RECIPES:
CHOCOLATE MOUSSE:
1 1/4 cups heavy cream
3 tablespoons unsweetened cocoa
1/3 cup powdered sugar (I used powdered coconut palm)
1/2 tsp vanilla
pinch of salt
Whip until stiff peaks form.
HOMEMADE BREAD:
4 tablespoons yeast in 3/4 cup warm water
4 cups warm water
1/2 cup white sugar (I use cane)
2 tablespoons salt
2 tablespoons molasses
1/2 cup lard or shortening (I use organic palm shortening)
2 cups whole wheat or spelt flour
Use unbleached bread flour until the dough is manageable
Mix everything together in a large bowl. Knead the dough once it gets too hard to stir it. I like to spread shortening along the bottom and sides of the bowl so the dough doesn't stick as much. Cover the dough and set in a warm place to rise. Once it has risen to around double, work it down again and cover. Let rise again and work out into the bread pans. I also use shortening to grease the pans. Let rise until the loaves are the size you want. Bake until golden brown.
GINGER COOKIES:
2 cups shortening (I use organic palm shortening)
1 cup molasses
2 tsp salt
3 tsp ginger
1 tsp cloves
3 cups brown sugar (I use coconut palm)
4 eggs
8 tsp soda
4 tsp cinnamon
9 cups flour
Mix together and form into balls. Roll in white sugar (I use organic cane). Bake until just set. (approximately 8-10 minutes)
