This is a great recipe for pot roast whether the weather is warm or especially cold. It's easy for the stove too. I had my son filming and he could make it! :)

This recipe is like all others, to taste and make it your own.
Recipe:
2-3 lb roast
1 onion, chopped
3 stalks celery chopped
2 carrots chopped
Mushrooms chopped
1 T Worcester sauce
3-4 cloves garlic
1 lb small red potatoes
1 3/4 c beef broth
Salt and pepper to taste
Paprika
Pepperoncini sliced as many you like
1 t oregano
1 t basil
Turn the instant pot on to saute and add salt, pepper, paprika to enough flour to coat the roast . Add a bit of oil so and sear on all sides.
And set aside.
Sear the onion and garlic, add a bit of broth.
Add the roast back along with the pepperoncini and spices.
Set the instant pot to high at 30 mins and seal.
When it's done, release the pressure.
Add potatoes, peas, carrots, taste for adding more spice.
Set to high for another 15 minutes, manual release.
Slice the roast across the grain, serve with garlic bread.
