The early churches were full of colourful illustrations of biblical events, which served as an effective communication of the Christian religion. That is why we are having 50 carolingian style scenes from the Bible painted on the walls of the Ansgar Church.
Research, sketching and painting is carried out by visual artist Trine Theut. She was also the driving force behind the exterior of the church.

DEN KAROLINGISKE STILART

På Ribe VikingeCenter arbejder vi på at genskabe kirkerummet i Ansgar Kirke, som det meget vel kunne have taget sig ud i 800-tallet. Man behøver ikke nødvendigvis en ovn for at kunne bage lækkert brød. Her kommer opskriften på et lækkert og sprødt brød bagt på en pande over et glødebål. I smag og konsistens kan det minde om focaccia, og det er lækkert både som tilbehør eller som lunt morgenbrød efter en nat i det fri.

Svin, okse, lam, fjerkræ eller fisk. Man kan pakke alle typer kød ind i ler og tilberede det direkte i gløderne. Stegen passer stort set sig selv. Man skal bare passe gløderne og holde øje med stegetiden. Resultatet bliver saftigt og fuld af god smag.

Pork, beef, lamb, poultry or fish. You can clay bake all types of meat. Cooking a roast this way doesn't really take much effort. You just need to tend the coals and watch the cooking time. The result will be a juicy roast packed full of flavour.

A group of volunteers help us with the task of decorating the inside walls in the Ansgar Church. This summer, Michael Horn joined the team for a couple of weeks. Just like the other interpreters in Ribe VikingeCenter each have a role and a place in the story we tell about Viking Ripa , Michael also got his.
And so he became the slave from Dorestad, who was brought to Ripa by Erling, the slave trader. Apparently, Michael had been working on different church buildings down south, and his skills were of course relevant to the church in Ripa where he was given a brush and some paint.
TRÆLLEN FRA DORESTAD

En gruppe af frivillige hjælper med at male i Ansgar Kirke, og denne sommer stødte også Michael Horn til i et par uger. Som de andre formidlere på Ribe VikingeCenter, fik også Michael hurtigt sin rolle og plads i formidlingen af Vikingernes Ripa.
Således blev han trællen fra Dorestad, som blev bragt til Ripa af Erling Trællekræmmer. Michael havde angiveligt arbejdet på kirkebyggerier sydpå, og hans særlige evner kunne naturligvis bruges i Ansgar Kirke i Ripa, hvor han fik stukket en pensel i hånden.

De få farverester fra vikingetiden, som er fundet, er blevet analyseret af Nationalmuseet. Det drejer sig om Stavkirken ved Hørning, Ryttergraven ved Grimstrup, Skjoldet fra Trelleborg samt Kong Gorms høj ved Jelling, hvor der er fundet en træudskæring med malingrester. Det er disse farver og bindemidler, der benyttes til vægmalerierne i Ansgar Kirke på Ribe VikingeCenter. Hør billedkunstner Trine Theut fortælle mere her i videoen.

Mælkebøtten finder man næsten alle steder, og man lægger især mærke til dem, når de gule blomster lyser op. Mælkebøtteblade, -knopper og -blomster kan faktisk spises, men pluk af de planter, der står i skyggeområder. De er ikke så bitre. Gå efter friske, lysegrønne blade, og til disse nemme mælkebøttefritter skal I bruge friske blomster. Skyl dem rigtig godt, ryst vandet af og tør forsigtigt blomsterne i et viskestykke. Så er I klar til at lave fritter over bål!

The dandelion is yet another neglected plant which many - in Denmark anyway - consider to be a weed. But it is in fact quite delicious, and you can eat both leaves, buds and flowers. The dandelions that grow in shady spots taste better, and for this recipe you need fresh flowers. Give them a good rinse, shake off the water and carefully dry them in a tea towel. Now you're ready to make fritters!

Brændenælde er en alsidig urt, der med fordel kan bruges i køkkenet. Den kan erstatte spinat, bruges til pesto, smoothies, i pandekager eller som her i suppe. Brug nældens spæde skud, da de smager bedst, og udelad bacon, hvis du ønsker en vegetarisk suppe.

På Hvidinggården forbereder man sig til det store julegilde. The Yule Feast
On the Hvidinggård Farm everyone is busy with the preparations for the Yule celebration. The influential families in the area have been invited and for the Hvidinggård Farm it's very important to make a good impression in order to keep their position in society. So much depends on the Yule brew. The mistress had her yeast ring stolen just as she was about to start the beer brewing. She secretly borrowed the yeast ring from the Enderup Farm, but will her guests be able to taste the difference? Will the Hvidinggård Farm fall in their esteem? Or will somebody else?

Grød har i flere 1000 år været en grundsten i menneskets hverdagskost her i landet. Grøden, som ofte bare bestod af byg eller andre kornrester kogt i vand, var let at tilberede ved ildstedet.
I dag forbinder vi nok mest grød med det søde køkken, men historisk set er grøden ofte blevet tilsat kød, grøntsager, fisk og urter. Grød har derfor været et nærende hovedmåltid, der kunne spises både til morgen, middag og aften.
Denne ret får sin cremethed fra smør og ost, der tilsættes kort før servering. Man kan skifte grøntsagerne ud med andre eller hvad man lige har til rådighed, og man kan helt udelade bacon for en vegetarisk udgave.

Porridge has been part of our diet for thousands of years. It was easy to prepare by the fireplace and could be for instance barley cooked in water. Vegetables, herbs, fish or meat was typically added.
Butter and cheese adds a lovely creamyness to this dish. You can use whatever vegetables you prefer or have at hand, and if you leave out the bacon (and use a cheese suitable to vegetarians), you are left with an excellent vegetarian dish.
De faldne krigere i Valhal, einherjerne, får hver dag serveret nyslagtet, kogt svinekød fra galten Særimner. Og hver aften bliver grisen hel og levende igen, og den er altså et evigt festmåltid for Odins krigere.
Kombinationen af æbler, flæsk og løg går langt tilbage i den danske madhistorie og findes bl.a. i den første danske, trykte kogebog fra 1616. Om vikingerne spiste flæsk med æbler, ved vi ikke, men der er ingen tvivl om, at de havde begge dele til rådighed og i øvrigt var glade for svinekød. Ved mange udgravninger er gjort fund af netop knogler fra svin.

The fallen warriors staying in Valhalla, the einherjer, enjoy a feast every day. The boar Sæhrimnir is slaughtered and eaten every night. And right after, he comes back to life and so provides Odin's warriors with an infinite feast.
The combination of apple, pork and onion goes way back in Danish food history. A recipe for Æbleflæsk (Apple pork) can be found in the first Danish cookbook printed in 1616. We don't know if the Vikings had the combination, but apples, onions and pork were definitely all at hand. And the Vikings did love their pork. Pig bones have been found in many excavations.
Apple and pork is a traditional dish eaten at Yule in Denmark (but it actually tastes good all year round).
There never was a ring fortress near Ribe. However, during the years when King Harald Bluetooth built his ring fortresses in the North and East of Denmark, there was also a need for a rampart in Ribe. One of the archaeological sites is marked out in the asphalt in a carpark in Ribe.
First, a trench to mark the city boundaries was established during the Viking Age. It was about 1 m deep and wide. Later, in the middle of the 10th century a fortification was constructed just a stone's throw away from the trench. The moat was was 6-8 m wide and about 1 m deep. On the inner side stood a 6 m wide and 2 m tall rampart. The construction was in use until the beginning of the 11th century.

In Ribe VikingeCenter we have until now reconstructed five town houses and a pit house from around 825 AD. The traces of the houses were found in two different locations in present Ribe. From May till October when the Centre is open, we have Viking interpreters and reenactors living in the houses and creating a particular town atmosphere. Visit Viking Ripa and step inside the houses. Discover how they could have been furnished, where the residents lived, cooked and worked all that time ago.

Ribe By år 825
På Ribe VikingeCenter har vi indtil nu rekonstrueret fem byhuse og et grubehus fra omkring år 825, som arkæologerne har fundet spor af to forskellige steder i det nuværende Ribe. I Centrets åbningstid fra maj til oktober er flere af husene beboet og formidlerne levendegør bymiljøet. Så kig bare indenfor og se, hvordan husene er indrettet, hvor beboerne levede, lavede mad og arbejdede i vikingetidens Ripa.
In 1985, a Viking Age farm estate in the marshland near Ribe was discovered from a plane. The archaeologists subsequently unearthed the traces of a 600 sq.m. big yard with a main house, stables, barn, smithy, wells and workshop buildings just outside the village Gammel Hviding. The farm was located not far from the coast and would have had a view of the Wadden Sea and the ships going in to Ribe, the market town. The farm estate dates to the end of the 10th century when Harald Bluetooth was king of early Denmark.
In Ribe VikingeCenter we have reconstructed the farm estate and made an effort to create a living setting around the Longhouse (main building). It gives an impression of a working Viking farm with gardens, pigsty, horse pen, cattle and sheep. You can even meet the people on the farm, for instance the mistress.

Hvidinggården år 980
Ved en overflyvning af marsken ved Ribe i 1985 opdagede man spor efter en stormandsgård fra vikingetiden, som arkæologerne efterfølgende afdækkede. Spor af en godt 600 m2 stor indhegnet gårdsplads med hovedhus, stalde, lade, smedje, brønde og værkstedsbygninger dukkede frem ved Gl. Hviding. Gårdanlægget lå tæt ved kysten med udsigt til Vadehavet og skibstrafikken ind til handelsbyen Ribe. Anlægget blev dateret til omkring år 1000, altså dengang Harald Blåtand var konge af det unge Danmark.
På Ribe VikingeCenter har vi rekonstrueret gårdanlægget og bygget et levende miljø op omkring Langhuset (hovedhuset), så man kan få et indtryk at livet og aktiviterne på sådan en vikingegård. Man kan opleve stalden, laden og de øvrige værkstedsbygninger, gå en tur i kålhaven, urtehaven og på marken. Der er grisesti og gåsegård, kvæg, heste og får rundt omkring. Man kan få sig en snak med bonden og besøge husfruen i Langhuset, som styrer husholdningen.

The Apostle of the North, bishop and missionary Ansgar, was given the permission to build a church in Ribe in the middle of the 9th century, but where exactly? In 2008, the archaeologists had the opportunity to dig in the area around the present medieval cathedral in Ribe and actually found several Viking Age graves. It indicates that the church built by Ansgar most like stood on the site of the present cathedral.
It's difficult to visualize Ansgar's church when standing in the town centre of Ribe as the area has changed a lot since the 9th centure. However, in Ribe VikingeCenter you can actually visit a qualified reconstruction of the first church in Denmark and experience how the interior of the church might have looked like.

Ansgar Kirke år 860
Nordens Apostel, biskop og missionær Ansgar, fik i midten af 800-tallet tilladelse til at bygge en kirke i Ribe, men hvor helt præcis? For arkæologerne opstod der i 2008 en mulighed for at grave i området omkring den nuværende domkirke i Ribe, som er fra middelalderen. Til deres overraskelse fandt de her adskillige grave fra vikingetiden, og det indikerer, at Ansgars kirke sandsynligvis stod, hvor den nuværende domkirke ligger.
Når man står inde i Ribe centrum kan det være svært at forestille sig Ansgars kirke, da området har ændret sig rigtig meget siden det 9. århundrede. Men på Ribe VikingeCenter er det muligt at se et kvalificeret bud på den første kirke i Danmark. Man kan besøge Ansgar Kirke og opleve kirkerummet, som det meget vel kunne have taget sig ud.

Ribe, Denmark's oldest town was founded around 700 AD on the northern side of the Ribe River where the street St Nicolaj Gade is located today. That's where archaeologists have excavated house floors, layers of waste, lost things and other evidence of the people of that time, crafts and trade goods.
The Vikings' original marketplace may be gone today, and yet you can explore the reconstructed market with plank road, workshops and stalls in Ribe VikingeCenter. During our opening season a number of reenactors join us to bring history to life. Why don't you visit, too?

Markedspladsen år 710-750
Ribe, Danmarks ældste by, opstod o. år 700 e.Kr. på nordsiden af Ribe Å, hvor Sct. Nicolaj Gade i dag ligger. Dér har arkæologerne udgravet husgulve, affald, tabte ting og andre vidnesbyrd om tidens mennesker, håndværk og handelsvarer.
Vikingernes markedsplads findes ikke længere, og dog... I kan gå på opdagelse på den rekonstruerede markedsplads og opleve plankevej, værksteder og boder på Ribe VikingeCenter. I løbet af vores åbningssæson får vi besøg af reenactors (vikinger), som hjælper med at gøre historien levende. Kom og oplev vikingernes første by!
Saml familien eller vennerne omkring bålmad. Brug sæsonens råvarer, find urter og bær i naturen og skab et lækkert måltid. At lave mad og spise sammen i det fri er en stund med plads til opdagelser, samtaler og nærvær. Det er simpelt og hyggeligt. Simpelthen hyggeligt.

I Ansgar Kirke år 860 hænger en helt særlig kirkeklokke, som blev til og kom til Ribe alene pga. en uvurderlig indsats fra en stor gruppe frivillige ildsjæle med tilknytning til Ribe VikingeCenter. Fortællingen om klokken er en hyldest til deres engagement, venskab, eventyrlyst og kærlighed til historien.
Ansgar Kirke blev bygget i 2016-2017 og indviet i maj 2018. Kirken står på Ribe VikingeCenter, hvor den kan besøges. Den indgår i formidlingen af vikingetidens Ribe, hvor biskop Ansgar i midten af 800-tallet fik kongens tilladelse til at opføre en kirke. Ved Ribe Domkirke, som står i centrum af byen Ribe i dag, har arkæologerne udgravet Danmarks ældste kristne grave, hvilket understøtter, at der godt 100 år før, at Harald Blåtand rejste Jellingestenen, var en kristen menighed i og omkring Ribe.

THE JOURNEY OF THE CHURCH BELL
In the Ansgar Church 860 AD in Ribe VikingeCenter is a very special church bell. Only because of a huge effort from a large group of volunteers with affiliation to the centre, could this particular bell be made and brought to Ribe. The story of the bell is a tribute to their dedication, friendship, love of adventure and of history.
The Ansgar Church was built in 2016-2017 and consecrated in May 2018. It is part of Ribe VikingeCenter and the historical interpretation of Viking Ribe. In the middle of the 9th century, the king gave bishop Ansgar the permission to build the first church in Ribe.

Foråret er en særlig hård tid ved folk og fæ på Hvidinggården år 980. Fadeburet er tomt, maverne knurrer og der er lang tid til næste høst. Især Morfar er meget svag, og mens Alva forbereder en ganske særlig suppe, gør Harald en stor opdagelse i laden.

På Ribe VikingeCenter eksperimenteres bl.a. med udvinding af salt.
Det har været et langsommeligt arbejde at lave salt i vikingetiden, og udbyttet af en dags arbejde har ikke været stort. Men der har været et behov for salt til at krydre maden med, og også til konservering af fisk og kød, som skulle holde sig i flere måneder.
I vikingetiden blev f.eks. salt fra Atlanterhavet bragt hertil af købmænd, og det var en eftertragtet - og kostbar - vare. Vikingerne nær Vadehavet kunne udvinde salt af havvand, tang eller tørv, og derudover anvendte de områdets saltholdige planter, f.eks. kveller (salturt) i madlavningen.
Salt af havvand - hvidt salt
Vi lod 1 liter havvand fra Vadehavet inddampe i en gryde (her: fedtstensgryde). Det stod og passede sig selv: Vandet skal simre, og ikke bulderkoge. Processen tog omkring 1 time og gav os ca. 1 spsk krystalliseret salt, som kunne skrabes af grydens bund.
Salt af tang - sort salt
Vi ristede et bundt tang (først skyllet og tørret) på en jernpande, indtil tangen forkullede og faldt sammen. Dernæst stødte vi tangen til pulver/aske, før den (ca. 2 håndfulde) blev overhældt med 1 liter havvand og inddampet i en gryde. Denne proces resulterede i 3 spsk sort salt. Til gengæld er det sorte salt mildere i smagen.
Forsøgene er i og for sig nemme at komme i gang med. Processen er interessant, og man får øjnene op for det kæmpe arbejde, der lå og ligger i saltfremstillingen.
Eksperimentet er en del af projektet "Vadehavet - Vikingernes hjem og spisekammer", som støttes af Kulturregion Vadehavet.

EXPERIMENTING WITH SALT EXTRACTION
In Ribe VikingeCenter we have been experimenting with salt extraction from seawater and from seaweed.
Salt from seawater - white salt
We let 1 litre seawater simmer and evaporate in a soapstone pot. It took about 1 hour and left us with about 1 tablespoon crystallized salt to be scraped off of the bottom of the pot.
Salt from seaweed - black salt
We rinsed and dried some seaweed before burning it on a pan. The burnt seaweed was then pounded to ashes. We poured 1 litre of seawater onto about 2 handfuls of ashes and let it simmer and evaporate in a pot. It resulted in 3 tablespoons black salt with a mild salty taste to it.

Smoke and Salt
It's autumn on the Hviding farm located on the Wadden Sea coast in 980 AD. The people on the farm are busy stocking up food to last all winter. But the harvest was poorer than expected...

Før støbejernskomfuret indtog var fedtkogte kager stort set eneste mulighed for lidt sødt. Vi kender i dag stadig klejner, pebernøder og fedtebrød, som enten blev kogt i fedt eller bagt ved det åbne ildsted. 'Smolt' er et gammelt dansk ord for 'smeltet fedt'. Smolt-kagen er et godt bud på, hvordan julens kager smagte før komfuret, men der er sandelig også mulighed for at justere med moderne krydderier som vanille og citronskal, og man kan vælge at drysse dem med flormelis.

Before the introduction of the cast iron range, deep fried cakes or small cakes baked by the open fire were pretty much the only chance of something sweet. 'Smolt' is an old Danish word for 'meltet fat', and these 'smolt'-cakes give you an idea of how the Yule cakes tasted in the days before the cast iron range. Know that you can give them a more contemporary twist by adding a few modern spices like vanilla or lemon zest and even serve them with icing sugar.
Æbleskiver har i mange hundrede år været en del af det danske køkken, men det er først i 1800-tallet, at de runde lækkerbiskner fik tilknytning til julen, og det var ikke usædvanligt, at tjenestefolkene på gårdene fik deres julegave i form af æbleskiver og pebernødder. I middelalderen dyppede man skiver af æble i dej og stegte dem i smør eller fedt på panden. Det var såkaldte flydende æbleskiver. I kogebogslitteraturen kan man følge æbleskivens udvikling: Den flydende æbleskive bliver til en lille kuglerund pandebagt kage med lidt æblekompot eller et stykke æble i midten, og nu er æblet helt forsvundet i de æbleskiver, vi nyder i dag. An 'Aebleskive' (apple slice) is a pan baked spherical puffy cake that the Danes have (a lot) at Yule. It all began with the apple fritter rings, which we have known in DK since the Middle Ages. It's slices of apple dipped in batter and pan fried in butter or lard. The apple fritter developed into a ball-shaped cake baked in a special pan. At first, there was some apple sauce or a piece of apple inside the cake. Today, there is usually no trace of apple. We just have the cake and yet we still call it an 'Aebleskive'. In the 1800s the spherical Aebleskive was regarded a delicacy and became associated with Yule. Aebleskiver and biscuits made a typical Yule present given to the farm servants. Når man tilbereder skinken i rødvin, tager kødet en flot rød farve. Server f.eks. skinken med rodfrugter og hjemmerørt sennep.

In Danish 'Øllebrød'. Beer 'n bread. A traditional Danish porridge made from stale rye bread. Because in DK we do love our rye bread and back in the days you would make use of every last crumb. There is room for experimenting, too, so get on with it and create your own favourite version.
Hvis du har en rest grød, kan du f.eks. bruge den til lækre klatkager. Du kan bruge byggrød, havregrød, 'moderne' risengrød osv. Eksperimentér med grødblandingen til dine klatkager og tilsæt de bær og krydderier, som du kan lide. If you have some leftover porridge, you can always make delicious porridge pancakes. You can use any type of porridge, and you can add whatever berries and spices you like to the porridge mixture. Try some cinnamon, dried cranberries, or in the modern kitchen you might want to try raisins or orange. Serve the porridge pancakes with fresh berries, jam, honey or syrup for brunch or as a dessert.
Denne varme sød-syrlig-krydrede drik er perfekt på en kold decemberdag eller som et alternativ til julens traditionelle gløgg. Den er lavet på mjød og varme krydderier. Vi ved med sikkerhed, at vikingerne drak mjød, dog ikke hver dag. Honningvin var et luksusprodukt forbeholdt fester og højtider. Brugen af de varme krydderier som ingefær, kanel, allehånde og nelliker blev udbredt i middelalderens Danmark, hvor de indgik i både mad og medicin. Det er herfra, vi også kender skikken med at drikke opvarmet og krydret vin eller spiritus, som sidenhen har udviklet sig til det, vi i dag kender som gløgg. Så i denne opskrift har vi kombineret vikingernes søde mjød med middelalderens eksotiske krydderier.

This hot drink is excellent on a cold december day and a great alternative to the Danish traditional Yuletide drink 'Gløgg', a kind of mulled wine. It's made with mead and warm spices. We know for a fact that the Vikings enjoyed mead, just not every day. Honey wine was a luxury drink reserved for special occasions. Exotic spices like ginger, cinnamon, allspice and cloves became common in DK during the Middle Ages and were incorporated in both foods and medicine. That was the beginning of hot and spiced wine or spirits. So try this recipe which combines Viking sweet mead and medieval spices.
