Ingredients:
3-4 cups hash brown potatoes (thawed and uncooked)--use a little more if you use a bigger dish to cook it in
1 cup pork sausage (optional)--this was about 4 patties
2 green onions, chopped
6 eggs, lightly beaten
4 tablespoons salted butter, softened
1 cup sharp cheddar cheese, shredded
1 cup Monterey Jack cheese, shredded
1/4 cup heavy whipping cream
salt/pepper to taste
Directions:
1. In a large bowl, mix the hash browns and the softened butter together. Press into a pie pan or cast iron skillet to form a pie crust. Mom's pro tip: Use plastic wrap or parchment paper to form the crust--this will keep your hands clean and allow you to more effectively manipulate the potatoes.
2. Bake the potato crust for 30 minutes at 375 degrees.
3. Fry up the pork sausage if you want to use it. You'll need about 1 cup--roughly 4 patties. Set aside and let them cool.
4. In a large bowl, mix the eggs, cheese, whipping cream, green onions, and salt and pepper, until just mixed. Add cooled sausage or any other ingredients.
5. Pour mixture into the hash brown crust and spread evenly. Bake at 375 degrees for 30 minutes or until desired doneness.
