Ingredients:
- 1-pound large shrimp, peeled, deveined, and tails removed
- 2 tablespoons extra-virgin olive oil
- ½ medium white onion, sliced thin
- 1 medium chile poblano, stemmed, seeded, and sliced thin into strips
- 1 medium celery stalk, sliced thin crosswise on the diagonal
- 1 medium chile serrano, stemmed and sliced thin into rings
- 2 garlic cloves, grated
- 1 medium Roma tomato, cored and chopped
- 3 tablespoons unsalted butter
- 1 teaspoon dried oregano, preferably Mexican
- ½ teaspoon crushed or ground coriander seeds
- 8 tortillas de harina
- 6 ounces queso asadero, quesillo, or Monterey Jack cheese, grated
- 1 teaspoon Morton kosher salt, plus more to taste
- Lime wedges and salsa, for serving
Method:
Prepare a grill for high heat and thoroughly clean grates. Arrange the shrimp on metal skewers (or wooden skewers that have been soaked in water for at least 1 hour). Brush the shrimp with the oil and season with ½ teaspoon salt on both sides. Grill shrimp, turning once, until just starting to turn opaque and slightly charred, about 1 minute per side. Transfer to a platter and set aside to cool. When cool enough to handle, remove from skewers.
Heat a large cast iron skillet over medium heat and melt the butter. Cook the onion, chile poblano, celery, chile serrano, garlic, oregano, coriander and ½ teaspoon salt, tossing occasionally. Cook until the onion and chile poblano are beginning to brown, for 6 to 8 minutes. Add the tomato and cook, tossing frequently and scraping up any browned bits, until the tomato begins to break down, for about 5 minutes more. Transfer to a large bowl. Add the shrimp and toss to combine. Taste and season with salt.
Wipe the skillet clean with a paper towel. Working in batches, place the tortillas in the skillet and top with about ¼ cup of shrimp filling each. Add a small mound of cheese on top of the filling and fold over like a taco. Cook until the cheese is beginning to melt and the tortilla is lightly toasted, for 2 to 3 minutes. Flip to toast the second half. Continue with the remaining tortillas, cheese, and shrimp.
Serve with a squeeze of lime and your favorite salsa.

Ingredients:
Filling:
- 2 pounds chopped ripe peaches, mango or other stone fruit (about 5 1/2 cups; 907 g)
- 1 teaspoon finely grated orange zest
- 1/2 cup sugar (110 g/3.9 oz)
- 2 tablespoons corn starch (18 g /.63 oz)
- 1/4 teaspoon Diamond Crystal kosher salt (1g)
- 8 ounces fresh raspberries (about 1 1/3 cups; 226 g)
- 4 tablespoons melted butter
Topping:
- 1 cup all-purpose flour (125 g/4.5 oz)
- 1/2 cup sugar (110 g/3.9 oz) plus more for sprinkling
- 1 1/2 teaspoons baking powder
- 3/4 teaspoons (3g) Diamond Crystal kosher salt
- 1 stick cold unsalted butter, cut into 1/2-inch pieces (113 g/4 oz)
- 1/2 cup cultured low-fat buttermilk
- 1 teaspoon pure vanilla extract or paste
- Vanilla ice cream, for serving
Method:
For the Filling: Prepare a charcoal or gas grill for indirect heat: If using a gas grill, turn all burners to high and close the lid. When the temperature inside the grill reaches medium high heat or about 400°, lift lid and turn off half of the burners. The area with no active burners is the indirect heat area. If using a charcoal grill, light a chimney full of briquettes and let burn until covered with ash, about 15 to 25 minutes. Mound them to one side. The area over the section cleared of coals is the indirect heat area. Thoroughly clean grates.
In a large bowl, combine the peaches, zest, sugar, corn starch and salt until the peaches are evenly coated. Add berries and toss to gently to combine. Set aside while you prepare the topping. Pour melted butter into a 12-inch cast iron skillet.
For the Topping: In a medium bowl, whisk together flour, sugar, baking powder, and salt. Add cold butter and toss to break up the pieces, then smash each one flat between your fingertips. Continue smashing and rubbing until butter is broken up into small pieces like cereal flakes. Stir in buttermilk and vanilla with a flexible spatula, folding to create a dough.
Pour the peach mixture into the buttered skillet and drop the thick dough in 2-tablespoon portions over the fruit spaced evenly apart. Place on the grill over indirect heat and cook until the biscuits are golden brown and the fruit is bubbling, checking every 15 minutes. The cobbler will cook for about 1 hour. Cool at least another hour before serving, to allow the filling to thicken (while piping hot, it will be runny and thin).

Mezcal Marinated Fajitas
Rick Martinez
Serves 4
Prep time: 5 minutes
Marinating time: 1-8 hours
Grill time: 25 minutes
Special equipment: Grill basket or griddle
Marinade
2 canned chipotle chiles in adobo, smashed
4 garlic cloves, finely grated
½ cup fresh lime juice
½ cup mezcal
¼ cup fish sauce
¼ cup fresh orange juice
¼ cup soy sauce
2 teaspoons dried oregano, preferably Mexican
1 teaspoon cumin
1 teaspoon kosher salt, plus more
1½ pounds skirt steak
1 large white onion, halved, sliced ⅓ inch thick
6 tablespoons olive oil, divided
Freshly ground black pepper
1 medium green bell pepper, ribs and seeds removed, sliced ⅓ inch thick
1 medium red bell pepper, ribs and seeds removed, sliced ⅓ inch thick
Flour Tortillas, sour cream, grated cheddar, Pico de Gallo, Guacamole, and Salsa Roja (for serving)
Instructions:
1. Whisk chiles, garlic, lime juice, mezcal, fish sauce, orange juice, soy sauce, oregano, cumin, and 1 teaspoon salt in a medium bowl.
2. Place steak in a resealable plastic bag and pour in marinade. Seal and turn to coat. Chill at least 1 hour and up to 8 hours.
3. Prepare a gas grill for high heat; thoroughly clean grates and brush with oil. Alternatively, prepare a charcoal grill for high heat.
4. Remove steak from marinade ,letting any excess fall back into the bag, and discard the marinade. Grill steak over high heat, turning occasionally, until charred, 2–3 minutes per side for medium-rare. Transfer to a cutting board and let rest 10 minutes. Slice against the grain into ½"-thick strips.
5. Toss onions, bell peppers and 6 Tbsp. oil in a medium bowl to coat; season with salt and black pepper. (If you have a perforated grill pan or griddle, now’s the time to pull it out!)
6. Grill over high heat, tossing occasionally, until charred and tender, 4–8 minutes. Transfer to a large plate.
7. Serve steak and grilled onions and bell peppers with tortillas, sour cream, cheese, pico de gallo, guacamole, and salsa alongside for assembling fajitas.
Salsa Tatemada
Makes 3 cups
8 medium roma tomatoes, cored
½ medium white onion, halved
2 chiles serranos, stemmed
4 garlic cloves, unpeeled
1/4 packed cup cilantro leaves with tender stems
1 teaspoon Diamond Crystal or ¾ teaspoon Morton kosher salt
2 tablespoons (or more) fresh lime juice
Instructions:
1. Preheat a grill basket or griddle over high heat until very hot, about 2-3 minutes.
2. Char tomato, onion, serrano and garlic, turning occasionally, until charred on all sides, about 3 minutes for garlic, 4-5 minutes for serrano, 6-8 for onion and 8-10 for tomato. Transfer to a plate to cool. When cool enough to handle, peel garlic.
3. Purée tomatoes, onion, chiles, garlic, cilantro and lime juice in a blender on low speed, using a plunger to ensure an even texture, until salsa is almost smooth but some small pieces remain; season with salt and more lime juice if necessary.
Guacamole
Makes 3 cups
3 large ripe Hass avocados
¼ white onion, finely chopped
2 chile jalapeño, stemmed and seeds removed if desired, finely chopped
1 garlic clove, finely grated
2 tablespoons (or more) fresh lime juice
3/4 teaspoon Morton kosher salt (4g)
¼ cup chopped cilantro, plus more for serving
Instructions:
1. Smash avocados with a potato masher or fork in a medium bowl or with a molcajete (a Mexican mortar and pestle) until very coarsely mashed.
2. Mix in onion, jalapeño, garlic, lime juice, salt, and ¼ cup cilantro.
3. Taste and add more lime juice, if desired.
Serves 8
Prep time: 5 minutes
Marinating time: 3-24 hours
Grill time: Approximately 6 minutes for medium-rare
Special equipment: Large resealable plastic bag
Marinade
32 ounces kefir or 32 ounces whole milk plain yogurt
1/3 cup Ras el Hanout spice mix, plus more for plating (about 1.6 ounce jar, for serving)
8 smashed garlic cloves
3 tablespoons kosher salt
8 ½-inches thick lamb blade steaks or lamb chops or lamb T-bones
8 medium spring onions
Vegetable oil (for brushing)
1. Whisk kefir, Ras el Hanout, garlic and salt together in a medium bowl.
2. Place lamb in a large resealable plastic bag and pour in marinade. Seal bag, pressing out any air. Chill at least 3 hours and up to 24.
3. Prepare a grill for high heat; thoroughly clean grates and brush with oil.
4. Remove lamb from marinade shaking off any excess. Grill, turning once, until charred and cooked through, about 3 minutes per side for medium-rare. Transfer to a platter; let rest 10 minutes.
5. Grill spring onions, turning often, until lightly charred on all sides, about 4 minutes.
6. Top lamb with grilled spring onions and dust with Ras el Hanout.

[Ingredients]
- 5 lbs skinless pork belly
- 1/4 C Kosher Salt
- 1/4 C Dark Brown Sugar
- 1/4 C Maple Syrup
- 3 Tbsp Ground Black Pepper
- 2 tsp Pink Curing Salt #1 (optional)
[Prepping the Bacon]
- For the cure, mix the kosher salt, brown sugar, maple syrup, black pepper and pink salt, if using, in a mixing bowl
- When prepping the pork belly, remove the ribs and some excess fat (if you prefer). Some people remove the skin as well
- Thoroughly rub the cure all over the pork belly
- Place the bacon in a ziplock bag and refrigerate for 8 days
[Smoking the Bacon]
- After 8 days, remove from bag and rinse under cold water to remove excess salt
- Set your wood pellet grill to 200F. Probe the bacon and smoke it for about 2 hours or until it reaches and internal temperature of 145F
- Remove the bacon from the grill and chill overnight
- When the bacon has chilled overnight, slice it with a long, sharp knife to the thickness you desire
[Cooking the Bacon]
- Lay the strips evenly on a cast iron griddle
- Place the griddle on the grill at about 350F

Southern Shrimp & Grits
[Ingredients]
-20 shrimp
-155 grams stone-ground grits
-450 grams half and half
-450 grams heavy cream
-155 grams (cold) for the grits and 100 grams of cubed butter for sauce
-Salt and pepper to taste
-15 grams olive oil
-35 grams chile sauce
-6 grams Worcestershire sauce
-8 grams lime juice
-15 grams or 2 ea garlic cloves, minced
-2 grams cayenne
-3 grams liquid smoke
-1 gram paprika
-1 gram oregano
-2 grams Lillie’s Q Hot Sauce (or hot sauce of choice)
-Garnish with parsley, diced pimientos and lemon juice
*We recommend using a kitchen scale to measure grams*
[Grits]
-Prepare charcoal using a weber chimney.
-When charcoal is ashed over, roughly 20 minutes, dump the charcoal into char baskets and position them in the back of the grill.
-Pour half and half and heavy cream into saucepan.
-Place saucepan on your grill.
-Bring half and half and heavy cream mixture to a simmer, will take 10-20 minutes depending on how hot the grill is.
-Whisk in stoneground grits.
-Move saucepan over indirect heat and close the lid of the grill.
-Continue to stir the grits every 5-10 minutes for approximately 60-90 minutes. If consistency shifts, four water on the grits throughout the cooking process to keep the consistency that you want.
-Add 155 grams butter to grits.
-Add salt and black pepper to taste
-Remove the saucepan from the grill, cover and hold until ready to plate
[Shrimp and Sauce]
-Place saucepan over direct heat on your grill.
-Toss pan with olive oil. Allow to heat for a couple minutes.
-Put minced garlic in olive oil until translucent.
-Add lime juice, Worcestershire sauce, liquid smoke, hot sauce, chile sauce, oregano, paprika, and cayenne to the pan. Stir to combine.
-Bring sauce to simmer
-Slowly whisk in 100 grams of cubed butter.
-Pull sauce off the grill.
-Put sauce over the shrimp hold some sauce for finished dish.
-Place shrimp on skewers- keep tail on and skewer right down the middle keeping shrimp facing same way, allow some space between each one.
-Set shrimp directly over the coals, each side will take approximately 2-3 minutes. Grill should be 375-400 degrees.
-Take shrimp off the grill.
[Plating]
-Plate grits first then add 5 shrimp in the middle of the grits.
-Use excess sauce to drizzle over each dish.
-Garnish with chopped parsley, diced pimientos and top with squeezed lemon

[Prepping the Grill]
- Preheat your Weber Kettle grill to 225-250 degrees in a two-zone method
- Add a Weber hickory chunk to impart a smokey flavor on the beef
[Prepping the Meat]
- Remove the silver skin from the Tri-Tip and coat with a salt, pepper, and garlic blend. Charlie is using his Lillie’s Q Q-Rub. Be sure to evenly disperse the rub and season all sides of the meat.
[Grilling the Meat]
- Place the Tri-Tip on the Weber Kettle in the cool zone and smoke until a meat thermometer inserted into the thickest part of the meat registers 125-130 degrees, 45 mins to 1 1/2 hours(depends on cooking temperature and consistent temperature
- Sear the Tri Tip over the direct zone to give it that nice Maillard Browning
- Remove the Tri-Tip from the Weber Kettle and allow to rest 15 minutes.
- Thinly slice the meat, against the grain.

Salmon with Cucumber Yogurt Sauce
Serves 4
Ingredients:
- 4 (6-ounce) fillets salmon
- 4 tablespoons plus 1 teaspoon Dill Rub (See Recipe)
Dill Rub Ingredients:
(Yields a generous ½ cup)
- ¼ cup kosher salt
- ¼ cup freshly ground pink peppercorns
- 1 tablespoon plus 1 teaspoon dried dill weed
- ½ teaspoon ground lemon peel
- ½ teaspoon freshly ground juniper berries
Dill Rub Recipe:
-The day before you plan to grill, prepare the Dill rub.
- In a small bowl, mix all ingredients together thoroughly. Store in an airtight container until ready to use.
Cucumber Yogurt Sauce Ingredients:
(Yields a generous 1 ½ cups)
- ¾ cup yogurt
- 1 tablespoon plus 1 teaspoon lemon juice
- ¼ teaspoon granulated garlic
- 1 teaspoon granulated sugar or simple syrup
- 2 tablespoons chopped cilantro
- ¾ cup finely-diced English cucumber
Cucumber Yogurt Sauce Recipe:
- About 30 minutes before you plan to grill, make the Cucumber Yogurt Sauce.
- To make the Cucumber Yogurt Sauce, first make the Simple Syrup.
-Combine the sour cream, lemon juice, garlic, sugar or simple syrup, cilantro, and cucumber in a small bowl. Cover and refrigerate until ready to use.
Salmon Recipe:
- About 30 minutes before smoking the salmon, dust each evenly on all sides with 1 tablespoon Dill Rub.
- When you are ready to cook, heat the smoker to 300 degrees F.
- Spray the grill grates with pan spray and place the salmon portions directly on the grates. Close the smoker lid, and cook about 20 minutes or until done.
- Serve each portion with 1 to 2 tablespoons of the Cucumber Yogurt Sauce and pass the remaining sauce around the table.

Building the Perfect Charcuterie Board:
3-4 kinds of meats:
- 1 whole muscle- Coppa, Prosciutto, Country Ham, Bresaola
- 1 cooked item- Pate, Terrine, Head Cheese or Mousse
- 1 encased item- Salami or Mortadella
- 1 hot item- Smoked Sausage or Duck Confit
2-3 Cheeses
- 1 harder cheese- Manchego, Aged Gouda or Alpine Style (like Gruyere)
- 1 soft cheese- Camembert or any Bloomy Rind, Young Goat, Ricotta
- 1 complimentary cheese that goes well with the above two- mild blue,aged cheddar
Garnishes and Bread
- Pickled items: Cornichons, Dilly Beans, or any pickled vegetable
- Roasted Nuts
- Bread- Something like a country sourdough or ciabatta is perfect.
- Optional- any kind of seasonal fruit or marinated vegetables
Roasted Maple Almonds Ingredients:
- 1 cup Marcona Almonds
- Regular almonds work as well
- 2 Tablespoons Maple Syrup
- ¼ teaspoon ground Black Pepper
- ¼ teaspoon ground Fennel Seed
- If using regular Almonds, add 1 teaspoon kosher salt
Roasted Maple Almonds Recipe:
- Preheat grill to 350 degrees
- Toss the Marcona Almonds with the Maple Syrup and Spices and spread onto a baking sheet lined with parchment.
- Place on the grill and roast for 6-8 minutes or until lightly golden
- Cool to room temperature before serving.
Grilling the sausage and sourdough:
- Set the grill at 400 degrees
- Slice sausage in half
- Slice bread to desired size
- Place sausage and bread on grill
- Grill sausage for 2-3 minutes on the cut side and 1 minute on non-cut side
- Grill bread for 2-3 minutes until charred and toasted

[Ingredients]
- 2 (3-pound) racks St. Louis-cut pork spareribs
- 1 cup Cool Smoke Rub
- ½ cup apple juice, in a spray bottle, for the grill
- 1 cup Cool Smoke Barbecue Sauce
- 2 teaspoons apple cider vinegar
- 8 tablespoons unsalted butter, melted (optional)
- ½ cup honey, divided (optional)
- ¼ cup light brown sugar (optional)
[Recipe]
- Use a shaker to dust both sides of the rib racks generously, and let them sit at room temperature, uncovered, for 1 hour before cooking.
- When you are ready to cook, heat the smoker to 275 degrees F pit temperature. Alternatively, heat a grill to 275 degrees F, using a 2-Zone setup, with 3 to 4 chunks of your favorite wood, in addition to the charcoal or gas.
- Place the ribs meat-side-up in the smoker, or on the grill over the indirect heat, and cook 2 hours, spraying the spareribs with apple juice every 30 minutes to moisten.
- Prepare the Cool Smoke Barbecue Sauce.
- In a small bowl, stir 1 cup Cool Smoke Barbecue Sauce together with ¼ cup honey and 2 teaspoons apple cider vinegar and set aside.
- Cut 2 (18 x 24-inch) lengths of foil to wrap each rib rack in a tight package.
- When the ribs have cooked 2 hours, transfer them from the grill and place each rack meat-side-down on the foil. Drizzle the ribs evenly on both sides with the butter, ¼ cup honey, and the light brown sugar. (optional)
- Wrap each rack tightly in the foil, being careful not to puncture.
- Return the rib packages meat-side-down to the smoker, or to the cool side of a grill, close the lid, and cook another 2 to 2 ½ hours, or until the meat is tender.
- The ribs are done when a meat thermometer placed in the thickest part of the meat reads an internal temperature of 203 to 205 degrees F. Open the foil package and use a skewer, or a toothpick, to check for tenderness.
- Remove from the heat, carefully unwrap the ribs, and discard the foil.
- Brush Cool Smoke Barbecue Sauce on both sides of the ribs to coat and return them meat-side-up to the smoker or grill over indirect heat. Cook 15 minutes to set the sauce. Watch them carefully so you do not burn or overset the sauce.
- Serve immediately, with any remaining sauce on the side.
