My Spicy Garlicy Glass Noodle Recipe
2 tbps olive oil
good pinch of chilli peppers
good pinch of parsley
2 cloves fresh garlic sliced
salt & pepper to taste
1/2 tbps rice vinegar
1 roma tomato diced
1 english cucumbers sliced
1/2 can less sodium spam or bacon cubbed
heaping tablespoon of low fat cottage cheese
handful of Korean glass noodles
heat oil in pan, once hot, pour oil in ramequin over peppers, garlic, parsley, salt & pepper. Let sit. Boil noodles until cooked, strain and rinse in cold water. Pan fry spam/bacon. Prepare veggies. Add noodles to large mixing bowl, add spam/bacon, veggies. Add vinegar to oil mixture & stir. Drizzled mixture over top of noodles and combine. Top off with cottage cheese and serve.
