In this video, I collect the Moon "Under the Ground" with 0x Captures. You can clip into the ground by crouching at the feet from the T-Rex, then you can land Out of Bounds (OoB). From there you jump into the Fossil/Rock from Below. Now all you have to do is ground pound to free the Moon and that's it! It is possible to get this Moon without Assist Mode, I just decided to use it so I can figure out what to do easier.

This was done on the 1.2.0 Version of Super Mario Odyssey, but it's also possible in earlier versions of the game.
