Ingredients:
4 cups frozen peas, thawed
1 small purple onion diced
1 small jar pimento's
1 can garbanzo beans drained
6 strips bacon fried and crumbled
3/4 cup shredded cheddar
Mix all these ingredients in a large bowl and set aside.
For Dressing:
1/3 cup (or more) mayonnaise
2 tablespoons sour cream
1-2 teaspoons apple cider vinegar
1 teaspoon sugar.
Mix all the dressing ingredients in a small bowl to bring together, then pour over pea salad.
Mix very well to combine.
Stored 2-3 days in the refrigerator.
