In this episode of Bake it Up a Notch, Erin goes over all of her top tips to get perfectly baked pies for your holiday gatherings. Around this time of year, many already have their favorite pie recipes. This video will not argue with your idea of pie recipe perfection, but it will help you fine tune your baking skills to get the perfect version of whichever you choose! Today Erin goes over some common favorites: Apple, Pumpkin, and Pecan- all classics, and all notorious for all of the little things that may go wrong. With these tips and tricks, you will learn how to avoid soggy crusts, cracked custards, soupy fillings, and more. Then, try your hand the sturdy pie challenge!

In this episode of Escapism Cooking, Mandy Lee makes her version of Big Plate Chicken. This iteration packs a punch with a whole lot of added flavor and spice, taking it from a humble classic to something special.
"Big Plate Chicken is dish-naming at its best: simple, straightforward, and strangely appealing. It's an iconic dish from Xinjiang that is—literally, you guessed it—a very, very (and I mean *very*) large plate of chicken over flat chewy noodles.
Unfortunately, more often than not in the few times that I have been served it, it didn’t taste as big as it sounds. The noodles were often more homey than robust, and not throwing any punches because, in its defense, it was always meant as a humble, working-class meal designed to fill the tummy, not the senses.
Well, I object. I have an empty hole in my heart that requires a spicier version. I decided to up the flavor, spice, and heat levels of the dish without deviating from its core principles. It’s still a very big plate of chicken. It still has flat chewy noodles to soak up all its glory. It even keeps those humble potato chunks to remind us where it came from. It’s still the same guy. In Season 1, Episode 2 of Why it Works with Lucas Sin, we learn everything necessary to get the perfect charred vegetables, every time. Maximizing color and flavor is a top priority, along with a generous topping of Lucas's version of the famous halal cart white sauce.
"Properly cooked vegetables can truly elevate a barbecue. Though often overlooked, grilling vegetables opens up a world of textures, colors, and flavors. We don’t need to resort to the same cliches every time we grill like corn on the cob and we can cook with the seasons: spring offers vibrant green peas, early summer brings fennel and cauliflower, followed by bright sweet peppers, and fall brings forth squash and pumpkins. As winter sets in, we find robust kale and brussels sprouts. If you share a love for grilling or cooking over live fire, neglecting vegetables would be a missed opportunity, whatever month of the year.
However, the diverse range of vegetables and their varying textures present challenges on grilling day. Each vegetable requires different cooking times, making it difficult to achieve consistent results when cooking them from raw. Some tougher vegetables struggle to cook through the center without losing vibrant color or becoming overly charred on the outside. Additionally, if a significant effort has already been dedicated to cooking the meat, vegetables might become a burden relegated to the end of the barbecue.
An elegant solution is to pre-cook the vegetables before heating up the grill. And the best way to do so is to blanch them. Blanching the vegetables is the best way to preserve their flavor, texture, and color. Heat coaxes them out and ice locks them in. Much like the Chinese practice of blanching vegetables prior to stir-frying in a wok, this method ensures the vegetables only need a brief encounter with high heat on the grill to achieve the desired blistering and smoky flavor we crave in barbecue. With this approach, the vegetables will cook for a similar length of time on the grill, just a couple of minutes to achieve a delightful char. Personally, I prefer to cook my vegetables early on in the grilling session when the barbecue is at its hottest, typically at the beginning once the coals are white hot.
The following recipe focuses on grilling cabbage, a notoriously challenging vegetable to grill from raw. However, the technique can be applied to any hearty vegetables you have available. This dish also features an all-purpose sauce inspired by the beloved halal cart white sauce, enhanced with the addition of savory smoked oysters. The sauce is creamy and substantial, while the optional garnishes provide additional texture, herbaceousness, spice, and zing." ~ Lucas Sin

In this episode of In the Food52 Kitchen With, Chef JJ Johnson whips up some insanely flavorful snack-sized burritos packed with cilantro-lime rice, chorizo, and black beans. This recipe is from his new book, The Simple Art of Rice, which is page after page of guidance on making the perfect rice, along with tons of recipes highlighting the versatile grain.
"For me, a burrito is the perfect vessel for rice. I call it a hand snack (though these are filling enough for lunch or dinner) after the traditional Mexican street food that I became enamored with on my first trip to Mexico, shortly after I graduated from culinary school. It was the first time I’d traveled with my chef lens on. I’ll never forget the experience of stumbling out of a club at 2 A.M. to get a burrito from the Isla Mujeres food-stall vendors—ladies selling tortillas stuffed with beans and flavored rice, cooked in cast-iron pans and sprinkled with lime juice. I reveled in the pull of the melted cheese, the grains of rice falling onto my shirt front, my friends laughing, and music pulsing from inside the club. This dish incorporates two other recipes in the book—Cuban black beans and cilantro lime rice—but really, this recipe is a blueprint, and you should feel free to follow it loosely, subbing in other grilled or sautéed veggies, cheeses, or rice. It makes a perfect meal if you have leftover Peruvian-Style Arroz con Pollo (page 53) to add to the tortillas. And it’s a fun recipe to do with kids, mixing and matching ingredients to taste. Just make sure to use large tortillas, and don’t overstuff them, or they will be hard to fold up (and will no longer be a hand snack!)." ~Chef JJ Johnson

"After seven years crammed into a rabbit warren of offices in the Chelsea neighborhood of Manhattan, we moved our headquarters to the Brooklyn Navy Yard this spring. Working with our good friends Brad Sherman and Nina Etnier at Float Studio, who have designed all of our previous offices, we set out to create a space that focused on our core team and community needs: gathering, creating, and entertaining. It took us three years (and heroic project management by our office operations director Karen Levi!) to build out a slew of test kitchens, studios, and work and huddle spaces that are both deeply functional and welcoming—a place that feels like home.
Now that we’ve settled in, I’m excited to show it to you! In our newest episode of Founder Files, I take you on a tour through our light-filled floor at Dock72, which is well-stocked with everything from vintage Dansk tableware to whisks and sauté pans to cozy sofas. The family-run Italian brand Bertazonni is the test kitchen’s oven, cooktop and dishwasher maker of choice. Their Double Electric Convection Wall Ovens, Microwave Speed Ovens, and Gas Burner Cooktops power all of our recipe development and testing. You’ll also find their refrigerator in our team kitchen alongside the same appliances.
The Trinsic® Single-Handle Pull-Down Faucet, Broderick® True Bar Kitchen Faucet, and Broderick® Two Handle Pull-Down Bridge Kitchen Faucet from Delta® are installed throughout the test kitchen, our video studio sinks, and our “Town Hall” area, where we gather for lunch and host gatherings.The backsplash brings a pop of color and texture to our office kitchen by way of luxury tile maker Walker Zanger. The collections we used throughout the office include City Bricks tile, Velluto porcelain tile, and the Robert A.M. Stern tile.
You’ll find heat-, scratch-, and stain-resistant Sirius Dekton Solid Collection countertops in our test kitchen and Cincel Grey silestone countertops in our social kitchen and Town Hall kitchens, both made by Cosentino.
Katy Skelton’s Perry Double Sconce, made in Savannah, GA, casts a warm glow in the entrance area of Food52. Throughout the office you’ll find nooks perfect for our photo shoots, hosting guests, and impromptu meetings. Among the seating options are the T-Chairs, Signature Chair and Sideways Sofa by Carl Hansen & Søn.
In our first meeting space as you enter the office (which is filled with a rainbow of new and vintage Dansk pieces), you’ll find more striking chairs and lighting from Audo Copenhagen like their cozy Knitting Chair, pictured, the JWDA Floor Lamp, and Eave Sofa.
In our parent/meditation room, Hem’s Zig Zag shelf is a stylish showcase for our vases and books. We also have their Bookmatch Bench and Koti Sofa. To define and add warmth to our seating areas, we added these Armadillo rugs throughout: the Atlas Classic Collection area rug, the Drift Classic Collection area rug, and the Agra Heirloom Collection area rug. Our Normann Copenhagen tables, including the Turn Table and Grow Table, are the perfect pedestals for accent pieces
Just off our library area, filled with hundreds of cookbooks, is this mod, chocolate velvet Maura Modular sofa from TRNK, along with their Arc sofa. To pull up a seat to the island in our social kitchen, we use the industrial chic Blackhouse Factory Twist stool. You’ll find their Evans Iron Pedestal side table nearby.
Uhuru’s sleek Workstations are where much of the team works. The electric panel in the middle console can be cleverly covered when the laptops are gone. We also have their Sit Stand Team Table for standing meetings. In the Town Hall gathering area, we sit at Vermont Table’s Trestle table for lunch, and mingle around during evening parties. We use their A-Frame table and Dovetail table, too.
Inside Amanda’s office, the Moors wallpaper by Calico acts as a gorgeous, painterly backdrop.
For the perfect addition to our cabinetry, we used the Marcelle and Otto collections of knobs, hooks, pulls, label holders and brackets from Modern Matter and Float Studio.

In this episode of Bake it Up a Notch, Erin Jeanne McDowell makes three crowd favorite sandwich rolls- the Classic Bun, the Hoagie, and the Ciabatta.
Here are Erin's notes on each style:
Ciabatta: "These can be used to build an epic sandwich—like a BLT, or my mom’s salmon sandwiches. In many ways, this is an awesome bread project for beginners. It’s a great introduction into the concept of preferments: a small portion of flour, water, and a little yeast that’s mixed the day before you bake the bread, and adds both flavor and structure. But while ciabatta is an easy bread to shape, it is a very soft dough. The handling is simple and fairly minimal, but it can still take a little getting used to. Don’t be afraid to throw around plenty of flour with this one; ciabatta literally means “slipper” in Italian—it’s meant to be fairly flat and crusty."
Hoagie: "This is a recipe I really hope you will try, even if you don’t usually bake bread. If you’re intimidated, please don’t be scared! Watch our corresponding episode of Bake it Up a Notch —or any of our episodes that educate on yeast and bread making—I’ve got you!!! This dough is a great introduction to how the bread-baking process works. It uses a starter (but a much simpler one than, say, sourdough), so it benefits from its strength, hydration, and flavor. Steam is a powerful technique for some types of breads and rolls, including this recipe. Introducing steam during baking promotes an incredibly crisp, well-browned outer crust with that ideal chewy bread texture. Professional bakeries use special ovens that inject steam right into the oven—but at home, I use a pan of ice cubes to create steam when I’m baking bread."
Sandwich Buns: "This is a truly perfect bun in my book. It’s light and fluffy, pillowy soft, and beautifully golden brown. They are perfect for everything from burgers to egg sandwiches—for a fried chicken sandwich or your favorite deli sandwich. Honestly, these buns are even delicious all on their own, slathered with butter. The dreamy, soft texture of these buns comes from two important ingredient sources—plenty of hydration and enriched ingredients. A high hydration level in bread dough contributes to a soft, fluffy texture, helping ensure it rises to its best heights. More hydration does yield a fairly sticky dough, but don’t be intimidated! Just use flour as needed when handling and shaping it, and think of the super soft end result to come."

"There are endless variations of tomato and egg. The root of that versatility is in the dish’s simplicity; tomato and eggs seem to be made for each other. The combination of the two produce a dish that is robust in its savoriness, with both tomatoes and eggs heavy in the umami-tasting glutamate amino acid. That depth of flavor is then punctuated by the acidity of the tomatoes and rounded with the creaminess of the eggs, merging the two into a satisfying, balanced dish. In Chinese cooking, this simple combination of these two ingredients gives this dish incredible versatility. Throughout China, cooks adapt the dish for regional preferences of taste, texture, and serving. In warmer climates, the dish is a bright stir-fry to be eaten with rice. Whether you have dietary restrictions, or you've run out of some pantry staples- we've got you covered with original, vegan, no baking powder, and no cornmeal versions!
"My favorite ’90s food trend has to be the halved grapefruit with bruléed sugar on top. I’d devour those shiny pink segments in their juicy, sugary glory. A little sweet, a little tart, and a little crunchy—the coral-hued fruit played tug-of-war with my taste buds until I was desperately tipping the little half straight into my mouth hoping for just a touch more juice.
Hot on the tails of that memory, I wanted to make a cake that paid homage to my favorite winter citrus. The base here is a mix of gritty cornmeal and tender cake flour, which has the lowest protein content of baking flour at around 6 percent. This means the gluten won’t really develop the same way it would in a bread or cookie, so the finishing crumb is super fluffy and tender. For flavorings, in comes tarragon: a stringy-leafed herb that is very licorice-forward similar to fennel (a common partner to grapefruit in many a wintry citrus salad). And lastly, a sprinkling of demerara sugar—a large, crunchy granulated sugar that has just a touch of molasses—on the bottom of the cake pan yields that signature brulée crunch to the nestled grapefruit slices."

TOMATO GALETE WITH PARMESAN CRUST: This galette is super simple to put together, but still features a homemade crust. The resulting bake is a perfect summer baking project—or whenever you find yourself with a few too many tomato jewels. As someone who loves to make pastry crusts, I feel tomato season is one time of the year that is especially worth it to put in that extra homemade effort. Juicy tomatoes and flaky, buttery crust were positively made for each other. I’m often surprised how rarely folks opt to add something flavorful to their homemade crusts and I aim to remedy that! I’ve been known to add everything from herbs and spices, to citrus zest and vanilla bean to my pie crusts, but this salty savory crust is truly one of my very favorites. Spiked with a hefty amount of finely grated parmesan cheese and some freshly ground black pepper, this crust becomes like a tender cacio e pepe blanket that encases the tomatoes.
The tomatoes are tucked into that crust nestled on a bed of soft, fluffy cheese, too. A blend of Boursin, cream cheese, scallions, and garlic is spread onto the base of the crust, and the tomatoes lay on top. The resulting galette is as worthy of a lazy summer supper as it is a festive celebration with friends, and slices are portable enough to transport to the beach or a picnic, too. ~Erin Jeanne McDowell
ROASTED TOMATO FREEFORM PIE: Making a galette is the quickest way to a tasty tomato pie in the summer, but this roasted one is worth the extra time. But know that extra time, in this case, doesn’t mean much extra effort. Cherry or grape tomatoes (plus plenty of garlic) are first roasted slowly in the oven. Since tomatoes are notoriously juicy and high in moisture, roasting them before baking helps to concentrate those juices (not to mention the flavor). Later, when they are wrapped in pie crust and baked, the moisture further amplifies. Rather than weighing down the bottom crust, the mixture becomes delightfully rich and jammy instead. Plus, roasting provides the especially delicious by-product of roasted garlic. ~Erin Jeanne McDowell

"Chicken salad, a dish that had seen its better days, is now sadly an aforementioned thought in the evolution of American food culture. Often taken not very seriously, these two words nowadays don't bring about anything but memories of quick-lunch buffet counters and half-hearted leftovers. It’s unjust really, because if we could just approach it with the same level of fear and respect as we do with a piece of prime-rib, chicken salads, I say, could be truly amazing. Inspired by cuisines from Yunnan, this recipe ditches poaching, where you would lose all the flavors to water that you’re dumping later into the sink, I incubate the chicken in a low-temp oven to bring its internal temperature slowly up to the optimal, supple 165°F. But we’re not done yet.
The treatment of blow-torching is the highest form of respect and civility you could pay to the skin of this chicken, and it would be a crime not to. Torn instead of cut, the pieces present naturally maximized surface area to retain a simple—but not mindless—dressing that is flavored with the chicken’s own juice. Last but not least, an absurd amount of fresh herbs brings the fragrance needed to make this dish truly refreshing." ~Mandy Lee

"When skirt steak is marinated in zippy Marzetti’s Simply Balsamic Vinaigrette Dressing & Marinade, the meat is both tenderized and flavored at the same time thanks to the dressing’s main ingredient: balsamic vinegar. The trick here is to make sure to give your steak at least a few hours in the marinade to ensure all that flavor really sinks in. For faster marinating, the steak is cut into smaller pieces, which helps to cut down on cooking time when you’re ready to grill. PLUM FRUIT LEATHER: I love to make fruit leather. It’s an extremely rewarding project with very little active time and requires little effort. It’s a great way to use in-season, juicy fruits, but it works just as well with thawed frozen fruit, too. You can adjust the sweetness level to your liking: adding more sugar will make a leather that tastes a bit more like a chewy candy-like treat, but you can just as easily rely on the natural sugars of the fruit and add very little (or none). Like anything made with fresh fruit, the precise cooking time of this leather is somewhat difficult to predict. Different kinds of fruit are juicier, and some will thicken a bit more naturally due to the makeup of their particular combination of flesh, skin, and/or seeds. - Erin Jeanne McDowell
SOUR CHERRY SYRUP: It’s so good, so easy, and so special—such huge reward for very little effort—that I will now be making a batch every time I get the “good cherries.” Spoon your syrup over ice cream, blend it into a milkshake, or use it to make an ice cream soda or float! Or my personal favorite move is to mix it into fresh squeezed lemonade or limeade for a sweet-sour summer treat. It keeps for up to three months in the refrigerator, so it’s also great as a cocktail mixer, too, because we’re essentially making homemade grenadine. Best of all, reserve and enjoy the bonus by-product: the simmered, sweetened cherries. When the syrup is strained, reserve the fruit to spoon over your favorite dessert, stir into yogurt, or purée them to make fruit leather. —Erin Jeanne McDowell
SWIRLY FRUIT CREAMSICLES: Homemade popsicles are so easy to make—but with just a little extra effort they can become showstopper-level extraordinary. These popsicles take two simple bases, and swirl them together to make one of the dreamiest popsicles/ice cream bars ever. The first base is a homemade fruit purée—this is as simple as cooking fruit and sugar, then straining it to make a smooth, flavorful purée. The second component is a no-churn ice cream base. APRICOT DUMPLINGS: These fluffy, fruit-filled treats continue my love affair with simple stovetop dumplings (a love affair so grand, I devoted a six-page ode to dumplings in my newest book, Savory Baking). I grew up eating a lot of these kinds of dumplings in savory applications—like chicken and dumplings. But this sweet version makes a perfect, not-too-sweet summer dessert. It’s easy to make, but still feels fancy enough to serve for company. It’s a perfect dish to celebrate the wonderful bounty of fresh summer fruit. - Erin Jeanne McDowell

"I once saw a video of a food stall in Indonesia doing this and immediately needed it to be a part of my life. Having said that, I adapted it heavily from its original form. Think of this more as a technique than a precise recipe, because much of it depends on your taste and the type of chiles you have access to. A meaty pepper variety like jalapeño will give you milder heat and more roasted pepper flavor. A variety with thin flesh, like Thai bird’s eye or Scotch bonnet, will provide a more intense kick and a sharper, aromatic chile aroma.
