Burger Bun Option - 1 egg, well-beaten with a pinch of salt - sesame seeds
Quick Mash (if not using leftover mashed potatoes) 1. Place potato chunks into a microwave safe bowl along with 2 tsp water. Cover with plastic wrap and cut a little hole to vent steam. 2. Microwave on high for 5-6 minutes, until potatoes are soft. 3. Add in butter and milk. Mash the potatoes. Add more milk if needed.
Make Buns 1. Add all ingredients to stand mixer in order. 2. Mix on med-low speed until everything comes together into one mass. 3. Reduce speed and knead until smooth and elastic, around 10-12 mins. Dough should pass the windowpane test. 4. Turn dough onto counter and shape into smooth ball. 5. Scrape out gunk from mixer bowl. Add some oil to the bowl. Use dough to swirl the oil around and coat the dough ball itself. 6. Cover and let proof for ~1 hour, until doubled in size. 7. Turn out and press out any air. Divide into 12 equal portions which weigh around 85-90g each. 8. Shape into 12 taut balls. Lightly press each dough ball flat. Place on lined baking sheet, spacing 1" apart. 9. Cover and proof until doubled in size, 1-1.5 hours. 10. Pre-heat oven to 375F. Make glaze by mixing melted butter and honey until evenly combined. 11. Before baking, brush buns with glaze. 12. Bake for 16-18 mins until tops are golden and interior temp is 200F. 13. When buns are done, take out of the oven and immediately brush again with glaze. Finish with a sprinkle of flaky salt on top. 14. Let cool 5-10 minutes before serving. Can be kept at room temperature in a sealed container for up to 3 days. Re-heat in the microwave for 10-15s to refresh.
Alternatively, to make the best burger buns: skip the honey glaze. Right before baking, brush the buns with an egg wash and scatter over sesame seeds.

Cracker Base - 240g (1 cup) water - 180g (¾ cup) Greek yogurt - 40g (2 Tbsp) molasses (sub: dark maple syrup or buckwheat honey) - 280g (2 cups) AP flour - 50g (¼ cup) granulated sugar - 1 tsp (6g) baking soda - 1 tsp (6g) fine sea salt or table salt - ¼ tsp MSG (optional) - Any dry herbs, spices or seasonings (optional—see note 2)
Base Seed Mix - ½ cup (80g) pumpkin seeds - ¼ cup (40g) flax seeds - ¼ cup (30g) white sesame seeds
Cranberry Hazelnut - 1 cup Base Seed Mix - 1 cup (150g) whole hazelnuts - 1 cup (140g) dried cranberries
Sun-dried tomato - 1 cup Base Seed Mix - 2 tsp garlic powder - 2 tsp dried oregano - 15g (3/4 cup) grated Parmesan cheese - 1 cup (100g) diced sun-dried tomatoes - 1 cup (150g) almonds, roughly chopped
1. Prep: Pre-heat oven to 350°F (175°C) with rack in the middle position. Grease foil molds or mini loaf pans. 2. Mix wet ingredients: In a large measuring cup combine water, Greek yogurt, and molasses. 3. Mix dry ingredients & mix-ins: In a large bowl thoroughly whisk together flour, sugar, baking soda, salt, optional seasonings, and MSG. Add all mix-ins and toss to coat and separate. 4. Combine: Pour wet ingredients into dry and stir together until just combined and there’s no dry flour left. 5. Bake: Transfer batter to greased molds. Smooth out the tops. Bake at 350°F for 25-30 minutes or until an inserted toothpick comes out clean. 6. Cool: Let cool for 15 minutes before removing from molds. Wrap and freeze for 2 hours or chill in fridge overnight. 7. Prep: Pre-heat oven to 250°F with racks in the middle position. Line 4 baking trays with parchment paper. 8. Slice & Bake: Slice loafs into cracker-thin slices with a sharp serrated knife. Arrange on baking trays. Bake for 50-60 minutes or until lightly golden and crisp. Flip crackers halfway through baking time. 9. Cool & Serve: Let cool on trays for 30 minutes to let the crackers crisp up fully. Serve & Enjoy!
Notes: 1. The recipe needs about 1¾ cups (420g) of a soured dairy product. Optionally use: 1¾ cups buttermilk or 1¾ cups milk + 2 Tbsp lemon juice,. Restaurant-style - ½ cup (110g) rapeseed oil - 85g (3 oz) fatty beef, hand minced - 2 Tbsp (40g) Pixian chili bean paste - 2 tsp (8g) fermented black beans - 2 cloves (8g) garlic - 1 Tbsp (7g) Sichuanese chili flake - ⅔ cup (160mL) chicken stock - 1 lb (454g) medium-firm soft tofu - 1½ tsp potato starch + 1 Tbsp water - 3 scallions - 1½ tsp ground Sichuan peppercorn, or to taste - ¼ tsp sugar

Sheldo-style (1 lb tofu) - 2 Tbsp (28g) neutral oil - ½ lb (227g) regular ground beef - 1 tsp soy sauce - 2 Tbsp (40g) Pixian chili bean paste, minced - 2 cloves (8g) garlic, minced - 1½ tsp (4g) chili flake - 1 cup (240mL) water - 1 tsp chicken powder - 1 lb (454g) medium-firm soft tofu, cut into 3/4” cubes - 1 Tbsp cornstarch + 2 Tbsp water - 1 tsp (7g) ketchup - 1½ tsp ground Sichuan peppercorn, or to taste (with more for garnish) - 3 scallions, cut into 1” segments
Sheldo-style Instructions 1. Brown beef: Heat oil in pan over medium until shimmering. Add ground beef and cook, breaking up with a spatula. Add soy sauce and sautée until beef is deeply browned and crispy, about 5 minutes. 2. Add aromatics: Lower heat to medium-low. Add chili bean paste. Cook, stirring constantly, until bean paste is toasted and oil has turned red, about 2 minutes. Add garlic and chili flake. Cook for 1 minute, or until garlic is fragrant. 3. Cook tofu: Raise heat to medium. Add water and chicken powder. Bring to a simmer, then add tofu. Lower heat to medium-low. From this point on, avoid stirring vigorously. Use back to spatula to gently push tofu to avoid breaking. Simmer 3-5 minutes. 4. Thicken sauce: Raise heat to medium. Stir cornstarch slurry before using. Slowly add slurry in separate additions, stirring and cooking for 30s between each to allow for thickening. Stop when sauce reaches a “bolognese ragu” texture and clings to tofu. 5. Finishing touches: Turn off heat. Add ketchup, ground Sichuan peppercorn, and scallions. Stir to combine, letting residual heat wilt scallions. Serve in a shallow bowl and finish with extra sprinkling of Sichuan peppercorn. Enjoy with hot rice.

Press egg wash side of each ball firmly into a bowl of sliced almonds, flattening to around 1/2-inch thickness. Place almond-side up on the lined baking sheets, spacing them about 2 inches apart, 6 cookies per tray. 7. Bake: 22-25 minutes, or until the cookies have spread, puffed up slightly, and are lightly golden. The edges should be firmly set, with the centers still slightly soft but not raw. # Lemon Bar Recipe
## Ingredients
### Crust - 140g (10 Tbsp) unsalted butter - 175g (1-1/4 cup) all-purpose flour - 50g (1/4 cup) sugar - 5g (1-1/2 tsp) kosher salt (sub: 3/4 tsp fine sea salt OR table salt) - 1 tbsp (15mL) water
### Filling - 300g (1-1/2 cups) sugar - 54g (6 Tbsp) all purpose flour - Pinch of salt - 1/16 tsp ground turmeric (optional) - 1/2 tsp citric acid (optional, sub: 1-1/2 tsp cream of tartar) - 3 large eggs (~50g each w/o shell) - 3 egg yolks (~20g each) - ~17g (~2 Tbsp packed) lemon zest (zest the lemons needed for 200mL juice) - 200mL (200g) lemon juice (about 3-4 lemons) - 84g (6 Tbsp) unsalted butter
### Garnish - Powdered sugar, for dusting (optional)
## Instructions
### Prep 1. Pre-heat oven to 350°F (175°C) with the rack in the middle position. 2. Line a 9” x 9” baking pan (can be metal, glass, or ceramic) with parchment paper.
### Crust 3. Measure out all crust ingredients and have them ready. 4. Make Browned Butter: - Melt butter in a medium stainless steel pan over medium heat. - Butter will foam, bubble, and crackle. Stir occasionally, then constantly as sounds die down. - Light sediment will appear. Scrape pan to prevent sticking and burning. Reduce heat to low. - Stir until sediment turns rich brown and butter smells nutty. Turn off heat. 5. Add salt and sugar, stirring to incorporate. Mix in flour until well combined and no dry flour remains. The mixture will be clumpy and sandy. 6. Add water and stir thoroughly for a homogenous dough. 7. Transfer dough to pan. Press into an even layer with hands or bottom of a cup. Prick all over with a fork. 8. Bake for 20-25 minutes, until evenly golden with slightly browned edges.
### Filling 9. Wipe pan used for crust to remove excess debris. Add all filling ingredients except lemon juice and butter. Stir to combine. 10. Add lemon juice and stir until evenly mixed. 11. Cook over medium-low heat, stirring and scraping constantly. When filling begins to thicken, reduce heat to low. Cook until filling reaches 160-165°F (70-75°C), is slightly thickened, and coats spoon. Texture should be halfway between melted ice cream and shampoo. 12. Remove from heat. Add butter, stir to melt and combine. 13. Strain filling onto baked crust. Tilt pan to spread evenly. 14. Bake for 7-15 minutes, until the filling is set with slightly puffed edges. The filling should barely jiggle when the pan is shaken.
### Cool & Serve: 15. Allow the bars to cool completely at room temperature for at least 1.5 hours. If ambient temperature is very warm, chill the bars in the fridge, uncovered. 16. Lift cooled bars from pan. Cut with sharp knife, wiping blade between cuts with a damp towel. Trim 1/4" (0.5 cm) from all sides. Cut into desired size (I like 4x4 for 16 pieces). 17. Optional: Dust with powdered sugar. Serve immediately.

- 1 large English cucumber or 5-6 mini cucumbers (~350g) - 1/2 tsp (3g) fine sea salt / table salt - 1/2 tsp (2g) sugar
1. Cut ends off cucumber. Use a rolling pin or other heavy object to smash the cucumber until it splits apart. 2. Trim into long strips if necessary. Cut into bite-sized pieces. 3. Transfer to a bowl. Toss with salt and sugar. Let sit for 15 minutes. 4. Drain off excess liquid before using in salad.

The Classic (Tart & Garlicky) - 1x Smashed Cucumber - 1 tbsp (15g) vinegar (Chinkiang black vinegar, balsamic, rice, apple cider etc) - 1 tsp (5g) soy sauce - 1 tsp (4g) sesame oil - 2 tsp (9g) chili oil - 1/4 tsp sugar - Large pinch MSG - 2-3 cloves garlic, grated or pressed - Sesame seeds, for garnish (optional)
1. Mix together all the sauce ingredients. Toss with cucumber. Garnish with sesame.
1. To a heat-proof bowl, add 2 chopped scallions, sesame, garlic, chilis, sugar, and Sichuan peppercorn. 2. Add oil to a small pan. Heat on medium until the oil is just beginning to smoke. Immediately (and carefully) pour the hot oil over the ingredients in the bowl. 3. Add oyster sauce, sesame oil, vinegar, and soy sauce. Stir together until combined. 4. Toss with the cucumber. Garnish with the remaining scallion and more chili (if desired).

Sheldo’s Special (Spicy & Nutty) - 1x Smashed Cucumber - 2 tbsp (32g) Chinese sesame paste OR peanut butter - 2 tsp (8g) sesame oil - 1-1/2 tsp (6g) sugar - Large pinch MSG (optional) - 2 cloves garlic, grated or pressed - 2 tbsp (28g) chili oil (1 tbsp oil + 1 tbsp sediment) - 1 tbsp (15g) soy sauce - 1 tbsp (15g) vinegar (any kind) - 1/3 cup (50g) roasted peanuts - 1/2 cup (15-20g) cilantro
1. Combine sesame paste/peanut butter, sesame oil, sugar, MSG, garlic, and chili oil. Stir to thin out the nut butter. Add soy sauce and vinegar. Stir together until smooth. Toss with cucumber. 2. Chop peanut and cilantro together until finely minced. Add 2/3 of the peanut/cilantro mix into the salad itself. Mix. 3. Garnish with the rest of the peanut/cilantro topping.
1. Add whole cumin and coriander to a small pan. Heat over medium, stirring constantly, until the spices begin to smell fragrant, about 3 minutes. Grind into a fine powder w/ mortar & pestle or spice grinder. 2. Combine yogurt, the toasted spices, plus the rest of the ingredients. Toss with the cucumber. Garnish with additional mint & cilantro.

1. Combine lemon zest, garlic, lemon juice, olive oil, dried oregano, black pepper, and salt. Vigorously whisk until the dressing emulsifies, turning opaque and creamy. 2. Toss cucumber with the sauce. Add in red onion, cherry tomatoes, mint, and dill. Gently stir together. Serve with additional sprigs of dill and crumbled feta (if desired)

Rich coconut sticky rice meets fragrant ripe mango plus a salted coconut sauce to tie it all together.
My version takes just one hour to make, compared to the traditional method which can take up to two days. It's the perfect summer party dessert. Oh, it also just happens to be completely vegan and free of most allergens. That means everyone can enjoy it.
Coconut Sticky Rice - 1-1/2 cups (310g) glutinous rice (also called sticky rice or sweet rice) - 1 can (400 mL / 14 fl. oz) full-fat coconut milk, reserve 1/2 cup (120mL) for coconut sauce - 3/4 tsp (4.5g) fine sea salt / table salt (1-1/2 tsp Diamond Crystal kosher salt) - 150g (3/4 cup) sugar - 1/2 fresh pandan leaf (optional)
Salted Coconut Sauce - 1-1/2 tsp (4.5g) cornstarch - 1/4 tsp (1.5g) fine sea salt / table salt (1/2 tsp Diamond Crystal kosher salt) - 1 tbsp (13g) sugar
To Serve - 3-4 ripe mangoes OR mango ice cream - Toasted sesame seeds (optional)
Coconut Sticky Rice 1. Wash rice thoroughly. Drain off excess water. Soak rice in boiling hot water. Cover the bowl with a plate and soak for 15 minutes. -- Make Coconut Infusion -- 2. Drain off most of the hot water, leaving just enough to be exactly level with the top of the rice. 3. Cover the bowl. Microwave on high power for 7 minutes. Remove from microwave (careful, will be very hot). Fluff up rice with a fork. Give it a taste. If it’s tender, then it’s ready. If it still has a hard chalky centre, microwave for another 2-3 minutes (covered), until tender and cooked. 4. While the rice is still hot, pour over the coconut infusion (see below). Gently stir together. Cover the bowl again and let rest for 30 minutes or until all the liquid has been absorbed into the rice. Halfway through the resting time, give it a another stir to redistribute any liquid. -- Make Salted Coconut Sauce, Peel Mangoes --
Coconut Infusion 1. Pour out 1/2 cup (120 mL) coconut milk from the can and reserve for later. 2. Add remaining (280 mL) coconut milk to a small pot. Add sugar, salt, and if using, pandan leaf. 3. Heat on medium until gently simmering and all the sugar is dissolved. Turn off the heat and keep warm until ready to use. If the mixture cools down before the rice is ready, re-heat over a low flame while rice is cooking in the microwave.
Salted Coconut Sauce 1. With the reserved 1/2 cup of coconut milk, add a small splash (1 tsp) to the cornstarch. Stir together until lump free. Add cornstarch mixture back to coconut milk, along with salt and sugar. 2. Pour mixture into the same pot as before. Cook over low heat, stirring constantly, until the sauce thickens enough to coat a spoon or spatula. Pour into a serving container and set aside until ready to serve.
Assemble 1. Peel mangoes and slice off mango cheeks. Cut mango into slices. 2. Add sticky rice to serving plate. Arrange mango slices neatly. Spoon over coconut sauce. Finish sprinkle of sesame seeds (optional). Enjoy!

I take it one step further by marbling in different flavours. In the video, you'll see three of my favourite variations: chocolate, matcha, and ube.
8” Imperial - 24oz (3 blocks) cream cheese**, room temp** - 8 oz (1 cup + 2 tbsp) sugar - 4 large eggs + 1 egg yolk (~50g each egg w/o shell) - 360mL (1-1/2 cups) cream, room temp - 1/2 tsp fine sea salt / table salt - 1 tsp vanilla extract - 27g (~3 tbsp) all-purpose flour
6” Cake Flavour - 2 tbsp (13g) cocoa or matcha powder - ~1/2 cup (~120mL) cream (omit 1/4 cup (60mL) cream from recipe)
8” Cake Flavour - 3 tbsp (20g) cocoa or matcha powder - ~3/4 cup (~180mL) cream (omit 1/3 cup (80mL) cream from recipe)
Make Batter 1. Pre-heat oven to 475F with rack in upper third of the oven. 2. Line a 6”x3” (15 cm x 7.5 cm) or 8”x3” (20 cm x 7.5 cm) cake pan with two sheets of parchment paper. 3. Add cream cheese to a large mixing bowl. Mix on medium until soft and fluffy. Add in sugar. Mix until sugar is fully dissolved into the cheese, about 2-3 minutes. Scrape bowl halfway through. 4. Add eggs one at a time, beating until each egg is combined before adding the next one. Scrape bowl halfway through. 5. Add salt and vanilla extract. Mix on low to combine. With mixer still running, slowly stream in cream. Mix in cream until batter is smooth. 6. Sift in all-purpose flour. Fold flour into batter until combined. Scrape down the bowl in the process.
Add Flavour (optional) 1. Divide batter into 3 portions, one larger (leave plain), one medium (moderate flavour/colour), one slightly smaller (most saturated/concentrated). 2. If using matcha or cocoa powder, add powder to a large bowl. Alternate between adding splashes of cream and whisking vigorously. Keep whisking until a smooth moderately thick paste forms. 3. Add 1/3 of the paste to the medium portion of batter and 2/3 of the paste to the smallest portion of batter. Whisk to combine smoothly. 4. If using bakery emulsion, add enough so that the smallest batter portion is the darkest and the medium is a moderate colour. Leave largest batter portion plain.
Bake 1. Pour batter starting with smallest/darkest portion, then medium, then largest/lightest portion. With each subsequent pour, do so quickly from a height so that the batter hits the bottom of the pan. Swirl just the surface of the batter to create a marble pattern. 2. Transfer cake pan to a baking tray and place in the oven. 3. Bake for 30-45 minutes. At 30 minutes, start checking the cake. It’s done when the cake is puffed up, top cracked and browned. The centre should be wobbly but not too liquid. If not done, keep baking, checking every 5 minutes. For a firmer texture, bake until the cake is mostly set but centre slightly wobbly when shaken.
Cool & Serve 1. Let cake cool in the pan completely, at least 2 hours at room temp. 2. Once cooled, lift cake out with the parchment paper. Gently peel back the parchment and transfer cake to a serving plate. 3. Dunk a knife in boiling water to get clean cuts. Re-heat the knife and wipe clean with damp towel between each cut. 4. If desired, once cake is cooled, take it out of the pan, place in a sealed container, and refrigerate until ready to serve. Let cake come back to room temperature for at least 30 minutes before serving.

This flaky flatbread hails from Malaysia but traces its roots back to South India's Parotta/Paratha. It's such a textural experience — the crisp flaky exterior shatters apart to reveal tender chewy layers inside.
The success of Roti Canai hinges on a perfectly strong yet extensible dough and careful technique. I tried so many recipes and was never able to make a good roti. So, I started experimenting. After going through 30+ recipe iterations and using up almost 10 kilograms of flour, I've finally created my own _perfect_ Roti Canai. Follow along and I'll teach you everything I learned.
Dough - 300mL water, lukewarm (plus up to 3 tsp more water) - 60g (3 tbsp) condensed milk (sweetened) - 35g (2-1/2 tbsp) melted butter OR ghee - 12g (2 tsp) fine sea salt OR table salt - 20g (1-1/2 tbsp) sugar - 600g (4-1/4 cups) all-purpose flour
Shaping - ~1/2 cup neutral oil
Cooking - Ghee OR neutral oil + butter
Make Dough 1. Add water, condensed milk, butter or ghee, salt, and sugar to a large mixing bowl. Stir together until thoroughly combined. 2. Add flour and stir with a spatula then switch to hands and knead to bring the dough together. If there’s excess dry flour, add up to 3 tsp more water. Knead only until all the dry flour is incorporated and the dough is free of any hard lumps. It’ll still be quite rough in texture. 3. Cover and rest 15 minutes. 4. Knead dough until smooth. Should only take about 30 seconds or so. 5. Divide dough into 10 equal portions. If weighing, they’ll be about 100g each. Shape each portion into a smooth tight ball. 6. Add about a 1/3 cup oil to a tray. Spread the oil all over. Generously coat each dough ball in oil. 7. Cover tray tightly and rest dough. At least 1 hour at room temperature. For better results, rest 3 hours at room temperature. For best results, place tray in fridge overnight. The next day, leave the tray at room temperature for 1 hour before proceeding.
Stretch & Shape 1. Stretch each dough ball into a large and translucently thin sheet, either by tossing and stretching OR rolling and stretching. Shape by folding top and bottom sides to the centre and then left and right sides. Add some more oil and set aside to rest while shaping the other dough balls.
Cook 1. Pre-heat non-stick skillet over medium for 2-3 minutes. 2. Cook the rotis in the order they were shaped. Right before cooking, stretch shaped roti one more time. 3. Add 2-3 tbsp ghee or oil to the pan. When lightly shimmering, place in roti. Cook until the bottom is golden brown. If roti puffs, press down lightly with spatula to encourage even cooking. Once the bottom is golden, flip over and cook other side. If using ghee, cook until both sides are golden and transfer out. If using oil, when the second side is lightly golden, add to the pan a knob of butter (1-2 tbsp). Swirl around to melt and coat both sides of the roti. Continue cooking until golden and transfer out of pan. 4. Place roti on a clean tea towel and allow to cool slightly, 30 seconds. Then, using tea towel to protect hands, vigorously clap the roti between two hands. Repeat until roti is fluffed up and flaky. 5. Serve immediately with curry dip.
Dairy-free Dough Formula - 300mL alternative milk (oat, almond, soy, lactose-free, etc) - 35g (2-1/2 tbsp) margarine OR vegan butter, melted - 12g (2 tsp) fine sea salt OR table salt - 54g (4 tbsp + 1 tsp) sugar - 600g (4-1/4 cups) all-purpose flour
Super Coconut-y Curry Dip - 1 cup full-fat coconut milk, divided (1/2 cup + 1/2 cup) - 2-3 tbsp Thai red curry paste - 1/4 tsp turmeric - 1/2 tsp five spice OR garam masala - 1/4 cup water - Few dashes fish sauce (sub soy sauce) - 1/4 tsp sugar - Salt to taste
1. Add 1/2 cup coconut milk to a small pot. Set heat to medium and reduce coconut milk until it’s thick, bubbly, and the coconut oil starts to separate out and sizzle, about 5 minutes. 2. Add curry paste to the pan. Stir together with the coconut milk and fry the mixture until a red oil separates out. Add turmeric and five spice. Stir constantly and cook for 20 seconds. 3. Immediately add the other 1/2 cup coconut milk, water, and fish sauce. Cook for 5 minutes, stirring occasionally. 4. Add sugar and taste to see if it needs more salt. If the consistency is too thick, thin out by adding more water. The curry sauce should have the consistency of heavy cream. There will be a slick of red flavourful oil floating on the surface. 5. Serve right away with fresh Roti Canai. If refrigerated, the curry sauce will solidify. Reheat in the microwave before serving.

1. Beat cream cheese and sugar together until smooth. 2. Add cream in a bit at a time, beating in between to prevent lumps. 3. Once all the cream has been added, Whip to desired consistency.
White chocolate - 3 oz (85g) white chocolate, finely chopped - 1 cup (240mL) cream, cold - 1 tsp vanilla (optional)
1. Add 3 tbsp of cream to white chocolate. Microwave for 30s, then stir until fully melted and combined. Cover and chill in fridge for at least 15 minutes. 2. Whip cream to soft peaks. Add in chilled chocolate. Whip to desired consistency.
Gelatine - 1/2 tsp gelatine - 2 tbsp water - 1 cup (240mL) cream, cold - 2 tbsp (25g) sugar - 1 tsp vanilla (optional, but recommended)
1. Sprinkle gelatine over water. Let sit for 3 mins to hydrate. Then, microwave in 5s bursts, stirring in between, until melted. Add 2 tbsp cream and stir to combine. 2. Whip together cream and sugar until soft peaks. Slowly drizzle in gelatine mixture while vigorously whipping. Whip to desired consistency. 3. Pipe or spread cream right away. Once the gelatine sets, the cream will not be pliable anymore.

English Muffins
Ingredients - 325mL water, room temperature - 167g (3/4 cup) Greek yogurt, room temperature - 40g (3 tbsp) oil - 3/4 tsp (3g) instant yeast (sub: 1 tsp active dry yeast) - 560g (4 cups) AP flour - 1 1/2 tsp (10g) fine sea salt - 28g (2 tbsp) sugar - 2-3 cups cornmeal, for dusting (sub coarse semolina)
Make Dough 1. In a large mixing bowl, stir together water and Greek yogurt. It’s okay if some lumps remain. Add in oil and instant yeast, followed by flour. Finally, add salt and sugar on top of the flour. 2. Use a spatula to stir the dough together until it has mostly come together then switch to hands. Lightly knead together until no dry flour remains. Work out any hard lumps of dry flour. The dough will still be pretty rough at this point. 3. Cover and rest 30 minutes.
Stretch & Fold (x3) 1. Perform “Stretch & Fold #1”: use wet hands to grab one side of the dough from against the bowl and stretch the dough up gently until it resists pulling but doesn’t tear. Fold the stretched dough over the rest of the dough. Rotate the bowl 90 degrees and repeat 3 more times going all the way around the bowl. Cover and rest 30 minutes. 2. Repeat the previous step two more times, totalling 3 sets of “Stretch & Folds” over 90 minutes. The dough should become smooth and stretchy. 3. After the last set of folds, cover and rest for 1 hour at room temperature. Then, place in the fridge.
Cold Proof 1. Rest dough in fridge for 10 hours minimum, up to 48 hours.
Shape & Second Proof 1. When ready to cook English Muffins, prepare a half sheet pan by generously dusting with cornmeal. Take rested dough out of the fridge. From this point, work quickly to shape the muffins because cold dough is less sticky and easier to work with. 2. Scrape dough onto the counter and divide into 12 equal portions. 3. Using damp hands to prevent sticking, shape each portion of dough by patting out, turning over, pinching together, turning over again, and rolling with cupped hands into a smooth ball. Place dough balls onto cornmeal lined tray (in a 3x4 grid), leaving 2” between each dough ball. 4. Dust cornmeal over the tops of all the dough balls. Cover tightly with plastic wrap or a damp kitchen towel. Proof in a warm place for 1.5-2 hours, until the dough balls are puffed up and about doubled in size.
Cook Muffins 1. Pre-heat a 12” non-stick skillet over medium-low heat for 3 minutes. 2. Cook 4 muffins at a time. Transfer dough balls to the skillet with 2 spatulas, using the cornmeal to prevent dough sticking to the spatulas. Once the dough is in the pan, give each dough ball a few firm smacks with a spatula to slightly flatten out. 3. Cover with a lid and cook until the bottoms are lightly golden, about 6 minutes. Halfway through, remove the lid and gently rotate the muffins with hands or spatulas for even cooking. Replace the lid and keep cooking. 4. When the bottoms are lightly golden, use spatulas to flip over each muffin. Once flipped, give each a few more smacks with a spatula. 5. Keep cooking, with lid off, until the other side is also lightly golden, about 6 minutes, rotating half way. 6. When both sides are evenly golden brown and the muffins have been in the skillet for ~12 minutes total, check for doneness by taking internal temperature which should be at least 200F (93C). Transfer to a wire rack to cool then move on to the next batch. 7. Let muffins cool for at least 15 minutes on the tray. Then, split in half by poking all the way around the circumference of a muffin with a fork, then pulling the two perforated halves apart. Toast until crispy and spread with lots of butter. Enjoy!
- Leftover muffins should be split in half, then put back together, sealed tightly, and frozen. When ready to eat, pull out frozen muffin and divide the two halves. Cook in a toaster until golden and crisp, which may take slightly longer than usual. They’ll taste as good as if they were fresh!

With three ingredients only, milk is transformed into a silky pudding -- without using any eggs or starch. It's pretty much magic!
Really, what's happening is there's a naturally occurring compound in ginger called zingipain. It's a protease, meaning that it denatures proteins. When zingipain encounters milk, it unravels the milk proteins, causing the milk to coagulate and thicken into a pudding-like consistency.
For this reaction to occur correctly, the milk must be heated to 80C (175F) and then poured immediately. Then, do not disturb the bowls and wait 7 minutes. This time is crucial to allow the milk to coagulate properly.
Brown sugar (either solid or in syrup form) is the classic topping for this dessert. I also like eating it with honey!
Ingredients - 1 1/2 cups (360ml) milk (whole, skim, 1%, etc) - 2 tbsp sugar - 4” ginger (unpeeled) - Dark brown sugar or honey, for topping (optional)
Equipment - 2 small serving bowls - Grater (fine or microplane) - Fine mesh sieve - Instant read thermometer
1. Finely grate ginger. Press through sieve to extract juice. Add 4 tsp ginger juice to each serving bowl. 2. In a small pot, combine milk and sugar. Heat over medium heat, stirring occasionally, until mixture reaches 80C (175F). If the milk exceeds temp, let it cool slightly back to 80C. Do not let milk boil. 3. When at 80C, immediately pour milk into serving bowls, dividing evenly between the two. Pour from a height so that the milk agitates the ginger juice and mixes evenly. Do not stir after pouring. This interferes with the coagulating process. 4. Let custard sit, undisturbed, for 7 minutes. 5. Top with brown sugar and eat while still warm!

Rolling - 1/2 cup granulated sugar - 1/2 cup powdered sugar
Method 1. Add chocolate and butter to a large microwave safe bowl. Microwave in 30s increments, stirring in between, until melted. 2. Add in brown sugar. Stir to combine. 3. Stir in eggs, one at a time. 4. Add vanilla and instant coffee. Add baking powder, baking soda, salt. Mix together thoroughly. 5. Sift in cocoa. Start stirring in the middle then working cocoa in from the sides until combined. 6. Add in flour. Fold together until no dry flour left. 7. Fold in any flavourings (if using). 8. Let rest 15 minutes at room temp. 9. Pre-heat oven to 325F with rack in the centre. Prepare two rimmed plates or shallow bowls. Add granulated sugar to one plate and powdered sugar to the other. 10. Use either 3 tbsp or 2 tbsp cookie scoop to form cookies. Coat in granulated sugar first, then thoroughly dust with powdered sugar. Alternatively, use a tablespoon measure to scoop dough and roll with damp hands. 11. Place on parchment lined tray, spacing out appropriately. 12. Bake until cracked and just set around the edges but still soft in the middle, about 9-11 minutes. 13. Let cool completely on the tray before serving. The cookies will firm up as they cool.

Triple Garlic Butter - 2 tsp garlic powder - 2 tsp water - 6 cloves garlic (2 in powder, 4 in butter) - 140g (3/4 cup) butter, divided (70g + 70g) - 1 tsp kosher salt - ~1/2 cup (50g) parmesan, finely grated
1. Make Tangzhong by adding bread flour and milk to a microwave safe bowl. Whisk until mixture is smooth. Microwave in 20s increments, whisking vigorously each time, until the mixture becomes a thick pudding. This should only take 3-4 microwave cycles. 2. Add cold milk to the cooked Tangzhong mixture. Add half the milk at a time, whisking until smooth. Add egg and instant yeast to the mixture. Whisk until combined then pour into stand mixer bowl. 3. On top of the Tangzhong mixture, add bread flour, sugar, and salt. Use dough hook attachment to stir everything together by hand, aiming to hydrate the flour. Fit the mixer with the dough hook and knead mixture on medium-low (Kitchenaid speed 3) for 5 minutes. The dough should begin to look smooth and supple at this point. 4. Increase mixer speed to medium and gradually add softened butter. The butter won't incorporate at first. Keep mixing and the butter will combine eventually. As needed, use a rubber spatula to scrape out the bottom of the bowl and re-arrange dough + butter to help with mixing. After the butter has fully incorporated, knead for 12-16 minutes. The dough should become very smooth and elastic. It should also pass the windowpane test. 5. Turn dough out of bowl. Knead and shape into smooth ball. Lightly oil a large clean bowl. Place dough into the oiled bowl, cover the bowl (plastic wrap or damp towel), and keep in a warm place to proof until doubled in size, 30-50 minutes, temperature dependent. 6. Meanwhile, combine garlic powder and 2 tsp water. Grate in 2 cloves of garlic and add salt. Place half the butter with the garlic powder and the other half in a microwave safe bowl. Microwave the butter (without garlic powder) for 30s until melted. Grate 4 cloves of garlic into melted butter. Stir, cover with a plate, microwave for 1 minute, stirring halfway through. Pour melted garlic butter over the solid butter in the other bowl. Stir until all the butter has melted. Set aside until thickened to a spreadable consistency. 7. When the dough has doubled in size, lightly dust with flour then deflate the dough. Dust work surface with flour. Turn out dough and pat into large rectangle. Lightly dust top of dough with flour. Use a rolling pin to roll the dough out to a 18" x 12" (45 cm x 30 cm) rectangle with the long side facing you. 8. Spread 2/3 of the garlic butter over the the dough, right to the edges. Leave the rest for brushing on top later. Grate parmesan all over the butter. 9. Fold the dough in half lengthwise (hotdog fold). Use a pizza cutter to cut the dough into 1.5" wide (~4 cm) strips. There should be 12 strips. 10. Pick up each strip, lightly stretch, wrap the entire length around your fingers, then tuck the end in the centre of the coil, creating a light knot (refer to video for visual guide). 11. Place rolls onto two parchment lined trays, spacing out appropriately. Cover lightly (plastic wrap or damp towel) and keep in a warm spot to proof until the rolls are puffed but not quite doubled in size. 45 minutes to 1 hour. 12. Pre-heat oven to 350F with racks in top 1/3 and bottom 1/3 of oven. 13. Right before baking, melt remaining garlic butter and brush the top of each roll. Use 1/2 the butter, leaving the rest for after baking. 14. Bake for 15-20 minutes until puffed up, browned around the edges, and golden. The internal temp should be around 195F (90C). 15. Remove from oven and immediately lightly brush each roll with the remaining garlic butter mixture. If there's not enough garlic butter remaining, supplement with additional 2-3 tbsp melted butter.

- 70g (5 tbsp) veg oil - 100g (1 cup minus 2 Tbsp) cake flour - 100g (100 mL) milk - 2 tsp vanilla - 6 large eggs (300g), ~50g each without shell - 1/4 tsp cream of tartar (sub 1/2 teaspoon lemon juice or white vinegar) - 100g (1/2 cup) sugar, added in 3 additions
Cake Pan
- 6" or 8" with removable bottom, no grease of flour (preferable) or non-removable bottom (see note for prep instructions)
Method
1. Preheat oven to 300F 2. In a large bowl, whisk together cake flour and oil. Add milk and vanilla. Whisk with a side-to-side motion until mostly combined. It's okay to have some lumps remaining. 3. Separate eggs, adding yolks directly to bowl with cake flour + oil, and eggs to a large clean mixing bowl. 4. Whisk egg yolks into the batter, again with a side-to-side motion, until the batter is smooth and forms a ribbon when dropped from the whisk. If it's too thick, add up to 2 tsp milk to thin out 5. Add cream of tartar to egg whites. Whip on high speed until white and foamy. Add in first 1/3 of sugar. Keep whipping on high speed until the egg holds a very very soft peak. Add in next 1/3 of sugar. Switch to medium speed. Whip until a soft floppy peak. Add in last 1/3 of sugar. Switch to medium-low speed. Whip until eggs hold a peak with a stiff base but a flexible tip. 6. Add 1/3 of the egg whites to the batter. Fold in with rubber spatula. Add batter back to rest of the egg whites. Gently fold until there are no streaks of white left in the batter. 7. Pour batter into a cake pan. Tap cake pan on counter a few times to get rid of air bubbles. Swirl a toothpick through the batter to further remove large air bubbles. 8. Bake at 300F for 50-55 minutes, until the top has cracked and turned a light golden. To test for doneness, gently press the top of the cake with a finger. It should not feel wet and should lightly spring back, though it might not spring back all the way. You may still hear sounds of the foam compressing when you press down. That's totally normal. Insert a bamboo skewer into the centre of the cake and it should come out mostly clean, maybe with one or two crumbs. 9. Immediate drop the cake pan twice on the counter to release excess hot air / steam. Quickly invert the pan onto two upside down bowls or a cooling rack. Let the cake cool for at least 90 minutes before removing from pan. Can also be left at room temperature overnight to cool. 10. Once cooled, press around the top of the cake to release from the sides. Run a thin knife all the way around the perimeter of the cake, pressing tightly against the inside of the cake pan. Pop up the bottom of the cake pan. Press around bottom edge of cake to release from base plate. 11. Serve plain or make into Strawberry Shortcake.
Using a non-removable bottom pan:
To prep a non-removable bottom pan, lightly brush only the inside bottom of the pan with a few drops of oil. Add 1/8 teaspoon flour and shake to distribute evenly. Discard excess flour. Proceed with recipe as usual.
To remove cake from non-removable bottom pan:
After running a knife around the perimeter of the cake, reach in between the cake and the side of the pan and press the cake in towards the centre. Repeat around the whole cake. This should detach the cake enough from the bottom for it to come out once the pan is inverted.

Oat Bar - 175g (1 1/4 cups) AP flour - 160g (1 1/4 cup)rolled oats (can sub instant oats but the texture will be slightly different) - 150g (3/4 cup) brown sugar, packed - 1/2 teaspoon baking soda - 1 tsp baking powder - 1/4 teaspoon salt (table salt or fine sea salt) - 12 tablespoons (170g) unsalted butter, melted - 170g (1 cup) bitter-sweet chocolate chips (or chocolate chunks)
Make Miso Caramel 1. In a heavy-bottomed saucepan, place sugar, water, and corn syrup. Cook over medium heat and stir just until the sugar has dissolved. Cover with the lid and cook for 5 minutes. Then, take off the lid and keep on boiling. From this point on, do not stir the caramel, but swirl the pan to even out the cooking. Continue cooking while not stirring, until the sugar turns a rich amber colour. The pan may begin to start slightly smoking. 2. Add in butter and stir to combine. Cook for one minute until you can smell browned butter. Add in cream and stir. Be careful — the caramel will bubble and steam. Stir until bubbling subsides and cook for one more minute. 3. Turn off the heat and immediately and add vanilla. Then, add in miso paste. Stir or whisk until fully combine. Whisk in flour. 4. Set caramel sauce aside and let cool while making the rest of the bar.
Make Bar 1. Pre-heat oven to 350F (175C). Line a 9" x 9" pan with greased aluminum foil. 2. In a large bowl, combine flour, oats, brown sugar, baking soda, baking powder, and salt. Stir or whisk to combine well. Drizzle in melted butter and stir until evenly combined. The mixture will be thick and lumpy. 3. Add roughly half of mixture to the prepared pan. Use your hands or a spatula to press the mixture into an even layer. 4. Bake for 10 minutes. 5. Take the bar out of the oven and evenly sprinkle with chocolate chips. Pour all of the miso caramel over the chocolate. Use a spatula to spread out caramel. Crumble remaining oat mixture evenly over top. 6. Return to oven and bake until the top is golden brown and the caramel is bubbling, around 20 minutes. 7. Remove from oven and let cool COMPLETELY before slicing. At least 4 hours at room temp (preferably overnight) or 2 hours in the fridge. If the bar is not cooled before slicing, the caramel will not be set, and you will end up with a crumbly melty mess. Trust me, the wait is worth it. 8. Carefully peel away foil. Use a sharp knife to slice into 16 squares (4x4).

Make Meringue 1. Trace 6" circle onto a parchment sheet that fits into a baking tray. 2. Pre-heat oven to 300F (150C). 3. Wipe mixer bowl and whip clean with lemon juice or vinegar to remove fat. 4. Add egg whites to mixer bowl. 5. Whip eggs on high speed until soft peeks 6. Lower speed to medium-high and gradually add in sugar, one tablespoon at a time. 7. After all the sugar is in, scrape bowl down, then keep whipping at medium-high until meringue is shiny, reaches stiff peaks, and all the sugar has dissolved. Rub meringue between two fingers to feel for any sugar granules. If you still feel sugar, keep whipping until all the sugar is dissolved. 8. Add balsamic vinegar. Whip on medium until combined. 9. Sift cocoa powder, cornstarch, and instant coffee into mixer bowl. Use spatula to gently fold until evenly combined. 10. Use some meringue to glue down parchment sheet on the baking tray, making sure pencil side is down. Dump meringue onto tray, within the circle. 11. Use spatula to shape meringue into a flat mound, about 6" in diameter. The mound should have a depressed centre and raised sides. Leave it messy or smooth it out, whatever you prefer. 12. Place two baking sheets in oven. Immediately drop temperature to 250F (120C). 13. Bake for about 90 minutes. When ready, the outside of the meringue should be dry and crisp but still soft in the centre. 14. Turn the oven off and leave meringue in oven with the door slightly cracked (use a wooden spoon to prop door slightly ajar if needed). Let meringue cool completely in the oven, at 90 minutes. 15. If not serving immediately, store fully cooled meringue in an airtight container for up to 3 days.
Make Coffee Caramel 1. Make sure you have all your ingredients measured out and next to the stove. 2. Warm up cream in microwave, about 45s. Do not overheat and boil the cream. Add instant coffee and salt to the cream. Stir until dissolved. 3. Place a large 12" stainless steel skillet over medium-high heat. Alternatively, use a stainless steel pot with raised sides. Add 1/2 sugar to pan. 4. Cook sugar, without stirring, until parts of it start melting. Spoon remaining sugar over melted parts until all the sugar is gone. 5. Use a spatula to stir constantly until all of the sugar has melted and the caramel is a golden colour. It may start smoking slightly. 6. Immediately add butter and swirl around with spatula until melted. Cook for about 1 minute, until the bubbling dies down. 7. Slowly add in cream. Bring back to boil. Cook for 1 minute, stirring the entire time. Turn off the heat. 8. Let it cool in pan before transferring to a pourable container. If it thickens too much, before using, warm in microwave in 10s increments stirring in between.
Make Whipped Cream 1. Add whipping cream, sugar, and salt to a stand mixer bowl. Whip until soft - medium peak consistency. 2. Add in greek yogurt and whip until medium - stiff peaks.
Assemble (just before serving) 1. Cut bananas in half and each half into three pieces on a bias. Place cut side up on metal tray. Generously sprinkle bananas with sugar. Use kitchen torch to melt and caramelize the sugar as you would a creme brûlée. 2. Transfer fully cooled meringue onto serving platter. Add whipped cream onto meringue and spread so that it covers the top of the meringue, adding nice dips and whirls. Drizzle over as much coffee caramel as you'd like, letting it spill over the sides. Scatter over chopped peanuts and shaved chocolate. Place on brûléed bananas. 3. Serve as soon as possible. Store any leftovers covered in the fridge.

- 1/2 cup (113g) neutral oil, such as canola, sunflower, peanut, etc. - 4 slices ginger - 2 scallions, cut into 2" segments - 1 star anise (optional) - 1 dried bay leaf (optional) - 1 small cinnamon stick (optional) - 3 tbsp Sichuan chili flakes (sub Gochugaru or Italian crushed red pepper flake) - 1 tbsp toasted white sesame seeds - 1/8 tsp five spice powder (optional) - 1 tsp Sichuan peppercorn powder (sub 1/2 tsp freshly ground black pepper + 1/8 tsp ground coriander)
Sauce
- 1 tbsp Chinese black vinegar (sub balsamic vinegar) - 1/2 tbsp (1 1/2 tsp) sugar - 1 tbsp soy sauce - 1/2 tsp kosher salt (sub 1/4 tsp table salt) - 4 tbsp chili oil + 1 tbsp sediment (make small-batch chilli oil or use your favourite) - 1/4 tsp msg (optional) - 1 tsp Sichuan peppercorn powder (sub 1/2 tsp fresh ground black pepper + 1/8 tsp ground coriander) - 1 tbsp Chinese sesame paste (sub 2 tsp tahini or peanut butter + 1 tsp toasted sesame oil)
Garnish
- 1/2 English cucumber, julienned - 1 scallion, cut on a bias - Toasted sesame seeds
Poach Chicken 1. In a medium sized saucepan, add chicken, ginger, and scallion in a medium sized saucepan. Add enough cold water to submerge chicken by 1" of water. 2. Place on stove over medium heat. Keep cooking with the lid off, without stirring, until just barely simmering. The water should measure around 170-190F. 3. Flip chicken pieces over, turn off heat, and cover the pot. Let chicken sit in hot water for 8-10 minutes, until the internal temperature reads 165F for chicken thighs or 155F for chicken breast. 4. Remove chicken from water and set aside to cool.
Small-batch Chilli Oil 1. Toast chilli flake in microwave by placing on a small plate and spreading into an even layer. Cook in microwave on high power for two 10 second increments, stirring in between. The should start smelling aromatic. 2. In a medium heat-proof bowl, combine toasted chilli flake, peppercorn powder (or use black pepper + coriander, which will approximate the flavour but not the numbing sensation), sesame seeds, and five spice powder. 3. In a small saucepan, add oil, ginger, scallion, and if using, star anise, bay leaf, and cinnamon stick. 4. Place on stove over medium heat. Cook, stirring occasionally, until the ginger is golden and scallions are starting to turn brown. Turn off heat and let oil cool for 3 minutes. 5. After 3 mins, use a strainer to remove aromatics from the hot oil. The oil should measure about 155-165F at this point. 6. Immediately pour 1/3 of the oil over chilli flake mixture while stirring. After ~30 seconds, pour another 1/3 of the oil into the chilli flake while stirring. Then wait another 30 seconds before pouring the remainder of the oil. 7. Let chilli oil cool and fully infuse. Cover and store at room temperature. It will taste even better the next day.
Make Sauce 1. In a medium bowl, add vinegar and sugar. Mix until the sugar is pretty much fully dissolved. 2. Add in soy sauce and salt. Stir to combine. Taste the mixture and adjust. 3. Then, add in chilli oil (4 tbsp oil + 1 tbsp sediment), Sichuan peppercorn, and MSG. If not using MSG, add another 1/8 tsp salt. Taste and adjust. 4. Finally, add in Chinese sesame paste. Stir vigorously until the sesame paste is fully emulsified into the sauce. The sesame paste might lump up slightly. But if you keep whisking, everything will come together.
Assemble
1. Julienne cucumbers by diagonally slicing into long slices and then cutting the slices into strips. Slice one scallion on a bias for garnish. 2. On the same cutting board, lightly pound each piece of chicken with a rolling pin to loosen the fibres. 3. Shred the chicken with your hands, trying to preserve long strands of chicken. You can also shred with two forks which will be quicker, but the texture won't be as nice. 4. Arrange cucumbers on the bottom of your serving plate. Place chicken over the cucumber base and arrange so that some cucumber shows around the side and the chicken is in an "attractive mound." 5. Pour sauce all over the chicken. Finish with a sprinkle of sesame seeds and sliced scallions.

Ultimate Chocolate Chip Cookie Recipe
Ingredients: - 150g (2/3 cup) unsalted butter (if not weighing, melt butter first then measure in liquid measure cup) - 30g (2 tbsp) cold water - 100g (1/2 cup) sugar - 100g (1/2 cup packed) dark brown sugar (light will also work) - 1 large egg, fridge cold - 1 tbsp vanilla extract - 1 tsp baking soda - 1 tsp kosher salt (use 1/2 tsp for table salt) - 175g (1 1/4 cup) all-purpose flour - 150g (3/4 cup) semi-sweet chocolate chips (sub any chocolate: bitter-sweet or dark chips, chunks, chopped bars, etc) - Flaky sea salt, for finishing (sub kosher salt, coarse sea salt)
Brown Butter 1. Place butter in a medium stainless teel saucepan. Cook over medium heat, swirling every so often to melt evenly. The butter will start foaming, steaming, and gently popping. This is the water in the butter evaporating. 2. Once the noise quiets down and the foam subsides a little, most of the water has evaporated. At this point, stir constantly, scraping the bottom of the pot so that the milk solids do not stick. 3. Keep cooking until you see light brown bits at the bottom of the pan and can clearly smell a deeply buttery and nutty aroma. 4. Turn off heat and immediately add the 2 tbsp cold water to the hot browned butter. The butter will sizzle and steam. Transfer butter to a mixing bowl (metal bowl will help with cooling) and set aside for 5-10 minutes to cool.
Make Dough 1. After the butter has cooled slightly but the bowl is still warm to the touch, add in brown and regular sugar. Whisk to fully combine. 2. Add in egg and vanilla extract. Whisk vigorously for 1 minute until the mixture lightens in colour and thickens slightly. 3. Add baking soda and salt. Whisk for 15 seconds to distribute evenly. 4. Add flour to bowl and use spatula to stir and fold until the batter is even and there are no dry patches of flour. 5. Add chocolate chips and fold to distribute evenly.
Shape & Chill 1. Use large #20 cookie scoop to portion into dough balls. If rolling by hand, aim for around golf ball size or 3 tbsp (just under 1/4 cup). The dough will be slightly soft and sticky but still shapeable into rough balls. Use slightly wet hands to help with sticking (but honestly just embrace the stickiness and power through haha). If the dough is too soft to work with, chill for 30 minutes and try again. The recipe makes roughly 12 golf ball sized dough balls (but sometimes I get 11, depending on how much of the cookie dough I snack on). 2. Place all the dough balls close together on a lined cookie sheet. Cover and chill in fridge for 30 minutes minimum, up to 48 hours. The dough can also be frozen. After the balls harden in the fridge, transfer to a freezer bag and keep up to 3 months. Bake straight from frozen but add 2-3 minutes to the baking time.
Bake 1. Pre-heat oven to 350F (175C) with rack in the centre. 2. Place max 6 frozen dough balls on one lined cookie sheet. Sprinkle lightly with flaky salt. 3. Bake one tray at a time for 10-12 minutes at 350F. When ready, the outside of the cookies will be lightly browned and crinkly. The centre will be blonde and puffed up. 4. Cool on tray for 5-10 minutes then transfer to wire rack to cool completely before serving.
