I want to demystify fresh flour grains, so I’m milling 20 different grains with you in 20 days.
Freshly milled flour from chickpeas replaced cornstarch in my kitchen years ago.
➡️Cornstarch is highly refined & it's gone through extensive processing and been stripped of nutrients.
➡️Even worse, it's extremely high in calories (who knew!?) and may increase your blood sugar levels.
Instead, toss a handful of chickpeas in a grain mill and have an instant, nutrient-rich, all-natural cornstarch replacement.

One more note about chickpea flour–in baking it can bring a “green” taste to some recipes. But taking a minute to toast chickpea flour in a dry skillet before mixing it into your batter or dough can make the world of difference. This will replace that raw legume flavor with a more nutty taste.
