Baking the Hutterite way 🍞| a week crammed with ups and downs Giselle Waldner 2025-09-07 | More baked goods have headed your way. #Hutterite #baking poppyseed tea roll: 18 cups poppyseeds8 cups honey18 eggs12 cups thick cream6 cups milk6 3/4 cups raisinsgrind poppyseeds with raisins. Mix all ingredients and cook 15 minutes. Stirring all the time. cool. once cooled it should be a thicker consistency. Dough:1 1/2 quarts milk1 1/2 quarts warm water3/4 quart whole eggs3/4 cup yeast2 1/4 cups water15 lbs flour 2 1/4 lbs sugar3 tbsp. salt1.14 lbs shortening or butteradd everything and knead dough. Let rise for two hours. Make 3/4 lbs. loaves for each plate. Roll out fairly thin and make roll. Put in 1 cup filling. They don't need to rise. Bake right away at 350 for 1/2 hour till golden brown. Bake on bun pans. Brush with milk and icing sugar paste.NOTE: be careful with the flour mesauremt, you might not need it all.smaller recipie:9 cups poppyseeds4 cups honey 9 eggs 6 cups cream 3 cups milk 3 1/4 cup raisinsa food processor or a large blender also works of grinding the raisns and poppyseeds. English Muffins:2 cups warm water4 cups warm milk3/4 cup melted butter1/2 cup honey 1 tbsp salt10 cups fresh milled flour4 eggs1 1/2 cups yogurt1/2 cup instant yeast6 cups fresh milled flourCombine water, milk, butter, sugar, salt and 10 cups whole wheat flour in mixer, knead for 5 minutes. Add eggs and yogurt. Add yeast and remaining 6 cups flour, adding only enough to create a smooth, firm, but not tough dough. Take care not to overwork dough.Let rise 45 min. Roll out to 1/2" thickness on well floured surface and shape. Brush generously with olive oil, sprinkle with cornmeal. Turn dough over and repeat process with oil and cornmeal. We used a circle slightly larger than wide mouth jar lid to cut muffins. They will rise in height, but won't spread.Preheat oven to 350°. Grill on skillet set to 225° until golden, about 2 minutes. Flip and grill opposite side. Return to baking sheet and bake for 4-5 min, depending on the size of your muffins.This recipe yields approximately 80 muffins. x6 is 8 breakfastsFresh milled broiche/buns:Thangzhong:324g fresh milled flour 1080g milk540g waterDough:7650 grams fresh milled wheat flour36 eggs1648 grams butter (used duck fat)162 grams instant yeast9 tbsp salt3,240 g milk2 3/4 cups honeyMake Tangzhong: Combine all ingredients for tangzhong in Sauce pan and whisk over heat, to make sure there are no clumps. stir constantly until thickened. 2-3 minutes. It will look like a thick roux similar to thick pudding. let cool. Make Dough: In mixing bowl add the tangzhong mixture, milk, sugar, flour, eggs & softened butter. Remember Do Not add the yeast or salt at this step. Mix until thoroughly combined.. (We're not fully kneading in this step.) Cover and let this mixture autolyse for 20-60 minutes (resting). After you're austolysed, add in your yeast and salt. Knead in your mixer for 6-8 minutes or until windowpane is reached. this will depend on your mixer form the dough into a ball, put it in a greased bowl, cover and rise for about an hour or until doubled in size. This will vary by the temps in your house. Put 3 cups rhubarb on each plate and pour filling over the rhubarb on each pie. Weigh filling per pies. Bake for 45-55 minutes at 300F, Cool before you add toppingTopping:Beat egg whites and 15 tsp. cream of tartar. Beat until soft peaks form. Slowly add 12 cups sugar. Add ½ cup vanilla for flavour. Take off at least 1 quart egg whites before beating. It's too much. Bake until golden brown. Combine 1 cup of filtered water and ½ cup of Gelatin in a mixing bowl and let it sit to bloom (just let the water absorb the gelatin, unstirred) while you heat the other ingredients.2. Combine 3/4 cup of water, 350g honey, splash of vanilla, and pinch of salt in a pot over medium heat on the stove, and stir to combine. (Do not let it come to a boil.)This is when you'd want to line a pan with parchment paper because after the mixture has been whipped, it becomes stiff fairly quickly.3. Start mixing gelatin on low in the mixer and slowly pour in the honey mixture.4. Gradually increase to high speed and mix for about 10 minutes or until it looks mallowy.5.
