If you’ve ever wondered whether a rice cooker can bake a real carrot cake with great texture, this video will surprise you. Today I show how I made a moist, springy, non-dense carrot cake right in my Aroma ARC-914 rice cooker — and why I honestly think it works better than baking in an oven for small cakes.
I walk through the exact ingredients I used, including vanilla Greek yogurt, coconut oil, shredded carrot, raisins, and even a little molasses instead of sugar. I also share the mistakes I made — like adding the carrot too early — and how the texture STILL turned out soft and fluffy instead of gummy or heavy.
The rice cooker method itself worked beautifully, and after three cycles on the White Rice setting, the cake came out surprisingly light with a classic carrot-cake feel.
1 cup all-purpose flour
½ teaspoon baking soda
½ teaspoon baking powder
¼ teaspoon salt
1 large egg
½ cup milk
3 large tablespoons vanilla Greek yogurt
3 tablespoons melted coconut oil
1 teaspoon vanilla extract
3 tablespoons molasses
1 large shredded carrot (add at the end for easier mixing)
1 spoonful raisins
1 spoonful sesame seeds
1 spoonful sunflower seeds
I’ll definitely be making more rice-cooker cakes and refining the recipes, and I encourage anyone who wants inexpensive, simple baking options to try this method. A rice cooker is one of the most underrated tools for making budget-friendly meals and desserts, and I’ve been using it for everything from stews to cakes.
