Ingredients:
1 1/2 sticks of unsalted butter
1 1/2 cups of flour
1 Tbsp corn starch
4 Tbsp powder sugar
1 Tbsp vanilla
1 pinch of salt
3 Tbsp sprinkles
2 Tbsp milk
Directions:
Directions
Add the butter, powder sugar, vanilla, corn starch, salt, and flour. Blend together.
Add the sprinkles, and1 tbsp of the milk.
Blend.
Then add the last 1 Tbsp milk and blend together.
Line a shallow 8X8 dish with wax paper.
Add the mixture to the dish.
Smash the mixture down with your hands (or grease one side of a piece of wax paper and with the dry side, press down so it wont stick). Remove the greased wax paper.
Place in the fridge for 5-10 minutes.
Take out and remove the cookie mixture.
Using a knife, cut into stripes or bite size pieces.
Place on a lined cookie sheet and bake at 325 for 10-17 minutes.

(1) 13x9 cookie sheet
Parchment paper to fit the size of the 13x9 pan
4-5 pipping bags
4-5 colored dye of the rainbow
1 dishtowel
Ingredients
The White Cake:
1 1/4 cup AP flour
1 3/4 cake flour
1 Tbs baking powder
1 tsp salt
2 sticks butter (room temperature)
2 cup sugar
3 tsp vanilla
7 egg whites
1 cup sour cream
1/2 milk
4-5 color dyes
1 can of vanilla buttercream or frosting
fun colorful sprinkles
Vanilla Buttercream
1 1/2 sticks of butter
3 cups powder sugar
3 Tbs half and half
2 Tbs Vanilla
Directions
Pre-heat the over to 350 degrees.
Sift the two flours and the baking powder.
Cream the butter with the sugar till fluffy. In a kitchen aid blender or and held mixer.
Alternate the flour mixture and the wet ingredients in three parts.
Mix till all incorporated.
Separate the white cake batter into 5 bowls and using your fun dyes. Dye each one a color.
Then transfer each colored mixture in 5 separate piping bags.
Place the parchment paper in the the cookie sheet tray and use cooking spray.
In a diagonal pattern start in the corner of the tray and make one line with the batter in a color. Switch out the colored batter for another color. Remember what pattern of colors you go in. Keep making a diagonal patter in the cookie sheet till it is full.
Bake for 35-40 minutes.
When it comes out let cool for 3-5 minutes till you can touch the cake with your hands.
Try removing the parchment from the tray and place it in a dish towel.
Roll the cake up in the towel to hold the shape of a roll.
Cool completely.
Then to make the vanilla butter cream. Place the butter in a bowl and blend with a blender till smooth no clumps.
Then add the powder sugar and make sure to scrape down the sides of the bowl.
Add the half and half and the vanilla.
Once the cake is cooled. Place the buttercream in the center.
Sprinkle with multicolored sprinkles, and roll up tight.
Eat it now or place the roll in the refrigerator for 1 hour to tighten up.

1 brownie mix

Ingredients
Brownie Mix
1 1/4 cup Sugar
1/3 cup Butter
5 oz Evaporated Milk
7 oz Marshmallow Fluff
1/4 Creamy Peanut Butter
1 3/4 Peanuts chopped
14 oz Caramels (about 50 unwrapped)
11/2 Milk Chocolate pieces
Directions
Pre-heat the oven to 350 degrees. Line a 13x9 baking pan with foil with the foil extended over the edges.
Prepare the brownie mix according to the package. Pour the batter in the prepared baking pan and bake according to package. Then let cool. Once the brownies are cooled using your hands smash them down to make room for the peanut cream mixture.
Next, in a sauce pan melt the sugar, 1/3 cup butter, and 1/2 cup of the evaporated milk.
Bring to a boil stirring till the sugar is dissolved. Reduce to a medium heat. Simmer for 10 minutes. (using a spatula make sure to scrap the bottom while simmering so it won't burn)
Remove from the heat and add the marshmallow cream, and peanut butter till smooth. Then add the chopped peanuts.
Carefully pour over the brownies spreading to the edges.
Place in the freezer for 20 minutes.
For the caramel layer. Place the caramels and remaining evaporated milk which is about 2 Tbs in a bowl. Microwave 1 1/2 to 2 minutes until caramels are melted.
Pour the caramel over the peanut cream mixture spreading to the edges. Return the pan to the freezer for 10-15 minutes.
Next, the chocolate layer. In a small bowl microwave the chocolate pieces for 1 minute or until melted and smooth. Pour chocolate over caramel layer. Spread evenly to edges. Chill 2 hours or until firm.
To transfer out of pan. pull up on the extended foil and lift uncut bars out of the pan. Transfer to cutting board to cut into squares.

1/3 cup Butter (cold)
1 large organic Apple
1 Egg
1 tsp Vanilla
1 cup Milk
Garnish: 1/2 cup powder sugar
Directions
In a bowl add all of the dry ingredients.
Cut the butter into small cubes then add to the flour.
Next, lets GET MESSY IN THE KITCHEN. Cut the butter with your hands like before.
THen add all of the wet ingredients and mix till incorporated.
I like to add my batter into a pipping page and pipe the dough into a donut mold. If you don’t have a donut mold.
Pipe the round shape on a cookie sheet lined with parchment paper.
Bake in the over @ 375 for 15-17 minutes.
Let cool.
Sprinkle powder sugar on top.
Place on top of the crumble.
Enjoy!
Peppermint S’mores
prep time: 10 mins
start to finish time: 26 minutes
serving: 16 small s’mores
Ingredients
1 can of Original Grands Biscuits
1 cup of crushed peppermint candy
1 cup mini chocolate chips
1 cup marshmallows
Directions:
Pop open the Grand Biscuits. Each biscuit then cut in half and roll into a ball. Place on a greased parchment paper and set to the side.
Next, add the peppermint candy inside a bag and using a mallet crush the candy. Place the crushed peppermints into a bowl.
Then add the mini chocolate chips in with the peppermints.
Mix together.
Then taking one of the biscuits roll the dough all over the peppermint mixture.
Place on the cookie sheet. Repeat with the rest of the dough and bake them all.
Place in the oven for 13-16 minutes.
Slightly cool.
Using a knife cut them in half.
Reserve the tops and keep the bottom biscuit on the cookie sheet.
Place a small marshmallow on the bottom biscuit.
Place back into the over for 2-3 minutes to melt the marshmallow.
Then take them out of the oven and place the tops on to make a S’more.

Ingredients:
1/2 cup pumpkin puree
1 tsp cinnamon
1 tsp pumpkin pie spice
1 shot of espresso
1 cup International Delight pumpkin pie spice iced coffee
Garnish:
Whipped cream
1-2 tbs of chocolate chips
1 tbs of caramel
Directions:
In a bowl, add the pumpkin puree, cinnamon, pumpkin pie spice, and espresso. Mix all the ingredients together.
Add the mixture to ice cube trays and freeze.
Then take out of the freezer and let sit at room temperature for 3-5 minutes.
Add the pumpkin cubes into a blender and pulse till smooth. Try adding 1 tbs of the pumpkin pie spice iced coffee to help make smoother.
Blend till smooth.
Pour into a long glass and add the fresh whipped cream, chocolate chips, and caramel.
Enjoy.
Friendship Quiche
prep time: 10 mins
start to finish time: 40 minutes
serving: 4 small quiches or (1) 16” pie shell
Ingredients:
3 eggs
1/2 c. pancetta
1/2 heavy cream
1/2 milk
1 tbs thyme
1/2 tsp salt
1/2 tsp pepper
1/8 tsp nutmeg
1/2 cup gruyere cheese
1/2 ricotta cheese
Garnish:
1 head of frisée lettuce
12 tomatoes
olive oil
pinch of salt and pepper
Directions
Pre-heat oven to 375 degrees.
Using a knife, cube the pancetta.
In a cast iron pan, sauté the pancetta till cooked. Place to the side to cool.
In a bowl, add the cooled pancetta and all of the ingredients and mix.
Open the original Crescent Rolls and lay two of the triangles, that make the square, in a buttered tart pan or ceramic baking dish. Or you can make one quiche in a 9” pie shell and use the whole can.
Fold the excess dough over and form a pie crust design on top. Then prick the bottom with a fork.
Pour the egg mixture in the tart pan, filling it almost all the way full.
Bake in the over for 25-30 minutes till golden brown crust and the egg mixture is fully cooked.
Let it cool about 10 minutes.
Toss the tomatoes, and frisée salad in a bowl with olive oil, salt, and pepper.
Garnish the top of the quiche with the salad. (optional)

Ingredients
1-2 yellow bananas
1 Original Yoplait Strawberry Banana Yogurt
4-5 Strawberries (thinly sliced)
1 Tbs Nutella
1 Tbs Shredded Coconut
Directions.
First, have a sheet of wax paper or parchment paper laid out on a cookie sheet.
Peel the banana. Cut the banana in half or in quarter bite sizes.
Place a popsicle stick in the banana.
Slice the strawberries into thin slices. Set to the side.
Open the yogurt, and dip the banana in the yogurt till covered.
Place the slices of strawberry all over the banana.
Drizzle Nutella around the banana and sprinkle with the shredded coconut on top. (Some kids might not like the coconut. I found the shredded coconut to have a better texture.)
Place the yogurt banana on the paper and freeze for 20-25 minutes or until completely frozen.
Take out when ready to eat.

1 Yoplait Strawberry Greek 100 Whips
6-7 Fresh Strawberries (thinly sliced)
1 Tbs Nutella
1 Tbs shredded coconut
1/2 Tbs mini chocolate chips
Directions
Using wax or parchment paper, place the paper on a cookie sheet.
Open Yoplait Strawberry Greek 100 Whips.
Using a spoon, or off set spatula, spread all of the yogurt on the surface of the parchment till very thin and smooth.
Slice the strawberries very thin.
Place the thin slices of strawberries all over the yogurt.
Drizzle the Nutella in a zigzag pattern all over the strawberries.
Sprinkle the shredded coconut on top.
Sprinkle the mini chocolate chips on top.
Freeze the yogurt for 20-25 minutes or until frozen well.
When ready to eat, take out and eat immediately.

1 ripe banana
1 cup oats
9-10 strawberries
Directions:
Blend the strawberries in a blender till smooth.
In a bowl add the strawberry puree, oats, and banana.
Smash the banana really well and incorporate all the ingredients together.
Place a dollop of the cookie on a greased cookie sheet or in a cupcake liner.
Bake at 350 for 20-25 minutes.
Eat after they are cooled or wrap them tightly and place in freezer.
You can pull these out right before you pick up your kiddo from school or a snack on the go.

Baked Cheesy Zucchini Bites
Ingredients
1 1/2 Zucchini (grated and Squeezed)
1 Egg
1/2 cheddar cheese
1/4 cup panko
1/4 tsp fresh chopped basil
1/4 tsp garlic salt
1/4 tsp salt
1/8 tsp pepper
Directions
Wash the zucchini. Using a cheese grater grate the zucchini.
Then place the zucchini in a dish towel and squeeze out the water or use your hands to squeeze out the water.
Place the zucchini in a bowl then add the rest of the ingredients in the bowl.
Mix together.
Using a spoon or your hands grab a small mound of the mixture and place on a greased cookie sheet. (if you notice the mixture is still runny squeeze out the water.)
Bake at 425 for 16-20 minutes till golden brown.
Cool.

1 lb of Fresh Strawberries
1/2 cup coconut sugar
4 packets gelatin
Directions
Blend the washed strawberries in a blender till smooth.
Add to a sauce pan with the sugar on a medium high heat.
Slowly whisk in the gelatin.
Using a spatula keep stirring so nothing starts to burn at the bottom of the pan.
When the first boil happens keep stirring for 30 seconds.
Then pour the strawberry mixture in a greased pan to cool in the fridge for 1-2 hours.
Then using cookie cutters cut out the shapes you want or pour in a silicon mold.

French Toast Cake
2-3 slices of french bread
2 eggs
1 Tsp vanilla
1 Tbsp sugar
Dash of cinnamon
2 Tbsp milk
2 Tbs butter for baking
Whipping cream
3 cup Heavy Whipping cream
1 cup Mascarpone
1 banana
Topping
melt 1 cup of white candy melts
In a bowl, add eggs, vanilla, sugar, cinnamon, and milk. Stir.
Then place the bread in the mixture for 20 seconds and coat each side.
In a skillet, melt butter, and on medium high heat, cook the bread on each side for 2-3 minutes till light golden.
Cool.
In a mixing bowl mix the whipping cream for 3-4 minutes till thick.
Then fold in the mascarpone.
Melt the candy melts in the microwave for 35 seconds, stir, then 35 more seconds.
On a parchment paper spread the chocolate evenly down.
Add fun sprinkles for decoration.
Place in the fridge to harden up.
To build the cake.
Place a dollop of whipping cream on a plate.
Then cut the bread in half.
Add one of the half down. Add slices of banana then whipping cream.
Repeat till done.
Then break up white chocolate and add on top for decoration.

Peanut Butter Banana Brownies
Serves 12
Ingredients:
2 cups gluten free rolled oats
3 ripe bananas
1/2 cup peanut butter
1/4 cocoa powder
1/4 unsweetened applesauce
1/4 cup coconut sugar
2 tsp vanilla extract
1 tsp cinnamon
1/2 tsp baking powder
1/2 tsp baking soda
pinch of salt
1/3 cup vegan chocolate chips
for greasing the pan
1 tsp coconut oil
Directions:
Pre Heat oven to 350 degrees.
Coat an 8x8 pan with coconut oil.
Combine all the ingredients in a bowl for the brownies except the chocolate chips. (Use a food processor and blend well for a more dense brownie.)
Add the chocolate chips.
Pour the batter into the pan.
Garnish with drizzling peanut butter or a few chocolate chips on top.
Bake for 30 minutes.
Remove brownies and cool.

Ingredients:
1 bag of Semi Sweet chocolate
1 bag of white chocolate
2 Tbs coconut Oil
1 cup of pretzels
1 cup of crunched up peppermint Oreos
1 cup of red and green M&M's or Peanut M&M's
Directions
Melt chocolate in two separate bowls.
Add one Tbs of Coconut oil to both.
Melt in the microwave in 20 sec intervals or over a double boiler.
Line a tray with parchment paper.
Pour the chocolate on the parchment then spread with a knife all over.
Then in dollops add the white chocolate.
Take a skewer and make squiggly lines to make the marble effect. Or just pour on the white chalet and spread evenly.
Add your crunched up Oreos, M&M'S, pretzels, and whatever is your choosing.
Place in Fridge to harden up.
Take out and crack open with a hammer or knife.
Place in cute bags for gifts or eat yourself.
I made it super easy and just wanted to have fun and baked off some easy box cakes and grabbed some can frosting. I then dyed it red and just went to town building and coloring the cake.
Ingredients
3 White box cake mixes
3-4 cans of white frosting
1 red food coring
1 black food coloring
Directions:
First bake off the cake directed on box. (Let them cool)
Then add the frosting into a bowl. Divide frosting in half.
Using the dye make one red and the other black.
My sister drew out the outline of the Kylo Ren lightsaber on cardboard.
We cut it out so when you transfer it to a clean board it looks pretty.
Have another cardboard on stand by. Cover it in your favorite star wars paper, foil or parchment paper.
Then using the pre-made cake, cut it to the size of your lightsaber, and use the frosting to glue together the pieces on the cardboard to make the shape of the Kylo Ren sword.
Use the red frosting to cover the sword. Leave the bottom of the lightsaber blank to fill in with black.

Simple Syrup
1 cup sugar
1 cup water
Directions
In a sauce pan add the sugar and water.
Put on medium high heat and simmer for 2-3 minutes.
Cool.
IN a glass add 1/4 cup of simple syrup.
Add a few cranberries.
Pour in champagne.

½ cup flour
¼ cup oats
⅓ cup brown sugar

½ teaspoon cinnamon

In a medium bowl whisk together flour, oats, brown sugar, sugar, salt, and cinnamon.
Cut in the butter with your hands until mixture is crumbly. Set aside.
FILLING
12 oz. fresh cranberries
1 1/2 cups sugar
1 tsp cinnamon
4 Tbs Orange Juice
1 Tbs corn starch
Directions:
In a bowl prepare the filling.
Add the cranberries, sugar, brown sugar.
IN a smaller bowl add the cornstarch and the orange just. Mix together to remove the clumps. Add the mixture to the cranberries.
Mix together well.
Pour into small ramekins or a big baking dish.
Then top with the crumble.
Bake at 350 for 90 minutes
Take out and let cool.

2 Medium Organic Apples
1/3 cup sugar
1 Tsp cinnamon
pinch of salt
1 can of Coconut Milk
Directions:
In a bowl add the first three ingredients.
Mix well.
In a saute pan add the apples and break down on medium high heat for 5-6 minutes.
Let cool.
Place the apples in a blender add the salt and coconut cream.
Blend till smooth.

Add a stick.

Ingredients:
1 cup butter, sliced (2 sticks)
¾ cup sugar
1 large egg
1 teaspoon vanilla
½ teaspoon salt
2 ½ cups all purpose flour
½ cup sweet orange marmalade
Directions:
To Brown the Butter
In a sauce pan over medium heat. Add the butter to the pan and let it melt.
Once melted, swirl the pan till the butter produces brown flecks and the butter smells of a strong nutty aroma.
Take the brown butter off the heat and let the butter cool. The butter will go from brown to burnt very quickly so be sure to watch the butter. If needed, transfer the browned butter to a cool pan.
To Make the cookies:
Pre-heat the oven to 350F.
Line a baking sheet with parchment.
In a bowl add the cooled brown butter and sugar. Using the whisk attachment, whisk until the butter and sugar are thoroughly creamed together. It should appear light and fluffy.
Add the large egg and vanilla and whisk until nicely incorporated.
Mix together the salt and flour and then add it to the brown butter mixture. Mix together until the dough is thoroughly combined and pulling away from the sides of the mixing bowl.
For the best looking cookie, place the dough in the refrigerator for at least 30 minutes.
Scoop tablespoon sized dough and roll into balls. Place them on the parchment about 2 inches apart.
Bake the cookies for 8 minutes and then take them out of the oven. Make a thumbprint in the middle of each cookie and then place back into the oven for another 5-7 minutes, or until the cookie is done. I like these cookies just golden in color around the edges. If the edges are any darker the cookie will be crispier.
Remove the cookies from the oven and transfer to a cooling rack.
Fill each cookie with sweet orange marmalade and let them sit for about 10 minutes before serving.
Serves: 12

- 1/2 teaspoon ground cinnamon
- 2 large eggs
- 1/3 cup vegetable oil
- 1 1/2 cups shredded zucchini (1 medium)
- 1 tsp Fennel Seeds
Directions:
1. Preheat oven to 350 degrees F. Grease 8 1/2" by 4 1/2" metal loaf pan. In large bowl, stir together flour, sugar, baking powder, salt, and cinnamon.
2. In medium bowl, with whisk or fork, mix eggs, oil, and zucchini. Stir zucchini mixture into flour mixture just until flour is moistened.
3. Pour batter into prepared loaf pan. Bake 1 hour 10 minutes, or until toothpick inserted in center of loaf comes out clean. Cool loaf in pan on wire rack 10 minutes; remove from pan and cool completely on wire rack.

Recipe
1-1/2 cups white whole wheat flour
1 cup yellow cornmeal
2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons pumpkin pie spice
1/2 cup pumpkin puree
2 large eggs
1/4 cup vegetable oil
1/4 cup honey
1/4 cup plain yogurt
3/4 cup buttermilk
Directions:
Preheat oven to 400F.
Grease a 9-in pie pan (OR an 8-in square baking pan) and set aside.
In a large bowl, combine flour, cornmeal, baking powder, baking soda, salt, and pumpkin pie spice.
In a separate large bowl, whisk pumpkin, eggs, oil, honey, yogurt, and buttermilk until smooth.
Combine.
Evenly spread batter into prepared pan.
Bake cornbread at 400F 25-30 minutes or until cornbread is golden-brown and a toothpick tests done.
Cool cornbread 10-15 minutes on a wire cooling rack

Baked Apples
8 apples (I used fuji apples)
4 tablespoons butter
⅓ cup brown sugar
½ teaspoon cinnamon
Crumble Topping
½ cup flour
¼ cup oats
⅓ cup brown sugar
¼ cup sugar
¼ teaspoon salt
½ teaspoon cinnamon
4 tablespoons butter, chilled and cut into cubes
Preheat oven to 400 degrees.
First, To make the crumble topping.
In a medium bowl whisk together flour, oats, brown sugar, sugar, salt, and cinnamon.
Cut in the butter with your hands until mixture is crumbly. Set aside.
Peel and chop 4 of the apples.
Add chopped apples, butter, brown sugar, and cinnamon to a medium sauce pan and sauté over medium heat for 8-10 minutes or until apples are tender.
Remove from heat.
Chop the tops off of the remaining 4 apples and use a spoon to scoop out the flesh just enough to make a "bowl" for the filling.
Fill scooped-out apples with apple filling from the sauce pan.
Top with a generous amount of crumble topping.
Place stuffed apples on a baking sheet and bake for 10-15 minutes until crumble topping is crispy.
Serve warm.

Recipe – Strawberry Cheesecake Overnight Oats
SERVINGS: 1
PREP TIME: 10 minutes
INGREDIENTS:
1/2 cup Quaker Oats Standard Old Fashioned Oats
1/2 cup low fat milk
30g sugar free cookies
6-8 strawberries
1/2 cup yogurt
1 tsp chia seeds
2 tbsp mascarpone cheese
DIRECTIONS:
In a mason jar, add oats and milk.
Take the sugar cookies and place in a food processor or zip lock bag.
Blend or crush the cookies until they become fine crumbs.
Place 1/3 cup of the cookies on top of the oats.
In a food processor blend up the strawberries till smooth. Note that it’s just fine to have some chunky pieces.
Place on top of the cookies.
In a bowl stir together the yogurt, chia seeds, and mascarpone cheese. Place on top of the cookies.
Place on top of the strawberries.
Garnish with leftover cookie crumbs

Recipe – Oatmeal Peanut Butter Cookie Ice Cream
SERVINGS: 6-8 peopleWHAT YOU’LL NEED:Ice cube traysBlenderLoaf panWaffle cones or ice cream cups
INGREDIENTS:1 cup of greek yogurt3/4 cup of peanut butter1 cup of Quaker oats1 cup of milkShortbread Cookies (Optional)
DIRECTIONS:
In a bowl add the oats and milk, then place in an ice cube tray and freeze.
Freeze greek yogurt and peanut butter individually in an ice cube tray.
After the oats, milk, greek yogurt and peanut butter are frozen, use a blender to blend all the ingredients together and pour into a loaf pan. Then freeze.
Break up the cookies and sprinkle on top of the ice cream, then place back in the freezer.
Using an ice cream scoop. Scoop out desired amount in a waffle cone or cup.
Enjoy!
Recipe – Oatmeal Crème Brulee
SERVINGS: 3-4PREP TIME: 10 minutes
INGREDIENTS:1 cup Quaker Oats Standard Old Fashioned Oats1 cup low fat milk 1/4 cup mascarpone cheese 1 vanilla bean pod 1 tsp cinnamon 1/8 tsp of salt 1/2 cup sugar (on top for sprinkling)
DIRECTIONS:
In a bowl add the oats, milk, cinnamon, and salt, then stir together. Place in the fridge overnight or up to 8 hours.
Take out and stir in the mascarpone cheese. Then place the mixture in a shallow dish or ceramic dish.
Sprinkle with sugar on top of the oats until it covers the top.
Place in the oven and broil for 2-4 minutes until the sugar caramelizes.
Take a spoon, crack the top, and eat

Ingredients:
1 1/2 c. Challenge Butter, soften
1(8oz.) Challenge Cream cheese, soften
3 cup.sugar
6 eggs
3 cups flour
pinch of salt
2 Tbs vanilla extract
Directions:
Cream the Challenge Butter and Cream Cheese with a mixer.
Then add the sugar and cream for 2 minutes till light and fluffy.
Add the eggs one at a time.
Add the vanilla, salt, then flour.
Mixx together.
In a bunt pan. Butter and flour the pan.
Add the batter to the pan.
Bake at 300 degrees for 1 hour and 40 mins.
Let it cool.

SERVINGS: 8-12
PREP TIME: 25 minutes to make and then 3-4 hours to freeze
MAKE SURE YOU HAVE:
Loaf pan
Hand mixer
Double boiler
INGREDIENTS:
1 Tillamook White Chocolate Raspberry Yum Ice Cream
2 eggs
1 egg yolk
3/4 cup sugar
1 1/2 cup heavy cream
2 packages of raspberries
6 waffle cones
METHOD:
Line the loaf pan with plastic wrap.
Using an ice-cream scoop, scoop out the Tillamook Ice Cream and place in a bowl to melt.
Set aside.
In a clean bowl crack the eggs, yolk, and sugar. Whisk the ingredients together.
Then, using a double boiler, you can also use a sauce pan with 2-4 cups of simmering water.
Place the bowl on top of the sauce pan so that the steam heats up the egg mixture from underneath.
Using a hand mixer, mix the eggs for 3-4 mins.
Then take off the double boiler and mix for another 3-4 mins. You will notice a light pale color and the mixture will become thick. This is how you’ll know it’s ready.
Then in a cold bowl add the heavy cream.
Here’s a tip: Place a mixing bowl and the whisk in the freezer. This will help the cream form quicker.
Using a hand-held mixer, mix the cream till it becomes fluffy whipped cream.
Now fold the egg mixture, and the melted Tillamook Ice Cream into the whipped cream.
Fold gently until it all incorporates.
Assembly of the Semifreddo:
Pour one layer of the semifreddo into the lined loaf pan. Freeze.
Take your pan out of the freezer and add fresh raspberries in an even layer.
Pour the rest of the semifreddo on top of the raspberries.
Garnish the top with crunched up waffle ice cream cones. Place back into the freezer to freeze.
Once the semifreddo is completely frozen, grab the plastic wrap and lift up to pop out the semifreddo.
Place on a cutting board and cut 1-inch slices.
Enjoy!
TIP: If you want the process to go quicker, pour all of the semifreddo mixture in the dish, then place fresh raspberries on top to skip a step.
