Southside Market - Elgin (2026)
Some places have a history. Southside Market in Elgin has a legend.
Dating back to 1882, Southside Market was opened by William Moon in Elgin, delivering meat by horse-drawn wagon, door to door. There was no refrigeration back then, so you smoked it, you seasoned it, and you sold it fast. Moon ground his beef trimmings, added spices and salt, stuffed the mixture into a natural casing, and the first Elgin sausage was born. More than 140 years later, they're still making it the same way.
We're in Elgin, the self-proclaimed Sausage Capital of Texas, and we're sitting down with the Bracewell family at the place that started it all. Bryan Bracewell grew up in the Southside family. He studied Meat Science at Texas A&M, came home with his Aggie ring, and in 2010, he and his wife Rachel purchased Southside from his grandparents with the intention of keeping authentic Central Texas BBQ and fresh sausage made in-house daily. That's not a corporate story. That's a family story.
And the sausage? Known by locals and old-timers as "Elgin Hot Sausage" or simply "Hot Guts," it's all beef, coarsely ground in a natural pork casing, seasoned with cracked black pepper. On any given Saturday, they sell around 1,400 pounds in the Elgin restaurant alone. I'm not kidding. 1,400 pounds. In one day.
Southside Market was designated a Texas Treasure Business in 2022. Turns out, Texas agrees.
