You probably think it’s an egg yolk and a glazed pork belly Yakitori. Well… it’s not. It’s actually just vegetables.
This dish was inspired by 2021 S.Pellegrino Young Chefs competition, where the winner presented a totally vegetable focused dish.
It’s about time, right?
In this video I'm cooking vegetables on open fire with a burning / charring technique, native to many cuisines. I also prepare a special carob glaze and a plant-based egg-shaped sauce mix, which I'm sure you already know how it's done.

First of all, I'm using a different infusion technique here. We're not going to heat the oil in this case, to keep its cold-pressed qualities.
Second, we are not really infusing it with any external flavours. Our goal is the colour in this case.
And third, we are using just 1 ingredient here: olives!

The recipe you've all been waiting for is here! 🤓During the past couple of months your social media had been probably flooded with various different Pomme Soufflé pics and videos. No wonder Chefs rediscovered & fell in love again with these puffy potato pillows, since they provide such a wonderful base for numerous types of amuse bouche.
After watching this video, you'll learn 3 most common ways of making Pomme Soufflé, a.k.a. puffed potato fries. But only that✌ If you watch until the end, you'll also learn if there's any practical difference between these 3 culinary methods, and whether any one gives the best results.
Ingredients:
- Swiss Chard leaves (fresh)
- 1L Water
- 200g Sugar
- 1L Frying oil
Directions:
1) Bring water to boil and dissolve sugar in. Lower the heat to simmer.
2) Blanch Swiss Chard leaves for 2 min.
3) Pat dry with a paper towel.
4) Dehydrate at 60C / 140F for 1 h.
5) Deep-fry the dehydrated leaves in oil, heated to 220C / 430F.
6) Let the excess oil drain off on a paper towel.
7) Enjoy this amazing crispy garnish!

Ingredients:
- 500g Greek yogurt
- 2 Cucumbers (grated; flash only; no juice)
- 2 cloves Garlic (rasped)
- 1 Lemon (rasped; 1/2 juice)
Directions:
1) Mix all the ingredients together to make a non-salted and non-oily Tzatziki (you can add salt and oil later to the application of your choice).
2) Spread the mix on a silicon baking mat.
3) Dehydrate for around 10 hours at 55C / 130F, until fully dry.
4) Break the sheets of dehydrated Tzatziki and process to powder in a food processor or a spice grinder.
5) Store in the fridge in the airtight container.
So, you’ve probably already know about the cured eggs and a whole lot of favour they bring to the dish. But, do you know about Cured Ruby Eggs?🤓
Cured egg yolks is something very popular. You can shave / grate them and serve with anything: pasta, salads, main dishes... anything! They would add a rich umami flavour to absolutely any dish!
So, as I was discovering the process of curing for myself, I tried of course, Gravlax... and interestingly enough, the process of curing fish and egg yolks turned out to be pretty identical... and, that gave me some ideas for creating extraordinary curing mixtures.

I've shown you previously a few ways of making flavoured butter, and this one is by far, the easiest, and as a matter of fact, the fastest method🤓 In this video, we're making compound herbal, garlicy butter, using fresh parsley and confit garlic (for a milder taste). And, the final note here: although, I've shown you here the basic infusion method using a pot, I would recommend you to use a Sous Vide (if you have one) for the cream-infusion part (4h at 195F/90C), it will give you a more deeply infused flavour profile. And, if you're having a hard time with extracting the buttermilk out of your cream, add a little salt😉
