Soybean Sprout Rice with Green Onion Sauce (콩나물밥 Kongnamul Bap) 豆もやしごはん ネギだれ
Difficulty: Easy
Time: 50min
Number of servings: 4
Ingredients:
200g (7.0oz.) soybean sprout
2 cups uncooked pre-washed rice
1/2 tsp salt
Green Onion Sauce
* 12 green onions (chopped)
* 1 tbsp. soy sauce
* 1 tbsp. sesame oil
* 1 tbsp. white sesame seeds
Directions:
1. Wash and remove the roots of bean sprouts if necessary.
2. Wash rice if needed. If you are using pre-washed rice (Musenmai) you don't have to wash it.
3. Put rice and water (a bit less than the line indicated in the pot, because water comes out from the bean sprouts) in a pot. Add salt and the bean sprouts, place the pot into the rice cooker, cover and press the button to cook.
4. Meanwhile, let's make the green onion sauce. Chop green onions and place them in a bowl. Add sesame seeds, soy sauce, and sesame oil, then mix well.
5. When the rice is cooked, mix well, serve with the green onion sauce. Enjoy!

Burdock Chips (Gobō Chips) Vegan Gluten-Free Recipe
Difficulty: Very Easy
Time: 10 min
Number of servings: 2~3
Ingredients:
1 Gobo (burdock root)
deep frying oil
salt
Directions:
1. Scrape Gobo with the back of a kitchen knife to remove the skin. You can use pre-washed Gobo as is.
2. Slice Gobo and soak in water (or vinegar water) for 5 minutes.
3. Drain well with paper towel, and deep fry in oil at 180C (350F) until crisp light golden brown.
4. Sprinkle the fries with salt or seasoning of your choice to finish.
*Burdock root gets very bitter if you deep fry too brown. Make sure you remove from the oil when they are slightly brown.

Tuna Stuffed Whole Onion with Ponzu Sauce
Difficulty: Super Easy
Time: 10min
Number of servings: 1
Ingredients:
200g (7.0oz.) onion *larger one is ok
70g (2.5oz.) canned tuna
sesame oil
chopped green onions
ponzu sauce (citrus-flavored soy sauce: you can mix 1 tbsp. soy sauce and 1 tbsp. lemon juice to make it) amzn.to/49qKpAY
Directions:
1. Trim off both ends and peel the onion. Make a deep cross incision on one end. Be careful not to cut through.
2. Drain and stuff tuna into the onion.
3. Place it on a microwavable dish, sprinkle with sesame oil, cover with plastic wrap, and microwave on medium for 7 minutes.
4. Garnish with green onions, pour some ponzu sauce to finish.

Zelda Game Chocolates (Fun Chocolate Mold Recipe for Valentine's Day)
Difficulty: Very Easy
Time: 15 min
Number of servings: 1 mold
Ingredients
chocolate pens to draw lines, draw words, give colors, etc...

Directions:
1. Place chocolate pens in hot water to melt the chocolate. Snip off the end to use. You can chocolate-filled piping bag instead of the chocolate pen. Use chocolate pens to draw lines, draw words, give colors, fill in small parts, etc... Put in the fridge to set.

Miso Nikomi Udon Recipe (Udon Noodles, Meat, and Vegetables Simmered in a Delicious Miso Broth) 味噌煮込みうどん 給食レシピ
Difficulty: Easy
Time: 20 min
Number of servings: 2~4
Ingredients:
400g (14oz.) 2 packages of boiled or frozen Udon noodles
200g (7oz.) thinly sliced pork
150g (5.2oz.) Daikon radish
100g (3.5oz.) Konnyaku (yam cake)
100g (3.5oz.) long onion
100g (3.5oz.) carrot
100g (3.5oz.) Komatsuna (Japanese spinach)
800ml Dashi broth
4 tbsp. Miso
cooking oil
Directions:
1. Cut pork into an inch long pieces.
2. Cut Komatsuna (Japanese spinach) into an inch long pieces.
3. Slice Daikon radish, Konnyaku (yam cake), long onions, and carrot into small pieces.
4. Heat cooking oil in a pot. Cook meat and vegetables, then add Dashi soup stock (you can use Dashi powder). When the vegetables become soft, add Miso by diluting it with the cooking liquid.
5. Add Udon noodles (microwave if frozen), and simmer in the Miso soup.

How to Make Jewel Macarons (Recipe)
Difficulty: Patience
Time: 2hours

Ingredients in the Pastel Macaron Kit:

almond powder
pistachio macaron mix
strawberry cream mix
jewel sugar
Ingredients You Need:
30g egg white
40g unsalted butter
Directions:
((Macaron Shells))
1. Whip egg white with an electric mixer until foamy. Add macaron mix 1/2 at a time and mix with an electric mixer for a minute.
2. Sift in powdered sugar and almond powder half at a time, then mix well with a spatula. Macaronnage: Punch down the spatula into the batter, then scrape batter from the sides to the center, and punch again. Repeat this until the batter slowly and continuously drips back into the bowl like a ribbon when you scoop it up with the spatula.
3. Line baking sheet with parchment paper, place the template under the parchment paper if you have. Fill a pastry bag with batter and snip off the end. Pipe out the batter in the 3.5cm (1.4 inch) circles. You can make about 20 circles. Sprinkle with jewel sugar.
7. Let stand at room temperature until dry, and a skin forms on the tops, for about 30-60 minutes. Make sure the batter will not stick to your finger.
8. Preheat the oven to 180C (350F). Turn down to 140C (285F) and bake for 16-17 minutes. Let the macarons cool completely on the baking sheet.
((Buttercream Filling))
1. In a bowl, mix butter and the cream mix. Put the cream on to the middle of one shell, then gently place another shell on top.
2. Put in the fridge to set. Butter cream is very easy to melt, so be careful when you carry them around.
You can store the macarons in an airtight container in the fridge for up to 3 to 4 days.

It is an event wishing for home safety, business prosperity, good health and good luck. At the end people burn food on a stick like Mochi (rice cake), Mikan (orange), marshmallow, etc... and eat to make wishes but since COVID-19, it is left out.
Dondo is named after どんどん (Don Don) which means more and more in Japanese. Also from the どん "Don!" sound of burning bamboo.
Some people burn Kakizome (calligraphy for the first time in the year) to have good handwriting, if the paper soar in the sky.

Sweet Potato Sesame Balls Recipe さつまいものごま団子 給食レシピ (Jian Dui/煎堆)
Difficulty: Very Easy
Time: 30 min
Number of servings: 20 pieces
Ingredients:
400g (14oz.) baked sweet potatoes
4 tbsp. Shiratamako (lumpy glutinous rice flour) amzn.to/3KC0Z4s *tapioca flour can be the substitute
2 tbsp. water
2 tbsp. sugar
a pinch of salt
white sesame seeds
deep frying oil
Directions:
1. You can buy or bake sweet potatoes. Peel and put them in a bowl.
2. Mix Shiratamako and water together until smooth.
3. Add the Shiratamako mixture, sugar, and salt in the sweet potato, then knead with your hand until smooth.
4. Roll into small balls.
5. Coat with white sesame seeds.
6. Deep fry in oil at 170C (338F) until golden brown.

Homemade French Fries (Perfect Crispy Pan-Fried Recipe)
Difficulty: Very Easy
Time: 40 min
Number of servings: 2~3
Ingredients:
450g (1lb.) potatoes
2 tbsp. Katakuriko (potato/corn starch)
2 tbsp. cooking oil
salt
tomato ketchup if you like
Directions:
1. Leaving the skin on, cut the potatoes into long thin strips.
2. Place them in a microwavable container, cover, and microwave on medium for 5 minutes.
3. Dust with Katakuriko (corn/potato starch).
4. Heat cooking oil in a frying pan cook the potatoes on high to medium without touching too often. And of course do not cover the pan. Cook until golden brown and crispy. It takes time than deep frying but worth the time.
5. Sprinkle the fries with salt or seasoning of your choice.

Japanese Butter Chicken Curry (using Golden Curry Roux)
Difficulty: Easy
Time: 1hr
Number of servings: 4
Ingredients:
1/2 box (99g) S&B Golden Curry Mix (Mild) amzn.to/3QTBfpP
400g (14.5oz.) chicken thigh or breast *either portion is okay because yogurt makes the meat juicy and tender
1/2 (150g) onion
100ml unsweetened yogurt
1 tbsp. tomato ketchup
1 tsp. garam masala *you can skip it or any spices are ok
black pepper
200ml water
400g (14.5oz.) canned diced tomatoes
200ml milk
1 tbsp. cooking oil
2 tbsp. butter
4 servings cooked rice or naan bread
parsley flakes if you have
Directions:
1. Cut the chicken into bite-size pieces. Place the chicken pieces in a plastic bag and season with yogurt, ketchup, garam masala, and black pepper. Seal the bag and marinate in the refrigerator for 30 min to overnight.
2. Slice the onion when ready to cook. Heat cooking oil in a pot and sauté the onion until soft and lightly browned.
3. Add the seasoned chicken and cook until done.
4. Add water (remove the foam if necessary) and canned diced tomatoes, then cover and simmer on low for about 5 minutes.
5. Turn off the heat, break up the curry roux into the pot, and mix well until completely melted. *make sure you stop the heat when you add the curry roux, otherwise it won't blend well. Then add milk and mix well. *you don't want to turn on the heat while adding the milk because it can separate on sudden high heat.
6. Now put on low and simmer for 5 minutes.

3 Ingredients Baked Chocolate with Marshmallow Ghosts for Halloween (Recipe)
Difficulty: Very Easy
Time: 40min
Number of servings: 16 pieces
Ingredients:
100g (3.5oz.) chocolate
6 tbsp. flour
16 mini marshmallows
chocolate pen *if you have
Directions:
1. Break the chocolate into small pieces, and melt over a double boiler.
2. Add flour and mix well.
3. Line a 4-inch (10cm) square box with parchment paper and pour in the batter. Put in the freezer for 20 minutes to set. Preheat the oven to 170C (340F).
4. Cut into 16 square pieces. Place them on a baking sheet lined with parchment paper. Bake at 170C (340F) for 15 minutes.
5. Place marshmallows while the chocolates are hot (push a little bit to attach securely). Draw faces with chocolate pen (or melt chocolate in a plastic bag and snip off the end) if you want.

Halloween Kabocha Tiramisu (Japanese Pumpkin Squash Dessert Idea)
Difficulty: Very Easy
Time: 30min + cooling time
Number of servings: 3 dessert cups
Ingredients:
150g (5.3oz.) Kabocha (Japanese squash)
100g (3.5oz.) mascarpone cheese
100ml whipping cream
2 tbsp. granulated sugar
1 egg yolk
12 biscuits *sponge cake is ok
* 1 tbsp. instant coffee
* 1 tbsp. granulated sugar
* 4 tbsp. hot water
cocoa powder
chocolate covered pretzels for spider legs
chocolate candies for spider eyes
Directions:
1. Cut Kabocha into large chunks, place them in a microwavable container, cover and microwave on medium for 5~6 minutes until soft.
2. Scoop out the Kabocha and strain through a sieve to make it smooth. (You can eat the Kabocha skin, so don't throw it out! Kabocha skin contains a lot of vitamins. Simply eat with salad or simply with mayonnaise is good!)
3. Add sugar and egg yolk. Mix well, cover, and set aside in the fridge.
4. Mix 4 tbsp. hot water, instant coffee, and 1 tbsp. of granulated sugar together to make coffee syrup. Put the syrup in a flat container and soak the biscuits.
5. In the Kabocha mixture, add mascarpone cheese and mix well.
6. Beat whipping cream with an electric mixer until stiff peaks form, then add the Kabocha mixture and mix well with a spatula.
7. Layer the cream and biscuits in serving cups (about 3 layers). Keep in the fridge for at least two hours (or overnight) to set.
8. Sprinkle with cocoa powder before serving. To make spooky spider decoration, I used broken pieces of chocolate covered pretzels (for legs) and chocolate candies (for eyes).

Yoshinojiru is the local soup dish in Nara prefecture. It is the soup thickened with starch and served at schools nationwide. Mt. Yoshino in Nara prefecture is the production area of Kuzu (arrowroot starch). Kuzu is pretty expensive, so most people here use corn/potato starch instead.

Yoshinojiru (Japanese Chicken and Vegetable Thick Warm Soup Recipe)
Difficulty: Easy
Time: 30min
Number of servings: 4
Ingredients:
50g (1.7oz.) chicken
150g (5.3oz.) Momen-dofu (cotton tofu)
50g (1.7oz.) Shiitake mushrooms
250g (8.8oz) frozen vegetables for Tonjiru
50g (1.7oz.) frozen spinach
600ml Dashi soup stock
1 tbsp. soy sauce
1/2 tsp. salt
2 tsp. Kuzu (arrowroot starch) or corn/potato starch
Directions:
1. Dice Tofu into small pieces. Slice Shiitake mushrooms. Dice chicken into small pieces.
2. In a large pot, put water, Dashi stock powder, frozen vegetables for Tonjiru, and chicken. Bring to a boil and cook until the chicken is done.
3. Add Shiitake slices, diced Tofu, frozen spinach, season with soy sauce and salt. Then cook until heated.
4. Stop the heat, add starch dissolved in the same amount of water, put on the heat again to thicken the soup. You can leave the soup for a couple of hours so that the ingredients can soak in the flavor of the soup and become very tasty.

How to Make Canelé (Easy Measuring Spoon Recipe)
Difficulty: Easy
Time: 1day & 1hr
Number of servings: 10 mini Canelés (51×45mm, 2.01x1.77inches)
Ingredients:
200ml milk (0.8 US legal cup)
2.5cm (1inch) vanilla
1 tbsp. butter
1 tbsp. honey
1/2 whole egg
1 egg yolk
2 tbsp. rum *if you like
5 tbsp. granulated sugar
4 tbsp. cake flour
2 tbsp. bread flour
(total 6 tbsp. of all purpose flour is ok)
Directions:
1. Put milk in a saucepan. Split the vanilla bean, scrape out the vanilla and add them to the saucepan. Set the saucepan over low heat and cook until the milk starts bubbling around the edges. Stop the heat, add butter and cook with the remaining heat until melted. Cover and seal with plastic wrap and leave to cool. *so that the batter won't dry out
2. Mix eggs and rum together.
3. In a different bowl, sift in cake flour and bread flour. Add granulated sugar and mix well with a whisk. Add the egg mixture and mix well.
4. In the milk mixture (1), add honey and mix well. Then add it into the flour mixture half at a time. Put through a sieve. Cover and seal with plastic wrap and chill in the fridge for 24 hours. *This allows the gluten in the batter to relax and the batter won't pop out while baking.
5. Mix the batter and put over the hot water until warm. Meanwhile butter the canelé molds.
6. Preheat the oven to 220C (428F). Pour in the batter, leaving a little space at the top of each mold.
7. Bake in the oven at 220C (428F) for 20 minutes. Drop the molds to set the batter to cook evenly. Bake at 190C (374F) until golden brown, about 20 minutes or more.
8. Remove the molds from the oven and turn them over onto a cooling rack or a paper towel. Let them cool at room temperature.

The Best Japanese Egg Salad (Recipe)
Difficulty: Very Easy

Ingredients:
4 cold eggs right out of the fridge

greens
parsley flakes if you like
Directions:
1. Bring a pot of water to a boil.
2. Tap each egg with a spoon to make cracks in the bottom of the shell. OR you can poke a small hole using an "Egg Hole Puncher". (Water goes in between the egg and the shell which helps the shell to come off). amzn.to/48mvo38
3. Place the eggs in boiling water and cook for 8 minutes. Place them in water to cool, then peel.
4. Chop (or mash with a fork) the eggs, then season with mayonnaise, salt and pepper.
5. Serve on a plate with greens of your choice and parsley flakes if you like.

3. Heat cooking oil in a frying pan and cook both sides until golden brown. Serve with ketchup if you like.

Homemade French Fries Recipe
Difficulty: Very Easy
Time: 20 min
Number of servings: 2~3
Ingredients:
300g (10.5oz.) potatoes
deep frying oil
salt
Directions:
1. Slice the potatoes and soak them in cold water. Drain well (with paper towels).
2. Place the potatoes in a frying pan. Add deep frying oil up to half the height of the food. Put on medium until the bubbles come out, then cook on low for 10 minutes (Root vegetables are easy to cook if you heat them gradually from a low temperature.) Put on high, then cook for 5 minutes until golden brown and crispy.
3. Drain well. Sprinkle with salt while hot to finish.

2 cold eggs right out of the fridge
300g (10.5oz.) potatoes
3 tbsp. mayonnaise
salt and pepper
Directions:
1. To make soft-boiled eggs, cook the eggs in boiling water for 7 minutes, place them in water to cool, then peel.
2. Peel and cut potatoes into chunks. Place them in a microwavable container, cover, and microwave for 6 minutes.
3. Add eggs, mayonnaise, salt and pepper, then mash with fork, leaving small chunks for texture.

Gomaae (Spinach Salad with Sesame Dressing)
Difficulty: Easy
Time: 10min
Number of servings: 4
Ingredients:
150g (5.3oz.) spinach
150g (5.3oz.) bean sprouts
100g (3.5oz.) carrot
1 tbsp. soy sauce
1 tbsp. sugar
2 tbsp. ground sesame seeds
Directions:
1. Put spinach in a salted boiling water and cook for 30 seconds. Rince in cold water then drain well. Cut into bite-size pieces. You can prepare crisp and tasty spinach in this way.
2. Put bean sprouts in a boiling water and cook for 30 seconds, then drain well.
3. Cut carrot into strips, put in a boiling water and cook for a minute, then drain well.
4. Put all the vegetables in a bowl, add seasonings, and toss to coat.
