I wanted to go fishing with you, and then cook our catch, but sleet, cold, wind, muddy water, and darkness sabotaged my plans. I couldn’t catch a fish. So, let’s make honey-garlic chicken wings. Don’t worry, they’re low carb! Click on SHOW MORE for the recipes.

PHONY FRIED RICE

INGREDIENTS:Olive oil (just enough to barely cover the bottom of skillet)
8 oz. chopped (small) onion
24 ounces of riced cauliflower, fresh or frozen
4 oz. frozen peas
4 oz of chopped ham6 slices precooked bacon, crumbled2 cloves garlic, minced⅓ cup soy sauce1 tsp sesame oil2 eggs, beaten4 green onions, choppedBlack Pepper to tasteHeat the oil in a large non-non-stick skillet and sauté the onions for about 5 minutes on medium heat.
Add Cauliflower, peas, ham, bacon, garlic and cook until the cauliflower begins to stick (internal water is evaporated) and getting browned.
Add soy sauce and sesame oil, heat for 2 minutes
Drag cauliflower to half of the pan
Cook beaten egg until scrambled, and mix with Cauliflower mixture.Add green onion, and Pepper to taste
Cook 4-5 more minutes

HONEY GARLIC WINGS

INGREDIENTS
3 LBS Chicken wings
¼ cup flour, low-carb flour, or almond flour
¾ teaspoon salt
½ teaspoon pepper to taste
1 tablespoon olive oil

SAUCE
½ cup honey substitute (I used Nature’s Hollow)
4 tablespoons soy sauce
4 large garlic cloves crushed (2 heaping teas. of jarred crushed garlic)
1 tablespoon finely diced ginger
½ teaspoon chili flakes
⅓ cup water

INSTRUCTIONS
Preheat oven to 400°F (205°C). Rinse wings under cold water, drain and dab with paper towels until completely dry. Remove the wing tips, split the wings at the joints.

Toss the split wings (wingettes) with flour, salt and pepper. Remove any excess flour and toss with olive oil. Place on a pan lined with parchment or non-stick foil and bake 40 minutes turning at 20 minutes.

Meanwhile, combine sauce ingredients in a small pan. Bring to a boil, reduce heat and simmer about 5 minutes or until reduced by half.

Take wings from oven, toss with sauce and return to the oven for 5 minutes more.

Serve hot.
