้ำพริกเผา) ½ Tablespoon sugar (to taste)
** Important to taste test throughout the simmering process. ** If you have the time and want the best Tom yum goong, first simmer the heads and shells for about 20-30 minutes to make a rich shrimp stalk. ** Add greens (cilantro leaves, sawtooth coriander, green onions) at the end and turn off heat so still crisp, or add to your bowl as a garnish. ** Optional: Thai’s will add extra lime, fish sauce, dried chilies, sugar to their bowl to suit their taste.

Gai lan, aka Chinese broccoli or Chinese kale, is a very nutritious and diverse vegetable that is used in many popular Thai food (fried rice and noodles, stir fry, soup).
Add some hot, steamed jasmine rice to this gai lan recipe, you’ve got the perfect meal. A great, delicious way to introduce some greens in your diet. This is how my 7 year old son got to love his stir fried veggies!
Ingredients: 250 grams pork 300 grams gai lan (called khana in Thai or aka Chinese broccoli) 3-4 medium cloves garlic (coarse cut) 2 Tablespoon oyster sauce 1 Tablespoon fish sauce 1/2 Tablespoon light soy sauce 1 to 1 1/2 Tablespoon sugar (or to taste) 1-2 Tablespoons cooking oil
** If desired, add 2-8 Thai chilies for a spicy treat. ** You may cut off a little of the tough stems on the bottom (about 1 inch), and peel the bottom stems if hard and tough.

Gai lan, known as Chinese broccoli or Chinese kale, is called khana or kana in Thai. Very popular and delicious in Thai stir fry, and so flavorful and comforting prepared as a soup. Khana is also very healthy and nutritious.
Ingredients: 1 to 1 1/2 lbs Khana (Gai Lan - Chinese Broccoli/Chinese Kale) Best if use 1 small to medium pork leg (if not able to get pork leg, use 350-400 grams your cut of pork and if possible add some pork bones for a rich broth) 4-5 TBSP Fish Sauce (occasionally taste and add to your liking) 1 tsp salt 8 cups water
Notes: ** We were not able to get pork leg or bones for this video. When pork leg is not available, we like to use pork belly when cooking this soup because it’s so tender and juicy after a long simmer (make sure you occasionally skim some fat). But you can use your choice of cut of pork. ** This is Somsub's grandparents old school Thai/Chinese authentic soup recipe. The true recipe made in Thailand, requires you grill the pork leg over charcoal for about 10-15 minutes till little brown, then place pork leg in the boiling water. If you don't want to grill the pork, it will still be very delicious if you just add the uncooked pork in the boiling water (as shown in the video). ** Soup is ready when the stems are soft, but always taste better the next day.

Holy basil (krapow or ka prao) is what gives this dish it’s unique flavor (licorice, clove-like) and aroma. I’m sure if you have ever been to Thailand, this is probably one of the first Thai food dishes you indulged in.
Thai basil chicken has a very unique taste, is spicy, very fragrant and surprisingly easy to make. When it’s commonly served with hot steamed Thai jasmine rice and a fried egg (kai dao), it is called pad krapow gai kai dao.
Pad = Fried Krapow = Holy basil Gai = Chicken Kai Dao = Fried egg
Ingredients (Serves 3-4): 300 grams of chicken (Thigh or breast, thighs are tender and juicier) 3-8 fresh Thai chilies (or to taste) 5-6 medium cloves fresh garlic 1 TBSP fish sauce 2 TBSP oyster sauce 1/2 TBSP thin light soy sauce 2 teaspoon seasoning sauce 2 teaspoon sweet dark soy sauce 1 TBSP sugar (or to taste) 1 handful of holy basil (krapow or ka prao) Cooking oil 1 egg per person (optional, but traditionally served with fried over easy egg)
** Substitute equal amounts of your favorite meat or meat substitute instead of chicken if desired. Excellent with shrimp, squid, or other seafood too. ** The video showed about double the size of this recipe
Getting holy basil can be a challenge, even in Hawaii. Check your local asian markets, or you could grow it to ensure a continuous supply. You could substitute Thai sweet basil if you can't find holy basil, but will have a different flavor, though still very delicious (recipe coming soon).

Located in Nakhon ratchasima (known as Korat, northeast Thailand), Terminal 21 Korat is my favorite shopping mall in all of Thailand for many reasons, but their food court really stands out because you get cheap, delicious food at street food prices! Average price for a dish is about 30-35 baht ($1.07 - $1.17 USD) which is really good, because food in shopping malls are usually more expensive. Of course some dishes may be a little higher, such as some seafood dishes, but generally speaking, expect to pay 30-35 baht per dish here. A lot of shopping mall food courts in Thailand usually range at least 40-50 baht per dish or higher.
🍜 Terminal 21 Korat food court has something for everyone. They have your Thai food favorites such as pad thai, som tam (papaya salad), thai curries, noodle soups, pad kaprao and so much more. Not to mention their desserts, such as mango with sticky rice, nam kang sai (Thai shaved ice), coconut ice cream, and more. When we are in Korat, we eat here at least 3-4 times a week. My Thai brother-in-law comes here mostly everyday to eat.
Stick around till the end of the video, you will see a Thai open market with food vendors that are selling lots of food, desserts and snacks. Very common in Thailand shopping malls to occasionally see vendors selling munchies in the walkways.
There are other Terminal 21 mall locations in Thailand (Bangkok, Pattaya and Korat). Pretty cool, every level in each malI have themes from different countries. The Korat location is adding a hotel, and heard will be completed in late 2020.

Loaded with tons of live prawns, fresh crab, squid, sea snails, grilled snakefish, and many more lined up on both sides. Some of the prawns are huge, which is what Ayutthaya is also known for.
Whether adventuring on an Ayutthaya day trip checking out some historic temples and sightseeing, or just passing through, there are lots of Thai BBQ seafood restaurants to choose from. You can dine in or take out, which is what we did.
Through the years, we have probably eaten at 4 seafood Thai barbeque street food restaurants here. They were all very good. What makes Thai barbeque seafood so special and delicious, is the Thai seafood sauce. So spicy and yummy!

There are different versions of Thai roti (also called Thai pancake), this is the sweet version. It’s a crispy, wheat bread pastry fried with oil, and margarine is usually added. The banana and egg Thai roti is what the vendor is making, topped with sweetened condensed milk. Commonly cooked with banana, topped with sweetened condensed milk, and sugar, you could also get it with chocolate Ovaltine, Nutella, or other ingredients. Must try!
It’s interesting to watch street vendors make Thai roti. My son enjoys the street vendor throwing and stretching the dough.

Korat is well known for their rice noodles, and this is Korat’s signature spicy Thai noodles dish.
Most people have never heard of pad mee korat. I feel it doesn’t get the attention it deserves. It’s a spicy Thai noodles dish similar to pad thai. Both dishes usually have the same basic ingredients, difference is that pad mee korat is usually made with pork, and fermented soybean paste (tao jiew or เต้าเจี้ยว) is added along with dried Thai chilies. Tao jiew adds a very nice flavor, and has a taste similar to miso. Pad Thai, most times is not spicy and usually made with different types of protein (shrimp, chicken, etc).
If you ever come across pad mee korat, definitely worth trying. You will mostly likely find it at a place that serves Isan food.

"The Mall" is a great shopping mall in Nakhon Ratchasima, known as Korat. Located right on Mittraphap Road (main highway) lots of good shopping, their food court is decent and in my opinion, this is one of the most kid friendly shopping mall that we have come across in Thailand.
Every once in a while, you will come across open markets shown in the video in shopping malls in Thailand. If you do, walk around and check out the food. You won't be disappointed. "The Mall" also has street food vendors outside on the street at night on the weekends.

They sell dried coconut meat, and even bottle some ice cold Thai coconut water.
🌴 Price of 1 fresh Thai coconut ranges, depending on the size: Small: 10 baht ($0.33 USD) Medium: 15 baht ($0.50 USD) Large: 20 baht ($0.66 USD)
When buying fresh, young coconut water, check to see if the vendor already has some on ice. Nothing like an ice cold, fresh Thai coconut water on a hot, humid day.

(Nam Prik Pla Too) น้ำพริกปลาทูThai Way Of Living2020-01-17 | Nam Prik Pla Too น้ำพริกปลาทู is an authentic, pounded mackerel Thai dipping sauce, that is made with the very popular mackerel fish (pla too ปลาทูทอด). Oily fish, high in omega 3's and full of flavor. You will find pla too in most Thai open markets, already steamed.
This spicy Thai dipping sauce is full of fresh red chilies and garlic. Thai's really excel when it comes to the sour sauces. The lime juice balances out this dish. ข้าวต้มโอที Khao Tom OT restaurant is a favorite of ours. They are well known by the locals for their chicken feet soup. We always eat that, stir fry crab or shrimp curry, and tom yum goong is good.

Walking distance from the Don Muang Airport, there are lots of street food vendors in this area, but the restaurant we show the Thai cooking is located right across the street, and little to the left from the Amari Hotel. Very yummy, and they give good portion sizes. Most of the street food in this area average about 30-40 baht ($0.86 - $1.14) per dish, but depending some may be higher. Cheaper than the restaurants in the hotel and airport.
There is a walkway overpass that leads you directly from the Don Muang Airport straight to the Amari Hotel. Along this walkway, there is a stairway that connects you to the street food vendors (watch in video).
For your convenience, there is also a 7-11 (about a 5 minute walk in the direction of traffic, on the left side) down the street from the hotel. You will also find lots more street food along the way towards 7-11. If you have time, take a little cruise and walk around. You will have lots of FUN.

This Thai Bangkok street food area is located across the main highway from the ✈ Don Mueang Airport, and about a 10 minute walk from the Amari Don Muang Airport Hotel (down the road on Choet Wutthakat Road). If you have a long layover, you could take a short taxi ride. Although this market also sells clothes, cosmetics, and a lot of other items, we will focus on showing you the street food outside available at Talad Mai Don Muang (Don Mueang New Market). They also have a 7-11 and Cafe Amazon for your convenience. You will find mostly Thai locals frequenting Don Mueang New Market อาหารตลาดใหม่ดอนเมือง, as it is a convenient area for grabbing food on-the-go. Also some of the Don Mueang Airport staff will occasionally grab a bite to eat here.
The covered area where we ate is located right cross the 711 on the corner. Approximate operating hours are 5 am to 11 pm daily. They have a variety of Thai street food to choose from, ranging from Thai noodles, pad thai, Thai stir fry dishes, Thai soups, and many more. Prices are very reasonable, ranging on average from 30 to 50 baht ($0.86 to $1.43 USD) per dish, depending on what you buy. There is a vendor that sells Isan food (BBQ grilled pork and sticky rice) that is shown in the video. But usually have to get there before 8 am because she sells out quickly. She opens at 4 am most days.

This Thai Bangkok chicken rice is well known among Thai locals. If you are ever in the Don Mueang district, highly recommend you give this restaurant a try. It's about a 15 minute taxi ride from the Don Muang Airport.
The chicken rice dish ranges from 30 to 35 baht ($0.99 to $1.16 USD). SUCH A GREAT DEAL! You will get more chicken with the 35 baht dish.
Khao man gai (ข้าวมันไก่) consists of sliced boiled chicken placed on top of rice that is cooked in the chicken broth. Nam sap (น้ำซุป), the clear broth from boiling the chicken is served on the side. Usually garnished with slices of fresh cucumber, cilantro. The clear winner of this dish, however, is the Thai chicken rice sauce (วิธีทำน้ำจิ้มข้าวมันไก่). Made with fermented soybean paste (น้ำจิ้มข้าวมันไก่), chili, garlic, ginger, soy sauce, and vinegar, the sauce makes or breaks this dish.

Aside from their killer Isaan food, they also serve a mix of other regional Thai cuisine. Everything we have eaten here is delicious. Must try Thai food here are the grilled pork neck (ko moo yang คอหมูย่าง), sun-dried fried beef (เนื้อเเดดเดียว), spicy minced pork salad (larb moo ลาบหมู), coupled with sticky rice and the endless varieties of papaya salads (som tum ส้มตำ). 🥒 Try Thai cucumber salad (tom tang ตำเเตง) for a different twist to papaya salad, and is so refreshing!
This Thailand Bangkok street food restaurant started as a small stall, in the same location, here in Don Muang about 20 years ago. Today, they have a full operation, and are very busy and popular in Don Muang.

Don’t forget the fresh tamarind, which gives this Thai soup its sour flavor, and loaded with health benefits also. The combination of these ingredients along with the moringa pods (marum) makes this the perfect Thai soup with some zing!

Thai holy basil chicken stir fry is simple to prepare, and features holy basil (called krapow or kaprao กะเพรา ). Holy basil is very aromatic, and gives this dish its distinct flavor (different than Thai sweet basil). Not to mention holy basil's health benefits (anti-inflammatory, high in antioxidants and phytonutrients). Typically served with an over easy egg (father in-law did not show in video). Definitely one of my favorite Thai stir fry dishes!

You will get a little glimpse of his organic Thai garden, full of fresh Thai herbs and vegetables, as he goes and grabs fresh holy basil (krapow or ka prao กะเพรา). Although abundant in Thailand, finding fresh holy basil can be a challenge, even in Hawaii with a high asian population. If unable to find fresh holy basil where you live, your best bet to ensure an abundant supply would be to grow your own (if weather permits). Nothing like walking in your own backyard to grab fresh herbs and vegetables for your authentic Thai cooking!

We are at my in-law’s home in Nakhon Ratchasima, known as Korat (Isaan region in northeast Thailand). Isan Thai food is among my favorite. Some popular Thai Isaan food include som tum (papaya salad ส้มตำไทย), grilled chicken (gai yang ไก่ย่าง) eaten w/ sticky rice (khao neow ข้าวเหนียว). My favorite stir fry Thai noodles (very popular in Korat) is Pad Mee Korat (ผัดหมี่โคราช). In my opinion, the BEST Thai stir fry noodle dish, but doesn't get the attention it deserves. Think of it as pad thai kicked up a notch :) If you can find it outside of Korat, a definite MUST TRY!

Recipe: 450 grams long green beans (cut into 1-3 inch pieces) 250 grams ground pork 1-2 Tbsp cooking oil (use lard for best flavor) 3-4 cloves garlic (chopped) 1 Tbsp fish sauce 1 Tbsp Thai fermented soybean paste (tao jiew or เต้าเจี้ยว) 2 Tbsp oyster sauce
** If desired, you may add 3-8 Thai chilies 🌶 for a spicy treat.
