Dr. Volek is a registered dietitian and professor in the Department of Human Sciences at The Ohio State University. His scholarly work includes more than 350 peer-reviewed scientific manuscripts and five books. Dr. Nick Norwitz is a researcher-educator whose mantra is “Stay Curious” and whose mission is to “Make Metabolic Health Mainstream.” He graduated Valedictorian from Dartmouth College in 2018, majoring in Cell Biology and Biochemistry. He then completed his PhD in Metabolism at the University of Oxford in 2021, before attending Harvard Medical School to complete his MD. About Dr. Kelly
Deanna L. Kelly, Pharm.D., BCPP, is a Professor of Psychiatry at the University of Maryland Baltimore School of Medicine and an Affiliate Professor in the School of Pharmacy. She directs the Treatment Research Program at the Maryland Psychiatric Research Center (MPRC) and has been Acting Director since January 2022. Dr. Kelly completed her pharmacy education at Duquesne University and residency at the University of Maryland, becoming board certified in 1998. An expert in schizophrenia and psychopharmacology, she has published over 235 peer-reviewed articles, coauthored 19 books and chapters, and received the Maltz Prize for her work on gluten and mental health. In 2024, she was named the G. Van Greene Distinguished Lecturer at Mercer University. Her expertise is recognized internationally, and she was named one of the top 100 women in Maryland in 2023.

She has completed a PhD in cancer biology at Moffitt Cancer Center, where she studied the role of oxidative stress in lung cancer initiation and progression. She's beginning a postdoctoral research scholar position at the University of South Florida, where she will continue to study novel ways to target cancer metabolism.

Dave Feldman is a software engineer who became deeply interested in lipidology after seeing his cholesterol spike on a low-carb, high-fat diet. He has since performed self-experiments and published several papers on the possible mechanisms behind LMHR. He is currently conducting a clinical study out of UCLA through his newly formed public charity, the Citizen Science Foundation.
Nicholas Norwitz completed his PhD at the University of Oxford and his thesis focused on ketone metabolism and neurodegenerative diseases. He is currently a medical student at Harvard Medical School.

The first paper examines how allulose consumption influences metabolic factors like appetite, blood sugar, and insulin sensitivity through the release of key gut hormones and effects on carbohydrate digestion and metabolism. Read the paper here: pubmed.ncbi.nlm.nih.gov/29317623
The second paper reviews multiple lines of evidence linking fructose metabolism to driving cancer progression. High fructose intake may directly supply tumors with fuel and biomolecular building blocks to grow while also creating an obesity and diabetic state that triggers cancer development. Dr. Cervenka is a board certified neurologist and professor of neurology at Johns Hopkins University School of Medicine.
