In this video, I walk you through how I make heads, hearts, and tails cuts for my _baseline_ rum based entirely on taste. There’s no one-size-fits-all rule for where to cut. I show you real-time taste testing from a recent baseline rum distillation and explain what I’m looking for, what flavors I associate with heads and tails, and how I decide what makes it into the final rum.
*My baseline rum recipe:*
- 20 vol.% baking grade molasses
- 80 vol.% warm water (I use LA tap water)
- Red Star Distiller's Yeast
- Fermax yeast nutrients
Starting SG ~ 1.090
Wash strength ~ 10% abv
Double pot distilled
- Low wines strength ~ 35% abv
- Spirit strength ~ 75% abv

- 25 gal baking grade molasses
- 41 gal dunder
- 59 gal water
- 1.25 cups distiller's yeast
- 1.3 cups yeast nutrient after 2 days
starting specific gravity: 1.092
starting temp: 81 degF
total duration: 18-20 days
wash strength: 10.2% abv
_distillation:_
1st distillation: 125 gal wash
- low wines: 37 gal at 38% abv
2nd distillation: 37 gal of low wines + 8 gal of late tails + 5 gal of dunder = 50 gal at 30% abv
- high wines: 25 gal at 64% abv
3rd distillation: 25 gal of high wines + 6 gal of early tails + 19 gal of dunder = 50 gal at 40% abv
- spirit: 18 gal at 75.8% abv
