Today I’m tasting Puro de Surales, an unaged cane juice rum from Ecuador. I had no idea this rum existed and was completely surprised to find it out on the shelves.

This rum is made by Remigio Cordero and his grandson Ismael in the small hamlet of Surales in Ecuador. The cane varietal used to make the puro is Cana Blanc. The canes are hand harvested and then crushed which extracts the cane juice inside. That juice is then wild fermented and then the wash is double distilled on a hand built pot still. And its bottled at 60.1% abv.
