Eagle Mountain Farmhouse Cheese, Lipan (2015)
A father and son team in Lipan, Texas decided the best European style cheeses shouldn't require a plane ticket, so they started making their own. Eagle Mountain Farmhouse Cheese uses pure raw milk to craft gouda, alpine, trappist, and tomme style cheeses right here in the Texas countryside.
Dave started with a gouda recipe good enough to rival anything he'd tasted in Europe or Vermont, then brought his son Matt on board as head cheesemaker. Their Birdville Reserve, a trappist style mountain washed cheese, went on to win first place at the American Cheese Society's national competition in 2011. Even the names pay tribute to home, with varieties like Granbury Gold and Tomme de Hood.
