🍒 Cherry Jam Ingredients 4 lbs. cherries (8 cups chopped) 3 cups granulated sugar 2 tablespoons bottled lemon juice 1 Granny Smith apple (skins and core) Instructions Prepare Cherries: Remove the stems from the cherries and give them a good rinse. Use a stiff straw to push through each cherry to remove the pit. Chop cherries into large pieces or place them in a blender and blend until desired consistency. Measure out 8 cups of fruit. Prepare Apple: Place the skins and core of an apple onto a piece of cheesecloth and tie it into a bundle. Cook: Place the cherries, apple bundle, sugar and lemon juice into a heavy saucepan. Boil the mixture, stirring constantly, until thickened. About 20-25 minutes. Check for Doneness: While the jam is cooking, place a small glass plate in the freezer. When you are ready to check the jam for doneness, spoon a small amount onto the plate and put it back into the freezer for 2 minutes. Run your finger through the jam. If it stays separated it's ready. If it runs back together, it needs more cooking time. How to store: Pour the jam into a container and store in the fridge for up to 4 weeks or follow the canning instructions to store in your pantry for up to 18 months. Water Bath Canning Instructions Prepare Canner and Jars: Clean the jars and lids with hot soapy water. Fill a large stockpot with enough water to cover your jars by 1-2 inches. Place a rack on the bottom of the pot. Place on stovetop and turn the burner on medium heat. Place your jars in the pot to keep them hot while you are preparing the jam. Process jam: Pour the hot jam into hot jars, leaving ¼-inch headspace. Wipe rims of jars with a dampened clean paper towel to remove residue, place a lid on the jar and screw a ring on until finger-tight. Process in a boiling water canner according to the following altitudes. 0 - 1,000 ft above sea level = 5 min 1,001 - 6,000 ft above sea level = 10 min 6,001 - 10,000 ft above sea level = 15 min Store: Remove the rings and check the seals. If sealed properly, label the jar and store it in the pantry. If a jar doesn't seal, simply place it in the fridge and use within 4 weeks.

Add the egg yolks to a large bowl and add half of the milk mixture, whisking as you add it so that it tempers the eggs.(This will prevent them from scrambling.) Pour it back into the saucepan and heat for one minute, whisking constantly. Remove from heat, add the butter and vanilla, and stir until melted. Cover with plastic and chill in fridge.
🥄 Gluten Free Nilla Wafer Ingredients: 1 ½ cups almond flour (finely ground) ½ cup tapioca starch 6 tablespoons granulated sugar 1 teaspoon cream of tartar ½ teaspoon baking soda ½ teaspoon salt 4 tablespoons unsalted butter (melted) 1 large egg 1 tablespoon + 1 teaspoon vanilla extract Instructions: Mix ingredients in a bowl. Place in the fridge for 30 minutes to chill. Preheat your oven to 325°F (162°C) and line two baking sheets with parchment paper. Each cookie uses 1 ½ teaspoons of dough. Roll each portion into a ball and then use your finger to press the ball down into a disc shape. Place them on the cookie sheet 2 inches apart. Bake the cookies for 20 minutes, turning halfway through the baking time. Transfer the baked cookies to a cooling rack to cool.

INGREDIENTS: 1 lb. strawberries 🍓 (hulled and thinly sliced)
Grain Free Graham Cracker Ingredients: 2 cups fine almond flour (not almond meal) 3 tablespoons coconut sugar (or brown sugar) 1 teaspoon baking soda ½ teaspoon salt ½ teaspoon ground cinnamon 4 tablespoons salted butter (melted) ¼ cup honey 1 teaspoon vanilla extract
Whipped Cream Ingredients: 1 ½ cups heavy cream 6 tablespoons powdered sugar ¾ teaspoon cream of tartar
INSTRUCTIONS:
1️⃣ Make the Grain Free Graham Crackers Preheat your oven to 350°F (176°C). Combine the graham cracker ingredients in a medium size mixing bowl with a stiff spatula. Use your hand to work the dough until it comes together into a ball and there are no dry bits left in the bowl.
Place the dough between two pieces of parchment paper and use a rolling pin to roll the dough out until it is ¼" thick. Remove the top piece of parchment paper and transfer the dough, along with the bottom piece of parchment paper to a baking sheet. Use a knife to cut the dough into rectangles and poke the top of them with a fork.
Bake for 14 minutes or until they turn golden brown. Remove from the oven and let cool on the baking sheet
2️⃣ Make the Whipped Cream Place the whipped cream ingredients into a large mixing bowl. Beat with an electric mixer on high speed until stiff peaks form. Place the whipped cream in the fridge until ready to assemble the dessert.
3️⃣ Assembly Once the graham crackers are completely cooled, place a very thin layer of whipped cream on the bottom of a 8" x 8" dish. (This will hold the graham crackers into place.) Place a layer of graham crackers, followed by half of the whipped cream and half of the sliced strawberries. Repeat with a second layer. Cover the dish and allow it to chill in the fridge for a minimum of 2 hours.

Chicken Bone Broth Ingredients: 1 lb. skinless chicken feet (see notes below on how to remove skin first) 2 carrots 4 stalks celery 1 onion 2 bay leaves 1 tsp. salt 1 tsp. pepper 2 tablespoons apple cider vinegar water (see instructions)
Intant Pot Instructions: Place ingredients into the liner and add water making sure not to go above the MAX FILL LINE. I used about 10-12 cups of water. Cook on HIGH pressure for 2 hours. Strain solids through a mesh strainer and season the broth to taste.
Slow Cooker Instructions:Place ingredients into slow cooker, making sure not to overfill with water. I used about 8-9 cups. Cook on LOW for 24 hours.
Strain solids through a mesh strainer and season the broth to taste.Store in the fridge for up to 7 days, in the freezer for up to 6 months or pressure can for longer term storage.
How to remove skin from chicken feet:Place the chicken feet in boiling water for 10 minutes. Remove and allow to cool until able to handle. Peel the yellow skin from the feet, using a scrub brush if needed.

Preheat your oven to 425°F (218°C). Place your cast iron skillet on the stovetop on medium heat. Melt the stick of butter in the skillet. Combine the dry ingredients in a large bowl and use a whisk to combine. Crack the eggs into a small bowl and use the whisk to break up the yolks. Whisk in the buttermilk. Pour the wet ingredients into the dry ingredients and mix with a spatula. Pour all but 2 tablespoons of the melted butter into the batter and stir to combine. Pour the batter into the skillet, smooth the top and bake for 20-25 minutes. The top should be golden brown with dark edges.

Sourdough Pretzel Dough ½ cup (100 g) active sourdough starter 1 cup plus 1 tablespoon (255 g) water 2 tablespoons (40 g) honey (or sugar) 2 teaspoons (10 g) fine sea salt 4 cups + 2 tablespoons (500 g) bread flour
Water Bath 6 cups water 2 tablespoons baking soda 1 tablespoon dark brown sugar
Egg Wash 1 large egg (lightly beaten in a small bowl) 1 tablespoon coarse salt
INSTRUCTIONS 1. FEED YOUR STARTER 12 hours before you plan to mix the dough, add the ingredients to make ½ cup (100 g) of active sourdough starter to a clean jar. Stir until combined, loosely cover the jar and let the starter rise at room temperature. (The ingredients will create a total of 115 g active starter but, because some of it will stick to the sides of the jar during the transfer, we are making a little more than needed.) The sourdough starter is ready to use when it has doubled in size and there are plenty of bubbles on the surface and sides of the jar.
2.MAKE THE DOUGH In the bowl of a stand mixer, stir together the active sourdough starter, water, honey and salt with a spatula. Add the bread flour and use your hands to bring the ingredients together as best as possible. The dough will be very stiff. Place the dough hook on the mixer and mix the dough on the lowest speed for 6-7 minutes. (Or knead by hand for 10 minutes.) Cover the bowl and let rest at room temperature for 8-12 hours.
3. SHAPE AND BOIL Line a baking sheet with parchment paper. Turn the dough out onto a clean work surface and divide into 16 equal pieces. Working one piece at a time, roll the dough into a long rope shape and set it on a clean surface in the shape of a "U". Lift the ends of the rope and twist 2 times. Fold the twist over and press the ends on the dough. Cover the dough with a towel and let rise for 30-60 minutes or until puffy. Preheat oven to 425°F (218°C) making sure that the oven rack in the center position. Boil the water in a large stockpot and add 2 tablespoons baking soda and 1 tablespoon of dark brown sugar. Boil the pretzels, 3-4 at a time, on both sides for 30 seconds each, making sure not to crowd the pot. Use a mesh stainer to remove the pretzels and place back on the parchment paper. Brush each pretzel with egg wash and sprinkle with salt.
4. BAKE Bake the pretzels at 425°F (218°C) for 12-14 minutes or until golden brown.

Pick the bagel dough up, gently shape the ring and place on the parchment paper. Repeat with remaining dough balls. Cover the dough with a towel and let rise for 30-60 minutes or until puffy.
4. BOIL AND BAKE Preheat oven to 425°F (218°C) making sure that the oven rack in the center position. Bring 6 cups of water to a boil in a large stockpot and add 1 tablespoon of sugar. Once the bagels have finished rising, boil them for 2 minutes on each side. (Only boil 3-4 at a time, making sure not to crowd the pot.) Use a mesh stainer to remove the bagels and let rest on the parchment paper until cool enough to handle. Once cool enough, dip one side into your choice of toppings and place back onto the parchment paper. Bake the bagels at 425°F (218°C) for 25-28 minutes or until golden brown.
