What this is:
As always, the reason I do this is as an exercise to try to provoke myself to respond creatively; to nurture or develop transferrable skills of creativity and adaptability; to think more about what it means to 'try'; to embed a habit of thinking about and focusing upon solutions, not problems and also to experience personal failure in a safe setting. This type of exercise - in this, and in other contexts - has served me very well in life. Those skills, such as they are, have always been the driving force of what I do, on this channel, and everywhere else.
What this is NOT:
This is NOT a tutorial for cooking or budgeting. No guarantee is made that anyone else will be able to replicate any part of this video (supposing you even wanted to).
This is NOT an attempt to 'play at being poor', although it always does make me appreciate things that I normally take for granted.
This is NOT an attempt to 'prove that people on benefits or low income could get by with less' - if anything, it proves the complete opposite - because this was a difficult thing to do - that's why it's called a 'challenge'.
This is NOT a diet - it would not be a good idea to cook or eat exactly this food every day - or budget like this every day.

Ingredients used in this recipe (precision is not important - add more or less or other things if you want):
1kg of bone-in chicken thighs (~800g of meat after deboning)
6 Cumberland sausages
1 bunch spring onions (about 8 to 10 stalks)
1 medium carrot
2 sticks celery
6 medium mushrooms
pinch of salt (omit this if you are using a stock cube later)
2 tablespoons plain flour
About 2 tablespoons of chopped fresh herbs - garlic, rosemary, thyme, sage (or use dried)
500ml chicken stock (if you use a stock cube to make this, omit the salt further up)
Small pinch of dried tarragon
200g Crème fraîche (you could use soured cream or yoghurt, but these are more likely to 'split')

About the plants you see in this video; these are a mixture of native wild flowers and some of the cultivated forms of other native wild flowers; chiefly:
Hedge Woundwort - Stachys sylvatica - the plant with spires of dark magenta flowers
Foxglove - Digitalis purpurea - the tall plant with clusters of tubular flowers that the bees must crawl inside - we have various different shades of flowers but they are all the same species
Toadflax - Linaria purpurea - the plant with densely-packed spires of pale pink 'snapdragon' flowers. The wild form of this plant is a beautiful deep purple colour, but we have the pink cultivar
Cranesbill - Geranium sp - the bushy plant with purple, saucer-shaped flowers.
Mountain Bluet - Centaurea montana - the low-growing plant with blue and magenta thistle-like flowers

It was very lovely to spend a few moments just standing, looking at the beautiful spring flowers, however I am conscious that many people are not so lucky to have access to this sort of thing, and might be craving connection with nature and the outside world.
