What’s even better than a tasty carrot cupcake? How about a Christmas tree made entirely out of tasty carrot cupcakes?
Yes, this week we’re welcoming back our super talented Junior Ambassador – and the reigning Junior Bake Off champion – Kezia, with her stunning Carrot Cupcake Christmas Tree – the perfect centrepiece for your festive celebrations!
Not only do they look good and taste great, you can also have all kinds of fun decorating them with your favourite Christmas sprinkles too! We think you’re going to love them!

Carrot Cupcake Christmas Tree Ingredients:
For the carrot cupcakes –
- 190g plain flour
- 1¼tsps baking powder
- 1¼tsps bicarbonate of soda
- large pinch of salt
- 1½tsps ground cinnamon
- ¼tsp ground nutmeg
- 3 large eggs
- 200ml vegetable oil
- 240g grated carrots
- 150g dark brown sugar
- 75g caster sugar
For the cream cheese buttercream –
- 100g unsalted soft butter
- 150g cream cheese
- 550g icing sugar
- 2tsps icing sugar
- pinch of salt
To decorate –
- silver edible pearls
- white edible pearls
- yellow/gold fondant/sugarpaste (50g)
- brown gel food colouring
- dark green gel food colouring
- icing sugar for dusting
