1. Mix the flour, baking powder, baking soda, cinnamon, optional nutmeg and salt thoroughly. Use a level ½ teaspoon of soda; uneven mixing can leave bitter spots.
2. Freshly grate the carrots. Chop the pecans, leaving a few larger pieces for crunch; walnuts also work. Drain the pineapple well and press out excess juice. Rings work too: chop them small and measure ½ cup.
3. Whisk the oil with both sugars. Add the eggs one at a time, whisking well before the second, then just until smooth. Room-temperature eggs blend more easily.
4. Gently mix in the dry ingredients in portions, stopping once the flour is incorporated. Thick batter is normal. Add the carrots, then the pecans, raisins and pineapple. Switch to a spatula and fold just until evenly mixed.

INSTRUCTIONS
1. Sift the flour, powdered sugar and cocoa together, add a good pinch of salt and whisk until the cocoa is evenly mixed in.
2. Cut the cold butter into small cubes and add it. Break it up with a fork, then rub it in with your fingertips, working quickly. Stop at fine chocolate crumbs - the cold butter pieces make the shell crumbly.
3. Add the egg and vanilla and mix only until the crumbs clump together. Don't overwork the dough once the egg is in, or the crust turns firm instead of tender.
4. Press it together by hand, don't knead. As soon as it forms one smooth piece, wrap it well, flatten it into a disk and chill until firm, about 1 hour. Meanwhile, lightly butter a 9-inch (23 cm) tart pan with a removable bottom.
5. The dough should be cold but flexible; if it's soft or sticky, chill it longer. Roll it on parchment to an even 1/8 inch (3 mm) - on parchment it needs no extra flour.
6. Roll the sheet loosely around the rolling pin, unroll it over the pan and let it fall in without stretching - stretched dough shrinks back down the walls in the oven. Press it across the bottom, roll the pin over the top to trim, then press the dough into the fluted sides, even all around, no thin spots.
7. Prick the base all over with a fork, out to the edges, so steam escapes and the base stays flat. Chill 15 more minutes; heat the oven to 340F (170C).
8. Line the cold shell with parchment and fill it with dry beans, rice or lentils, right up against the sides to hold the walls. Bake blind 15 minutes.
9. Lift out the parchment and weights - any earlier and the walls slide down - and bake uncovered another 8-10 minutes, until the center is dry and matte. Judge by surface, not color: raw and baked cocoa dough look alike.
10. Cool the shell completely in the pan, about an hour: warmth softens the crust and loosens the mousse.
11. Chop the semisweet chocolate small and melt it over a gentle double boiler: quiet simmer, dry bowl, slow stirring. Too much heat turns it thick and dull. Off the heat, cool it to 95-100F (35-38C).
12. Beat the block cream cheese with the sugar until completely smooth, scraping the bowl. It has to be at room temperature, 68-70F (20-21C) - lumps left now stay in the mousse.
13. Pour in the warm chocolate all at once and mix right away until smooth and glossy. Cold cream cheese sets the chocolate into hard specks that can't be beaten out.
14. Whip the cold cream to soft peaks only - the tip bends over when you lift the beaters. Fold it into the base gently, just until the paler streaks disappear.
15. Spoon the mousse into the cooled shell, out to the edge with no gaps, and smooth the top carefully - the thin glaze shows every dip. Chill at least 5 hours; overnight is better.
16. Melt the bittersweet chocolate over the same double boiler, low and steady. Off the heat, stir in the butter, then cool the glaze to barely warm - 88-92F (31-33C).
17. With the tart thoroughly chilled, pour the glaze into the center and tilt the tart to let it spread by itself, no spatula. Chill 15 minutes to set.
18. Lift off the ring and slice with a warm, dry knife, wiping the blade between cuts.
ADDITIONAL NOTES
- Cream cheese must be full-fat block: tub, whipped or reduced-fat have more water and gums, and the mousse won't set. - Use baking bars, not chips: chips melt thick and grainy. Heavy cream, 36% fat or more. - Oven only steps in 25-degree increments? Bake at 350F (175C), checking 2-3 minutes early. - Optional: brush the inside of the still-warm shell with 1 tbsp (15 g) melted chocolate to keep the base crisp. Pan: 8x8 inches (20x20 cm). Yield: 12-16 bars.
INSTRUCTIONS 1. Stir the sugar with the sour cream (or Greek yogurt) and vanilla, then chill it - it goes into the flour cold. 2. Sift the flour with the baking powder so there are no lumps and that tiny amount spreads evenly. Add the salt and mix; salt makes everything taste more buttery. 3. Cube the cold butter small, toss it into the flour and rub it in with your fingertips until it looks like coarse crumbs. Work fast - softened butter just smears into the flour. 4. Add the chilled sour cream mixture, stir with a spatula, then switch to your hands and stop the moment it forms a soft ball - overworking makes the crust tough, not crumbly. 5. Split the dough in two, one piece slightly smaller (about 60/40), wrap the smaller one in plastic and freeze it. 6. Line the pan with parchment, overhanging two sides so the bars lift out. Press the larger piece over the bottom, smooth it evenly, push it slightly up the sides and chill it. An 8x8 square pan is ideal; a round one that size works too. 7. Zest 2 lemons, yellow layer only - the white pith is bitter. Cut them into wedges, cut away the skin and pith, chop the flesh small and pick out every seed: one blended seed turns the whole filling bitter. 8. Do the same with the orange - peel, pith and the membranes between segments - and add it to the lemons. 9. Peel and chop the apple small. It mellows the sharp citrus and adds pectin, which sets the filling. Any crisp, firm apple works (Granny Smith, Honeycrisp). 10. Add the zest you saved and blend until mostly smooth; a few little bits are fine. 11. Stir in the sugar and cornstarch, leaving no dry spots before it hits the heat - cornstarch added to a hot mixture lumps instantly. 12. Move it to a heavy-bottomed pan so it doesn't scorch. On medium heat, cook to the first bubbles, then stir for about 10 minutes, scraping the bottom and corners, until it thickens and stops looking watery - a spatula track should hold for 2-3 seconds. Cook it much longer and the starch breaks down and thins again. Taste, and add up to 3 tbsp sugar if too tart. 13. Scrape it into a clean bowl so it stops cooking, stirring now and then as it cools. It must be at room temperature before it meets the cold crust, or it melts the butter in the base. 14. Spoon the filling onto the chilled crust and smooth it corner to corner, leaving 1/2 inch (1 cm) clear at the edges - it spreads as it heats. 15. Grate the frozen dough over the top on the large holes and spread the shreds evenly, but don't press them down - the air between them makes the topping crisp. NOTES AND TIPS - Cold dough is everything: it only grates if it is rock hard. Freeze it at least 2 hours if you can, ideally overnight (wrapped, it keeps a month), and hold it through plastic wrap while grating. - Butter: European-style, 82-85% fat (Kerrygold, Plugra) gives the crumbliest crust. Standard 80% works, but freeze the dough 30 minutes longer. - Sour cream must be full-fat - light or fat-free adds water and makes the crust tough. - Weigh the flour (280 g) or spoon it into the cup and level it off - scooping packs in 20-25% extra and dries the bars out. - US lemons are usually waxed: buy unwaxed or scrub them with hot water first. 5. Whisk in the oil, then the milk (also best not fridge-cold). The oil is what keeps this cake soft and moist, even straight from the fridge.

17. For the best texture, rest the cake at room temperature about 30 min so the ganache sets — but if you can't wait, grab a slice. It's creamiest slightly warm or at room temperature, not fridge-cold.

A FEW THINGS THAT MATTER
• Low and slow. Cook on the lowest heat with the lid on. High heat burns the bottom before the center cooks through. • Handle the lid right. Leave it undisturbed for the first 15 minutes so the cake can set, then wipe the condensation off a few times as it cooks — otherwise the water drips back onto the cake. • Everything cold for the cream layer. Whipping cream only reaches stiff peaks, and holds them, when it's very cold. Warm cream won't set up. • Cool the cake completely before the cream. Whipped cream slides right off a cake that's still warm. • Let the cream layer set before the caramel. Chill it about 30 minutes first; caramel spread over soft cream just melts into it. • Watch the caramel closely. Deep amber is where the flavor is, but the line between deep and burnt-bitter is thin — pull it the moment it's there. • Room-temperature butter and cream for the caramel. Cold dairy makes hot caramel splatter and seize into lumps. • Protect the nonstick. If you mix the batter right in the skillet, dissolve the sugar in the milk first so it can't scratch the coating — and only ever cut and lift with a non-metal spatula. • Coconut is optional. Use 1–2 tbsp or leave it out; if you skip it, add a little extra flour to make up the difference.
STEP BY STEP
Note: these follow the order in the video, but the caramel (step 10) is easiest if you make it first — it needs time to cool and thicken while everything else comes together.

METHOD
Start with the pastry cream — it needs time to chill.

OPTIONAL UPGRADE: ADD EGG YOLKS
For a richer, smoother, more custard-like filling, add 2 egg yolks to each cream: 2 yolks in the orange custard and 2 yolks in the milk custard, 4 yolks total.
Best method with yolks: whisk the yolks with the sugar and cornstarch in a bowl until smooth. Heat the orange juice or milk separately until hot but not boiling. Slowly pour a little of the hot liquid into the yolk mixture while whisking constantly to temper the yolks. Then pour everything back into the saucepan and cook over medium-low heat, whisking nonstop, until the custard thickens and starts to gently bubble. Cook for about 1 minute more so the starch fully activates, then remove from heat.
Do not add yolks directly to boiling liquid, and do not boil the custard aggressively — the texture can become grainy or curdled.
IMPORTANT TIPS & COMMON MISTAKES
• Use fresh orange juice, not bottled juice. Fresh juice gives the cleanest citrus flavor and color. • Use cornstarch only. Potato starch can make the filling cloudy, stretchy, or jelly-like. • If your oranges are very tart, add about 1 1/2 tbsp extra sugar (20 g) to balance the flavor. • Keep the dough cold and do not overmix it. - Lowest heat. Always. - Lid on. Don't lift it for the first 10 minutes. - Wipe condensation off the lid every time it builds up. - Pan size has a ceiling. 24 to 26 cm / about 9½ to 10¼ inches. Bigger than 26 and the cake spreads thin and dries out. - Center the skillet on the burner. Off-center and one side runs ahead. - Batter no higher than a third of the pan. It nearly triples. - Sift the cocoa. Add the flour in stages. Stop whisking the second the streaks vanish. - Unsweetened cocoa, not the hot chocolate mix. - Old baking powder won't rise. For the Chocolate Sponge:
- ½ cup (60g) flour (I used cake flour, but all-purpose flour works too) - 3 tbsp (30g) unsweetened cocoa powder - 1 tbsp (10g) cornstarch - a pinch of salt - 2 tbsp (30ml) boiling water - 2 tbsp (30ml) vegetable oil - 4 eggs (about 240g) - ½ cup (120g) sugar
Baking Temperature: 350°F (180°C).
Baking Tips:
- Preheat your oven before you start.
- Baking time depends on the thickness of the batter. I used a 16x15 inch (or 40x38 cm, external dimensions) baking tray, and it took 12 minutes for the sponge to bake perfectly. If your baking tray is smaller, the batter will be thicker, so you may need to bake it a bit longer. Be careful not to overbake—start checking for doneness after 10-12 minutes by inserting a toothpick into the center. It should come out clean. Avoid opening the oven during the first 10 minutes to prevent the sponge from deflating.
- Don’t use a small baking tray, as the batter layer will be too thick, making it harder to roll the sponge later.
- Roll the sponge cake immediately after taking it out of the oven while it’s still hot and flexible. Once it cools, it won’t roll as easily.
For the Chocolate Ganache:
- 7 oz (200g) dark chocolate - 1 ¼ cups (300ml) heavy cream
