Ingredients
- 1 pound of your favorite type of pasta
- 1 ripe avocado, peeled and pitted
- 2 garlic cloves, minced
- ¼ cup pomegranate molasses
- 2 tablespoons rosewater
- 2 tablespoons gochujang
- 2 tablespoons avocado oil
- Salt and freshly ground pepper, to taste
- 2 tablespoons buttermilk
- ¼ cup minced seaweed
Instructions
1. Cook pasta according to package instructions.
2. In a food processor, combine the garlic, avocado, pomegranate molasses, rosewater, gochujang, avocado oil, salt, and pepper. Blend until a pesto is formed.
3. Transfer the pesto to a bowl and stir in the buttermilk and seaweed to the pesto.
4. Drain the cooked pasta, save a cup of the pasta water.
5. Add the pesto to the pasta and toss to combine. If the pasta is too dry, add some of the reserved pasta water until desired consistency is reached.
6. Serve the pesto pasta warm, garnished with additional seaweed and freshly ground pepper, if desired. Enjoy!

The only goal was to make something that looked as close as possible to an egg but wasn’t an egg. What I was able to make after a few trials and tribulations wasn’t too bad in my opinion. For this, I thought it would be easiest to make a hard-boiled type egg. Along the process of trying to perfect this, I accidentally found out how to make a fried egg as well, but we’ll get into that a little bit later.
The recipe I am going for will have some gelatin in it, but honestly, I don’t think this is a hard requirement, I am pretty sure you could use agar and end up with a vegan f-egg.

1.33 cups of liquid to 2 oz (56 g) of powdered gelatin.

Since the temperatures are slightly different for dark/milk/white/ruby and I want to include both Farhenheit and celcius I am going to refer to each stage in the table below:
Temp #1 Dark - 122F-131F (50C - 55C) | Milk 113F-122F (45C - 50C) | White/Ruby 113F-122F (45C- 50C)
Temp#2 Dark - 82F-84F (27.7C - 28.8C) | Milk 81F-82F (27.2C - 27.7C) White/Ruby 79F-81F (26.1C - 27.2C)
Temp#3 Dark - 88F-90F (31.1C - 32.2C ) Milk 84F-86F (28.8C - 30C) White/Ruby 82F-84F (27.7C - 28.8C)
Method:
1) Chop chocolate into really fine pieces.
2) Melt 3/4 chocolate and bring to Temp #1.
3) Place 1/3 of this melted chocolate into a bowl and set off to the side.
4) Add the 1/4 of unmelted chocolate to the 2/3s of melted chocolate and mix.
5) Stir until it reaches Temp #2
6) Add 1/3 of melted chocolate back in and mix. The final temp should be Temp #3.

So this is my version, which may not be for everyone, it’s very simplified compared to other recipes you may see since I am going to skip a few steps people usually advise. For this reason, it may be kinda controversial, however, I think the end product is delicious and has a nice texture, which is what we are going for when we cook, but that said you do you.

What’s the difference between freeze drying and using a dehydrator?
Both the dehydrator and the freeze-dryer have the same goal, to remove moisture from food. Removing the water from food allows it to be preserved for a lot longer without it going off. This is because water helps facilitate the growth of things that contribute to foodborne illness, removing the water makes it harder for bacteria, mold, and other stuff to live and therefore the food stays fresher longer. Drying food as a form of preservation is pretty much as old as we are, but around 1930 the process of freeze-drying food was developed and although it also essentially just removes water, how it does it is completely different, which means the end result is completely different.
So today I want to show how these differ by making some cheese powder, which I think shows really well how these two different methods of removing water differ. Something not entirely new for this channel, a few months ago I made some instant mac and cheese and some Doritos using cheese powder I made in the dehydrator.

This was inspired after talking to a friend of mine who goes hiking with his family. When camping on the first night he really likes to have some of the prepackaged freeze dryer food you get from rei or Costco.
