Most people think homemade soft pretzels are a project, but they’re not! The dough is one of the most forgiving yeasted doughs I make with just a few ingredients, and I give you an alternative option to knead it by hand if you don’t have a stand mixer. The whole thing comes together in about an hour and a half, most of which is hands-off rise time, and the dough only needs one rise. What turns a plain rope of dough into an actual pretzel is one 30-second step: a dip in boiling water spiked with baking soda. Skip it, and you’ve simply baked breadsticks.
