How To Make Authentic Filipino Pinakbet with Joel Binamira Market Manila

HOMEMADE TINAPA
Ingredients:
1 kg whole bangus, boneless
¼ cup calamansi juice
1 tsp salt
1 cup uncooked rice
6 pcs tea bags, removed from teabags (any flavor)
½ cup brown sugar
Cucumber Salad:
1 pc cucumber, cut in half then sliced
1 pc red onion, sliced
2 pc tomatoes, sliced
¼ cup vinegar
2 tbsp brown sugar
½ tsp salt
¼ tsp pepper.
Procedure:
1. Rub the fish with calamansi juice and salt. Let it marinate for 25-30 minutes.
2. Wrap the bangus in banana leaves and steam for 25 minutes or until fully-cooked.
3. At the bottom of your wok/steamer, layer aluminum foil and banana leaves. Add your rice, tea, and sugar. Turn on the heat to low.
4. Place a round grill/wire rack on top brushed with oil. Place the fish and smoke for 45 minutes or until the fish is golden and has a very smoky aroma.
5. Make the salad by mixing all the ingredients together.

BUDIN
Ingredients:
1 kg peeled cassava, finely grated
2 cups coconut milk
½ cup margarine, melted
½ cup grated cheese
2 pc eggs
½ cup sugar
1 cup condensed milk
½ cup evaporated milk
½ tsp vanilla extract
Procedure:
1. Preheat your oven to 350F and line an 8-inch pie pan/tin with margarine and parchment paper.
2. Mix all the ingredients together or alternatively, blend together chunks of cassava and coconut milk. Once smooth, mix in all the remaining ingredients. Once mixed in, pour into the prepared pan.
3. Bake for 45 minutes or until a toothpick inserted comes out moist but clean.

The art of harvesting Kaong is a perilous journey. Kaong farmers like Gilbert endure the steep hike into the forest in their search for the bulbous fruit, which he then laboriously cooks into the small, glass-like spheres that everybody loves. Not a lot of people know about the tree that bears the fruit that’s needed to make this sweet delicacy, which is now even harder to come by because of the heavy commercialization of the product. Join us as we learn about this precious fruit in the eyes of a Kaong farmer.

TORTANG TALONG W/ TOMATO SAUCE
Ingredients:
2 large eggplants
1 cup all-purpose flour
3 pcs eggs, beaten
1 cup panko breadcrumbs
1 cup tomato sauce
basil leaves
flaky salt
⅛ tsp pepper
fresh parmesan
Procedure:
1. Roast your eggplants and peel. Mash/ flatten then coat with eggs, flour, eggs, then breadcrumbs.
2. Shallow fry for 1.5 minutes on each side.
3. In a pan, bring tomato sauce to a simmer then add basil, salt, and pepper.
4. Serve eggplant on top of tomato sauce then add breaded parmesan.

MUNGGO TOFU
2 cups mung beans soaked overnight
1 onions
2 tbsp garlic
1 red bell pepper, sliced
1 green bell pepper, sliced
3 green chilies, sliced
1 tbsp liquid seasoning
½ cup japanese mayo
¼ cup calamansi Juice
1 tbsp soy sauce
2 tbsp oyster sauce
Instructions:
1. Blend your soaked mung beans along with twice the amount of water per cup of mung beans until smooth. Drain solids away and add into a pot.
2. Cook mixture over medium heat until it forms a thick viscous paste for about 10 mins. Place mixture in baking dish and let set in the refrigerator for 1 hr to firm up.
3. Once firm, slice into cubes and sear in hot pan until both sides are brown. To make this into “sizzling tofu” saute onions, garlic and chili until translucent.
4. Add in bell peppers and your mung bean tofu and cook for 2 mins. Add in your liquid seasoning, mayo, calamansi juice, soy sauce, oyster sauce and pepper. Toss to combine and serve on a sizzling plate.

GISING-GISING
Ingredients:
3 tbsp oil
3 cloves garlic, minced
1 pc small red onion, chopped
1 tbsp bagoong
1 bundle sitaw, chopped into ¼ inch pieces
½ cup chopped sigarilyas
3 pcs siling haba/green finger chilies, chopped
2 cups coconut milk
¼ tsp pepper
2 pcs siling labuyo
Procedure:
1. In a pan with hot oil, saute onions and garlic. Add bagoong and cook for a few seconds.
2. Pour in coconut milk and let it simmer for 15 minutes. Add sitaw, sigarilyas, and chilies. Season with pepper. Makes 6 servings.
OKRA DILIS
1 cup dried dilis
8 pcs okra, sliced
1 red onion, sliced
5 garlic cloves, sliced
2 tsp bagoong
3 tomatoes, sliced
1 tsp oyster sauce
pepper to taste
Procedure:
1. Deep fry dilis at 165C until crispy
2. Saute onions, garlic until translucent and add bagoong
3. Add in okra, tomatoes, fried dilis,oyster sauce and toss to combine. Season to taste with pepper and serve.

SHUMAI
¼ kg ground pork shoulder butt
1-½ tbsp light soy sauce
1 tbsp oyster sauce
2 tsp sugar
2-½ tbsp cornstarch
1 tbsp sesame oil
1 pc chicken cube, dissolved in 3 tbsp hot water
100g shrimp, peeled, deveined, and then minced finely
4 pcs shiitake mushrooms, minced finely
siomai wrappers
1 pc carrot, brunoise or small dice
Procedure:
1. Mix together pork, soy sauce, oyster, sugar, cornstarch, sesame oil, and chicken broth. Fold in the shrimp and shiitake until completely mixed.
2. Wrap 1-½ tbsp of filling per wrapper and top with carrots. Steam for 10-12 minutes. Makes 8-10 servings
HAR GOW
Wrapper:
135g wheat starch
½ tsp salt
175mL boiling water
30g cornstarch
1 tsp shortening/lard
Filling:
¼ kg prawn, peeled, deveined, and finely chopped
¼ cup bamboo shoots, canned or fresh (boiled in water for 20 minutes)
1 tsp grated ginger
1 tsp sugar
¼ tsp salt
1 tsp sesame oil
Procedure:
1. Make the wrapper by combining wheat starch and salt. Pour boiling water and stir to form a moist dough. Cover and rest for 5 minutes.
2. Knead in the cornstarch in two additions followed by the lard. Rest for 15 minutes.
3. Make the filling by combining everything using a food processor or manually until almost homogenous.
4. Fill each wrapper and seal into dumplings then steam for 6-8 minutes. Makes 4 servings.
KUTCHAY
¼ kg ground pork
1 bunch kutchay/garlic leaves
1 pc onion, finely minced
3 cloves garlic, minced
1 pc egg
1-½ tbsp light soy sauce
⅛ tsp pepper
¼ cup flour
24 pcs dumpling wrappers
Procedure:
1. In a bowl, combine all the filling ingredients. Mix in one direction until the meat starts to “thread”.
2. Place 1 tbsp filling in each wrapper and seal. Steam for 8-10 minutes. Makes 12 servings.

RECIPES:
EBI FRY
Makes 3-4 servings
Ingredients:
5-6 pcs tiger prawns, peeled, deveined, and prepped for tempura
½ tsp salt
¼ tsp pepper
1 cup all-purpose flour
3 pcs eggs, beaten
2 cups panko/Japanese bread crumbs
oil for frying
Tartare sauce:
2 pc hard boiled eggs
2 tbsp chopped onions
1 tbsp sweet pickle relish
½ tsp salt
¼ tsp pepper
1 tbsp lemon juice
¼ cup Japanese Mayo
Procedure:
1. Season each prawn with salt and pepper. Dredge in flour, egg, then coat with breadcrumbs. Fry for 2-3 minutes or until golden brown.
2. Make the tartare sauce by mixing all the ingredients together. Makes 3-4 servings.
EBI TEMPURA
Ingredients:
5-6 pcs tiger prawns, peeled, deveined, and prepped for tempura
Batter:
1 cup ice cold carbonated water
1 pc egg
1 cup flour
¼ tsp baking soda
Tempura Sauce Ingredients:
¼ cup kikkoman
¼ cup mirin
1 cup water
2 inch piece kombu
½ cup bonito flakes/1 tbsp dashi no moto
Procedure:
1. Mix together all the batter ingredients. Dredge each prawn in flour and dip in batter.
2. Fry for 2-3 minutes or until browned.
3. Make the sauce by bringing all the tempura sauce to a simmer. Serve together with the prawns. Makes 3-4 servings.
BANG BANG SHRIMP
Makes 3-4 servings
Ingredients:
½ cup fresh milk
½ tbsp vinegar
½ kg prawns, peeled, deveined with tail on
½ tsp salt
¼ tsp pepper
2 cups cornstarch
oil for frying
chopped spring onions
Bang bang sauce:
1 cup Japanese mayo
¼ cup sweet chili sauce
1 tbsp sriracha
Procedure:
1. In a bowl, combine milk, vinegar, and prawns. Let it marinate for at least 15 minutes.
2. Mix together salt, pepper, and cornstarch in a bowl. Coat each piece of prawn in the cornstarch mixture and fry in hot oil for 2-3 minutes or until fully cooked.
3. In another bowl, combine mayo, chili sauce, and sriracha. Toss in prawns until fully-coated. Top with spring onions. Makes 3-4 servings.

SINABAWANG TALBOS NG KAMOTE
Ingredients:
2 pcs tomatoes, sliced
1 pc native/red onions, sliced
100g or 2 pcs sweet potatoes/orange kamote, cut into 1 inch chunks
5 cups water
1 tbsp bagoong
2 tbsp calamansi juice
100g Ground chicken
1 tbsp all-purpose flour
1 bundle talbos ng kamote/sweet potato leaves
Procedure:
1. In a pot, add water, tomatoes, onions, and sweet potatoes. Bring to a boil and simmer for 2-3 minutes. 2. Season with bagoong and calamansi juice.
3. Mix chicken and flour to make dumplings. Portion into 1 inch chunks and place in simmering broth. Simmer for 2 minutes.
4. Turn off the heat and add talbos ng kamote.

SARCIADONG GALUNGGONG
Ingredients:
200g galunggong
2 tbsp oil
1 pc native Onions
2 cloves Garlic
2 pcs Tomatoes
1 tbsp tomato paste
¼ tsp salt
⅛ tsp pepper
¼ cup water
2 pcs egg
Procedure:
1. In a pan with hot oil, brown your fish on both sides and set aside.
2. In the same pan, saute onions, garlic, and tomatoes until tender. Add tomato paste and cook for a few seconds or until tomato paste has caramelized. Season with salt and pepper then add water.
3. Place galunggong and pour in your egg. Cook for 1 minute or until egg has set.

GINATAANG KALABASA AT BANGUS
Ingredients:
2 tbsp oil
1 pc red onion, chopped
1 tbsp vinegar
¼ cup water
100g kalabasa, peeled and cut into chunks
½ cup coconut milk
1/2 whole (200g) bangus, cut into steaks
2 tsp patis
2 tbsp chili oil (optional)
Procedure:
1. In a pan with hot oil, saute onions and kalabasa. Add vinegar, water, and coconut milk.
2. Add your bangus and let it simmer for 2-3 minutes or until fully-cooked and kalabasa is tender. Season with patis and serve with chili oil.
Makes 3 servings

LUMPIANG HUBAD
Ingredients:
2 tbsp oil
1 block tofu, compressed/drained of excess liquid then cut into half inch blocks
1 pc orange kamote
1 pc carrot
1 pc red onion
100g bean sprouts
¼ tsp salt
⅛ tsp pepper
1 tbsp brown sugar
1 tbsp cornstarch, dissolved in ¼ cup water
2 tsp soy sauce
1 tbsp peanut butter
Procedure:
1. In a pan with hot oil, brown your tofu and set aside.
2. In the same pan, saute kamote, carrots, and onions. 3. Add bean sprouts then season with salt and pepper.
4. In a separate pan, combine sugar, cornstarch slurry, and soy sauce. SImmer until thickened then add peanut butter. Pour sauce into veggie mix and toss until veggies are well coated.
Makes 6 servings

BIBINGKA PANCAKES
1 cup rice flour
1 cup all purpose flour
4 tablespoons sugar
1 tablespoon baking powder
1/4 teaspoon salt
2 medium eggs
2 tablespoons oil (or butter)
2 cups coconut milk
1/2 teaspoon vanilla extract
½ cup of butter
salted egg (sliced)
1 can condensed milk
1 cup freshly grated coconut
1/2 block of processed cheddar cheese
Procedure:
1. In a large bowl, whisk in the eggs. Add in all the other pancake ingredients and mix well.
2. Melt a tablespoon of butter in a nonstick pan and pour in ¼ cup of pancake batter. You may adjust the amount to your preference.
3. Top the pancakes with slices of salted egg. Once the top is bubbly, flip the pancakes to cook the other side.
4. Top the pancakes with more butter, condensed milk, freshly grated coconut, and cheddar cheese.
It’s been written in books and newspapers but seeing the process from start to finish is a beautiful method that deserves more recognition. Biting into this small and umami-filled piece of history feels like a delightful peek into the colorful story of the family behind the artform.

GINATAANG BILO-BILO
Ingredients:
1 cup glutinous rice flour
½ cup water
3 cups coconut milk
½ cup sugar
1 tsp vanilla extract
1 cup coconut cream
2 pc orange kamote
2 pc saba, sliced
1 cup cooked sago
¼ cup ripe langka
Procedure:
1. Combine glutinous rice flour and water and mix until you get a smooth dough. Divide and shape into 1-inch balls and set aside.
2. In a pot, bring coconut milk, sugar, vanilla, and coconut cream to a boil. Add rice balls and simmer for a minute. Add kamote, saba, and langka. Simmer for 2 minutes. Mix in cooked sago. Makes 8 servings.
It’s the perfect sweet and salty snack that reminds of you Filipino Christmas traditions like simbang gabi. With all the Christmas madness around us, a quick recipe for a crowd favorite is what we all need for a stress-free holiday break. 😮💨
SHORTCUT PUTO BUMBONG
Ingredients:
2 cups glutinous rice flour
water
1 tbsp. ube extract
1 cup margarine
2 cups fresh grated coconut
1 can condensed milk
½ cup muscovado sugar
1/2 block of processed cheddar cheese
Procedure:
1. Cut 4 x 2 inch pieces of of aluminum foil and brush each with margarine.
2. In a bowl, mix together glutinous rice flour, ube extract, and water. Combine thoroughly until it becomes a dough. Grate the dough.
3. Gather around 2-3 tablespoons of the grated dough and gently shape into logs along the pieces of aluminum foil.
4. Steam the shaped dough for 15-20 minutes over medium heat. Pro-tip: Place a cheesecloth under your steamer lid so the water doesn’t drip on the dough.
5. Once cooked, carefully peel off the aluminum foil and top the puto bumbong with more margarine, fresh grated coconut, condensed milk, muscovado sugar, and processed cheese.
Cakes are a symbol of celebration for many households because they’re usually served during birthdays and special occasions. Nowadays, serving cake is still considered a luxury, but it is now more common to have them during simpler events that call for small celebrations. Now, let’s eat some cake!

PORK BURNT ENDS
Ingredients:
½ kg pork belly, skin removed then cut into chunks
Dry Rub:
3 tbsp smoked paprika
½ tbsp cayenne
1 tbsp garlic powder
½ tbsp ginger powder
1 tbsp onion powder
½ cup brown sugar
2 tbsp Maggi Magic Sarap
3 tbsp honey
3 tbsp maple syrup
¼ cup butter
1 tbsp chopped flat leaf parsley
Procedure:
1. Combine all dry rub ingredients and toss pork into the bowl to coat.
2. Roast in a preheated oven at 125 C for 2-3 hours.
3. Coat pork with honey, maple syrup, and butter then place back in the oven for 10 minutes.
4. Garnish with chopped parsley. Makes 3-4 servings.
LECHON KAWALI
Ingredients:
1 kg pork belly, whole and deboned
1 pc ginger, sliced
1 head garlic
1 tbsp whole black peppercorns
2 pcs bay leaves
2 tbsp soy sauce
3 tbsp Maggi Magic Sarap
oil for deep-frying
Dip:
1 tbsp brown sugar
½ cup vinegar
2 tbsp soy sauce
2-3 pcs birds eye chillies, chopped
2 tbsp chopped spring onions
¼ tsp pepper
1 clove garlic, minced
Procedure:
1. In a pot with boiling water, add your ginger, garlic, peppercorns, soy sauce, magic sarap, and pork belly. Simmer for 1 hour then cool down.
2. Pat skin dry and poke the skin with holes and cover with salt for 1 hour. Scrape off salt and excess moisture. Place in the fridge to dry for a few hours.
3. Fry in hot oil (175 C) or roast for 1 hour at 125 C for a dryer pork before frying.
4. Make the dipping sauce by combining the ingredients. Makes 3-4 servings.
BRAISED PORK BELLY
Ingredients:
1 kg pork belly, cut into 1-½ inch chunks
¼ cup rock salt
¼ cup soy sauce
¼ cup water
enough water to cover the pork
2 tbsp Maggi Magic Sarap
3 tbsp dark soy sauce
2 tbsp black vinegar
3 tbsp shaoxing wine
3 tbsp mirin
1-½ tbsp soy sauce
Procedure:
1. In a wok, combine rock sugar, soy sauce, and water. Cook until sugar has melted then add the pork to coat.
2. Add water, magic sarap, dark soy sauce, black vinegar, shaoxing wine, mirin, and soy sauce.
3. Bring to a boil and simmer for at least three hours. Top with chopped spring onions. Makes 6 servings.

RECIPES:
MAJA BLANCA ICE CREAM W/ Cheese
Ingredients:
1 cup coconut milk
2 cups heavy cream
½ cup coarsely blended corn
½ cup sugar
⅛ tsp salt
6 egg yolks
½ cup shredded cheddar
Procedure:
1. In a pot, combine coconut milk, cream, and corn. Mix in the sugar and salt then simmer
until sugar dissolves.
2. In another bowl, whisk the egg yolks and slowly pour in ⅓ of the milk mixture while
whisking. Add into the pot and place the pot back on the stove over medium-low heat.
Cook until it thickens enough to coat the back of a spoon or it reads at 170 C.
3. Strain and cool to room-temp or whisk on a bowl over an ice-water bath. Churn
according to machine directions. Fold in the cheese and store in the freezer. Makes 3-4 servings.
TABLEA ICE CREAM W/ CACAO NIBS
Ingredients:
1 cup fresh milk
2 cups heavy cream
¼ cup cocoa powder
4 pcs tablea
½ cup sugar
⅛ tsp salt
6 egg yolks
Chocolate fudge:
2 cups Dark chocolate chips/coins
1 cup condensed milk
¼ cup cacao nibs
Procedure:
1. Make the fudge by heating your condensed milk and pouring it into the cuocolate. Let it
stand for a minute then mix until smooth and uniform in color. Set aside to cool
completely.
2. In a pot, combine fresh milk, cream, and cream. Mix in the tablea, sugar, and salt then
simmer until sugar dissolves and tablea has melted.
3. In another bowl, whisk the egg yolks and slowly pour in ⅓ of the milk mixture while
whisking. Add into the pot and place the pot back on the stove over medium-low heat.
Cook until it thickens enough to coat the back of a spoon or it reads at 170 C.
4. Strain and cool to room-temp or whisk on a bowl over an ice-water bath. Churn
according to machine directions. Fold in the chocolate fudge and cacao nibs. Makes 3-4 servings.
MANGO STICKY RICE ICE CREAM
Ingredients:
1 cup coconut milk
2 cups heavy cream
½ cup sugar
⅛ tsp salt
6 egg yolks
Mango jam:
1 cup ripe mangoes, cut into chunks
¼ cup water
½ cup sugar
Sticky Rice:
1 cup glutinous rice, soaked in water for at least 1 hour
1/4 cup water
1 cup coconut milk
2 tbsp sugar
Procedure:
1. Make the jam by simmering mangoes, water, and sugar in a pot over low heat for 10
minutes. You may blend for a smoother jam or just set aside to cool.
2. Combine rice, water, coconut milk, and sugar in a rice cooker and cook. Set aside to cool
down then divide into bite-sized chunks.
3. In a pot, combine coconut milk and cream. Mix in the sugar and salt then simmer until
sugar dissolves.
4. In another bowl, whisk the egg yolks and slowly pour in ⅓ of the milk mixture while
whisking. Add into the pot and place the pot back on the stove over medium-low heat.

OKRA SOUP
Ingredients:
½ kg ox tripe
1 -2 kg beef cubes (any slow cooking cut)
1 onions, finely chopped
beef stock (enough to cover meat)
fish stock (labahita)
smoked fish (tinapa galunggong)
1 habanero pepper
1 red bell pepper
500g okra (half processed, half chopped)
kale (substitute for ugu leaves)
1 cup red palm oil
4 tbsp crayfish powder
ogiri okpei (fermented locust beans)
Procedure:
1. Boil beef, ox tripe, onions, fish stock, and beef stock for about 2 hrs or until tender.
2. While the beef is simmering, blend about 15-20 pcs of okra in a food processor along with a bit of water to achieve a slimy mixture that will thicken the soup. Add red bell pepper and habanero pepper into food processor to make a coarse paste.
3. In a deep pot, heat up your red palm oil. Add in your ogiri okpei (locust beans) and crayfish powder cook down for about 30 secs.
4. Add in your blended peppers and cook down for about 1 min.
5. Add back in your cooked meats along with your smoked fish. Let cook for about 10-20 mins
6. Add in your processed okra and mix well until soup becomes nice and thick.
7. Serve your preferred choice of swallow (we used amala made from unripe plantain). Serve and enjoy!
