Episode 87: WW2 Recipe #1 (Make-Do No. 9) The Lake Effect Gardener 2021-11-08 | And the number one choice of viewers was.... Creole Cabbage! Come take a look at how it is prepared! Recipe is below!2tblsp. Bacon Fat or shortening1/4c. thinly sliced onion1/2c. thickly sliced green pepper1 pint home canned tomatoes (or 15oz can)1 1/2 tsp brown sugar1/4 tsp salt2 whole cloves1 clove garlic1 bay leaf1 medium head green cabbage (abt. 2lbs)In a heavy skillet over medium heat, melt cooking fat/oil. Add onion and pepper, sauté until onion is golden.Stir in tomatoes, brow sugar and salt into onion mixture and bring to a boil over medium heat. Inset cloves into garlic and add to tomato mixture along with bag leaf; simmer, uncovered, stirring occasionally, 15 minutes.Meanwhile, cook cabbage (I sautéed cabbage in butter) in 1-inch boiling water in large, covered saucepan, until just tender. Drain well and return to saucepan. Discard Garlic clove and bay leaf; pour sauce over cabbage and toss to combine. (Serves 4)
