I have always had a deep love for bread 🍞 My mom taught me at a young age how to make bread and have been making it since I was 12 years old !
One of the biggest reasons I started my Instagram was to bring back the love of BREAD ! I couldn’t hear anymore that bread was bad carbs and we can’t eat it !!!!

MUFFINS:
1 egg
½ cup milk
¼ cup oil or melted butter
½ cup sugar
2 tsp. baking powder
½ teaspoon French gray coarse salt
1 ¼ cups White Kamut Flour or 1 ½ cups all purpose flour
1 cup grated honey crisp apple
1 teaspoon ground cinnamon
Add 1/2 cup of discard
( if using .. makes them even more moist )
1. In a bowl mix together until moist. Batter will still be lumpy.
2. Spoon mixture into greased muffin tins and top with Streusel.
STRUSEL:
¼ cup butter, softened
¼ cup sugar
¼ cup brown sugar
1/3 cup White Kamut Flour or ½ cup All-purpose white flour
1 ½ teaspoons ground cinnamon
1. In a bowl mix all streusel ingredients. Once combined, sprinkle on top of each muffin.
2. Bake at 375 for 20 minutes
Great to freeze and have on hand for breakfast.

DAVID'S BAVARIAN PRETZELS
1 tsp sugar
4 tsp active dry yeast
1 3.4 c warm water
5 c White Kamut flour
1/2 c sugar
1 1/2 tsp French gray course salt
1 Tbsp canola or olive oil
1 Tbs honey
1/4 - 1/2 c warm water if needed
For Bath:
1/2 c baking soda and 4 c Hot tap water
French gray salt to sprinkle on top
1- Put 1 tsp sugar in a small bowl. Add yeast and 1 3/4 c warm water. Stir gently. Cover and let rise until foamy.
2- In a large bowl or electric mixer, add flour, sugar and salt. Mix. Add yeast mixture, oil, and honey. Mix thoroughly with a dough hook or wooden spoon. Add up to 1/2 c more warm water as needed to get a firm dough consistency. Turn out onto lightly floured surface and knead by hand or with mixer for 7-8 minutes.
3- Put a few drops of olive oil in a large bowl and place dough in it, turning over once. Cover with plastic sprayed with cooking spray. Let rise for 1 hour.
4- Preheat oven to 450º. Push dough out on counter to about 12x18 inches using palms or rolling pin. Cut into 10-12 pieces. Roll each piece by hand into a rop about 20 inches long. Shape into a pretzel by crossing dough left over right, then twist and pinch down to secure the ends. Set aside on counter. Continue shaping the rest of dough into pretzels.
5- Spray a baking sheet with oil. In a 9x13 inch pan, mix 4 coups hot water and baking soda until dissolved. Immediately dunk each pretzel into warm soda water. Let drip back into bowl for 2 seconds and place on baking sheet. Sprinkle with French gray coarse salt as desired. Place in oven and bake for 8 minutes (or until golden brown), then brush on melted butter. Serve hot or place on cooling rack to cool.

London’s Brownies 🍫
2 sticks of butter (salted)
1 1/2 cup granulated sugar
Melt in a saucepan
In a seperate bowl mix
2 eggs 1 egg yolk
Then add the melted butter mixture
Add slightly under 1 cup Kamut flour or if using All purpose 1 cup of flour !
1/2 tsp baking powder
1 tsp French salt
Combine and add to egg mixture
1 cup cocoa powder
2 tsp vanilla extract
1 cup semi sweet chocolate chips
Mix well
Grease a 9x13 and bake at 350 degrees for 30
Minutes! Check with toothpick , when toothpick still has crumb on it remove from oven !
CHOCOLATE GLAZE
1 1/2 cup powdered sugar
4 tbs cocoa powder
1-2 tablespoons water
( add more water for desired consistency )
Spread on warm brownies and let cool in the fridge 😋

RECIPE
Oatmeal Cake with Caramel Coconut Glaze
Ingredients
1 1/2 cups water
1 cup Kamut rolled or old-fashioned rolled oats
1 1/4 cups white Kamut Flour or 1 1/2 cups all purpose
1 teaspoon baking soda
1 teaspoon French gray salt
3/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 cup 1 stick butter, softened
1 cup granulated sugar
1 cup firmly packed brown sugar
1 teaspoon vanilla extract
2 eggsCaramel Coconut Glaze
½ cup butter (1 stick)1 cup firmly packed brown sugar2 to 3 tablespoons milk3/4 cup coconut
3/4 chopped pecans or walnuts optional
Directions
1.Boil the water in a small saucepan. Stir in the oats. Cover and let stand for 20 minutes. ( if using the Kamut rolled you might need to cook a little longer to get the desired texture you want 🙌🏻🌾)
2.Preheat the oven to 350 degrees. Grease a 9 x 13 baking pan.
3. Sift the flour, baking soda, salt, cinnamon, and nutmeg onto a square of wax paper (or mix in a bowl). Set aside.
4. Beat the butter, sugar, and brown sugar in a large bowl. Add vanilla and eggs and beat well. Stir in the oats mixture. Stir in the dry ingredients and mix well.
5. Scrape the batter into the prepared pan and bake 45 to 55 minutes, until a toothpick inserted in the center comes out clean.
6. Mix the glaze and spread it on the warm cake.
7. Caramel Coconut Glaze
8. Melt the butter in a medium saucepan. Add the brown sugar and milk. Bring to a boil; boil for 1 minute. Remove from the heat and add the coconut and nuts, if using.

1 3/4 cups water
2 Tablespoons sugar
1 1/2 teaspoon yeast
3-3/4- 4 cups flour Kamut ( use more of using all purpose )
1 teaspoon French salt
If doing cinnamon
1/2 cup sugar 2 tablespoons cinnamon
Instructions :
* Mix water, sugar, yeast in a bowl cover with plastic wrap and sit for 10min
* Large bowl add Flour, French Salt and mix in yeast mixture and lightly mix with dough hook
* Knead 5-6 min till smooth. Place in a greased bowl, cover, and let rise 1 hour room temperature
* Preheat over 375 degrees F
* After 1 hour Punch down and then add the cinnamon & sugar and knead into the dough sprinkle in as much as you want ( mix 1/2 cup sugar with 2 tablespoons cinnamon , save some for the top)
* From bottom tightly roll into a loaf
* Place into a greased loaf pan and rise for 15 min
* Get a Large pot of water bring to a boil
* Remove dough from loaf pan and boil top and bottom roughly 1 min depending on the size you do. For a 9x5in loaf.
* Place boiled loaf back into loaf pan
egg wash and put more cinnamon & sugar on top 😋
*bake 25- 35 min , make sure the bottoms are light brown !!
*variations - Can also do everything bagel seasoning on top ( super delish ) ! Make any flavor you want 🙌🏻💥

Using a 5 minute pizza crust 💥
Ingredients
1 tablespoon active dry yeast
1 cup warm 105-115 degrees
2 tablespoons olive oil
1 tablespoon honey
1/4 teaspoon French salt
2 ½ cups White Kamut flour (or 3 to 4 cups all-purpose flour)
Directions
1.Mix the yeast and water in a small bowl, cover, and let stand until foamy, 5 to 10 minutes.
2.Mix the oil, honey, salt, and yeast mixture in a large mixing bowl. Add I cup of flour at a time, up to 3 cups, mixing well after each addition. You may have to stir in the third cup of flour by hand depending on your machine. Or mix in all 3 cups of flour by hand with a wooden spoon.
3. If the dough seems too wet, mix in more flour, 1/4 cup at a time, until the dough is soft. Turn the dough onto a floured surface and knead in more flour, 1/4 cup at a time, until the dough is moderately stiff and somewhat firm to the touch, about 6 minutes.
Blueberry Cream cheese topping 🫐
3/4 cup sugar
1 tsp vanilla
1 8 oz cream cheese (softened)
1 lb pizza dough
1 pint blueberries
1/2 cup sugar with 2 tsp cinnamon mix together
Roll out pizza and add as much topping as you want ✨😍 can make more than 1 pizza !!
Make on pizza stone that’s on the bottom rack in your oven and turn your oven as hot as it will go ! Mine was set at 575 bake until light brown and enjoy

Recipe :
3 cups warm (105-115 degrees water, divided)
3 tablespoons active dry yeast
4 teaspoons sugar (divided)
4 1/2 cups all-purpose Kamut flour
2 teaspoons French salt
Make the filling :
1/2 cup sugar
1/2 cup brown sugar
2 tsp cinnamon
1 stick of butter soften to spread on the 4 baguettes
Icing :
1 tablespoon of softened butter
1 cup of powder sugar
6-8 tablespoons heavy cream ( keep adding cream to get your desired consistency)
1- In a small bow, combine 1 cup of the water, the yeast, and 2 teaspoon of the sugar. Stir just to combine and cover with plastic wrap or a plate. Let the mixture stand about 5 minutes or until bubble or foamy.
2-In a large mixing bowl or the bowl of heavy-duty mixer or food processor, blend the flour, salt, the remaining 2 teaspoon of sugar, and the yeast mixture. Gradually add water, up to the remaining 1 cup, and mix until the dough forms a smooth ball that is not too sticky to handle. (If the dough ends up too sticky, add a little more Kamut flour.) Turn the dough onto a floured surface and knead briefly, until the dough is smooth and elastic.
3- Cut the dough in half and shape the halves into 4 baguettes. Roll out with a rolling pin , spread on some butter and the cinnamon / sugar mixture !!!! Then roll up the baguette and put into your greased baguette pans ( these are our own Food Nanny Pans more coming soon💯💯💯💯💯💯 ) and place the loaves in the pan.
Score 3 slits down the baguette , cover with a dish towel, and let rise in a warm place about 20 minutes, or until doubled in bulk.
Bake at 450 degrees for 15-20 mins until the bottoms are light brown !!!!! Put your baguette pans on a cookie sheet so it didn’t spill out in your oven !!!!!!
Put on a cooking rack once it’s cool add the icing and enjoy 😋😋😋❌⭕️
So good on any sandwich you make on homemade Kamut bread 🍞 Then it’s insane on cheese and crackers ✨💥
Jalapeno Cranberry Freezer Jam Spread
3 cups (about 1 ½ lbs.) fresh cranberries rinsed, ground
3 cups apples (about 5 medium) any kind, cored, skins removed, ground
2 ½ -3 Jalapeno peppers, seeds removed, ground
1 1.75 oz. package Fruit Pectin (I use Sure Jell or MC)
8 ½ cups sugar
9-12 half pint containers, glass or plastic with lids
1- Grind the fruit and peppers in a food processor to make 6 cups. Pour into a large pan, add the pectin, stir and bring to a boil.
2-Add sugar, stirring well and bring to a full boil again. Pour the hot sauce in jars or plastic tubs. I have used both. Put the lids on and let sit out on the counter over night. Freeze. Will keep for months.❌⭕️❌⭕️

Recipe
DAVID’S BAVARIAN PRETZELS
MAKES 10-12 medium | 2 dozen bite-size | TIME 1.5 hrs | BAKE 450˚
1 teaspoon sugar
4 teaspoons active dry yeast
1¾ cups warm water (between 100-110˚)
5 cups White Kamut flour
½ cup sugar
1½ teaspoons French gray coarse salt
1 Tablespoon canola or olive oil
1 Tablespoon honey
¼-½ cup warm water, if needed
For bath: ½ cup baking soda &
4 cups hot tap water
French gray salt for sprinkling over pretzels
1- Put 1 teaspoon of sugar in a small bowl. Add yeast and 1¾ cups warm water. Stir gently.
Cover and let rise until foamy.
2- In a large bowl or electric mixer, add flour, sugar and salt. Mix. Add yeast mixture, oil and
honey. Mix thoroughly with dough hook or wooden spoon. Add up to ½ cup more warm

KAMUT CHOCOLATE TART
MAKES one 11x1 - inch tart | TIME 40 mins | BAKE 400°
TART CRUST
Makes enough for 2 tart crusts (Freeze half dough or bake both and freeze one for later)
2¼ cups White Kamut flour
1 teaspoon sugar
⅛ teaspoon French gray coarse salt
1 cup (2 sticks) chilled butter, cut into small pieces ¼-¾ cups ice water
FILLING
*ingredients listed on next page
Plan ahead: Make tart and refrigerate for 4 hours before serving. Or prepare one day ahead.
Will need an 11x1 inch round tart pan with a removable bottom. This tart is worth purchasing the pan for. Will also be able to use with Kamut Fruit Tart found on page 155.
CRUST
1. ��Place rack in the middle of oven. Preheat to 400°. In a medium bowl, mix flour, sugar and salt together. Slice cold butter into small pieces and add to flour mixture. With a pastry blender, mix butter and flour mixture. (May use fingers). When consistency is that of coarse crumbs, slowly add ice water, 3 Tablespoons at a time. Stir and when dough holds together nicely, (without being wet or sticky), there is enough water. Divide dough in half. (If not using all, wrap in plastic wrap or put in freezer bags to freeze. Freeze for up to 2 months.)
2. ��Turn dough out onto a lightly floured surface. Roll into a 12 inch round, using a little more flour if needed. Place dough into tart pan, fitting into place and folding down any extra dough into sides of pan.
3. ��Place a regular pie pan on top of crust (helps crust stay in place. Spray bottom of pan with cooking spray with flour so it will not stick to dough and bake at 400° for 25 minutes.
FILLING
Makes enough to fill 1 chocolate tart
1 cup (8oz.) good quality semi-sweet chocolate chips
⅓ cup sugar
2 cups heavy cream
Fleur de Sel salt to taste

1- Put 1 tsp sugar in a small bowl. Add yeast and 1 3/4 c warm water. Stir gently. Cover and let rise until foamy.
2- In a large bowl or electric mixer, add flour, sugar and salt. Mix. Add yeast mixture, oil, and honey. Mix thoroughly with a dough hook or wooden spoon. Add up to 1/2 c more warm water as needed to get a firm dough consistency. Turn out onto lightly floured surface and knead by hand or with mixer for 7-8 minutes.
3- Put a few drops of olive oil in a large bowl and place dough in it, turning over once. Cover with plastic sprayed with cooking spray. Let rise for 1 hour.
4- Preheat oven to 450º. Push dough out on counter to about 12x18 inches using palms or rolling pin. Cut into 10-12 pieces. Roll each piece by hand into a rop about 20 inches long. Shape into a pretzel by crossing dough left over right, then twist and pinch down to secure the ends. Set aside on counter. Continue shaping the rest of dough into pretzels.
5- Spray a baking sheet with oil. In a 9x13 inch pan, mix 4 coups hot water and baking soda until dissolved. Immediately dunk each pretzel into warm soda water. Let drip back into bowl for 2 seconds and place on baking sheet. Sprinkle with French gray coarse salt as desired. Place in oven and bake for 8 minutes (or until golden brown), then brush on melted butter. Serve hot or place on cooling rack to cool.

Recipe :
3 cups warm (105-115 degrees water, divided)
3 tablespoons active dry yeast
4 teaspoons sugar (divided)
4 1/2 cups all-purpose Kamut flour
2 teaspoons French salt
Make the filling :
1/2 cup sugar
1/2 cup brown sugar
2 tsp cinnamon
1 stick of butter soften
Icing :
1 tablespoon of softened butter
1 cup of powder sugar
6-8 tablespoons heavy cream ( keep adding cream to get your desired consistency)
1- In a small bow, combine 1 cup of the water, the yeast, and 2 teaspoon of the sugar. Stir just to combine and cover with plastic wrap or a plate. Let the mixture stand about 5 minutes or until bubble or foamy.
2-In a large mixing bowl or the bowl of heavy-duty mixer or food processor, blend the flour, salt, the remaining 2 teaspoon of sugar, and the yeast mixture. Gradually add water, up to the remaining 1 cup, and mix until the dough forms a smooth ball that is not too sticky to handle. (If the dough ends up too sticky, add a little more Kamut flour.) Turn the dough onto a floured surface and knead briefly, until the dough is smooth and elastic.
3- divide the dough in half ! Roll out one section of the dough like you would making cinnamon rolls . Place the dough on parchment paper! Spread the softened butter and then sprinkle the cinnamon & sugar on top ! Roll out the other dough and place on top ! Make into a heart like in the video and cut into strips and twist !!!
4- bake 450 on a cookie sheet or pizza stone until light brown on the bottoms !!! Around 15 mins !
Take out and when cooled put icing 😋 and enjoy !!!!

2 sticks of butter
1 C of brown sugar
1/2 C of white sugar
2tbsp of vegetable oil
2 Eggs
2tsp of vanilla
1tsp French salt
1tsp baking soda
1tsp baking powder
2tbsp corn starch
2 3/4 -3 cups of Kamut Flour add about 1/4 more of all purpose ** add enough until dough is not sticking to bowl
1 C white chocolate chips
1/2 sleeve of crushed Biscoff cookies
Biscoff cookie butter spread
1. Preheat oven to 350
2. Mix butter I use cold butter with sugars and vegetable oil
3. Add eggs, vanilla, salt, mix till combined
4. Add baking soda, baking powder, cornstarch, and add 1C of flour at a time until the dough is no longer sticking to the bowl.
5. Mix in white chocolate chips and crushed Biscoff cookies.
6. Roll cookie dough into balls and place on a cookie sheet
( take out half way through and smash them down then continue to bake )
7. Bake for 9-10 minutes until slightly golden
8. Melt Biscoff cookie butter and drizzle over the top.

CHOCOLATE CHIP CROISSANT BAGUETTE
Make my baguette dough as usual- only difference, replace 1/4 cup of kamut with cocoa powder and add 3 Tbsp of sugar to the dough!!!!
Knead and at the end knead in 1/2 cup mini chocolate chips 🍫🤤🤤
Make the butter block with 1.5 sticks of room temp butter - chill 10-15 mins, until firm but can still move it back and forth
Roll out dough and put butter inside (like before)
Two double folds - like before
do the folds- roll out the dough to a long rectangle about 1/4 inch thick. Bring the ends in to meet in the middle, then fold over onto itself.
~repeat
- you can chill at this point if the dough is getting warm and the butter hot
- roll out into a big rectangle about 1/4-1/2” thick
-cut in half, then in half again to form four long sticks
Before cutting, smear with Nutella and more mini chocolate chips
Cut and twist and put in my baguette pans ✨🙌🏻
Make sure to put them in a cookie sheet (the butter will come out and make a mess… so the cookie sheet helps that ) !!!
Bake 400 13-15 mins , until the bottoms are light brown
Take out of oven and add glaze while warm
GLAZE RECIPE
2 cups powered sugar & 2 tablespoons milk ( can add more milk if it’s too thick )

BANANA MACADAMIA NUT PANCAKES
WITH COCONUT SYRUP✨🍌☀️
*If using discard do 2 1/2 cups Kamut and 1/2 cup discard
2 2/3 cup Kamut flour or 3 cups all purpose !
½ cup sugar
1 Tablespoon baking powder
1 teaspoon baking soda
½ teaspoon salt
cup macadamia nuts, chopped
3¼ cups buttermilk
½ cup butter, melted 4 eggs
2 teaspoons vanilla
2 bananas, chopped
Oil for the griddle
Coconut Syrup:
1 13.5 oz. can coconut milk
1½ Tablespoons cornstarch
2 cups light corn syrup
½ cup sugar
½ cup shredded coconut
Instructions:
1. In a small bowl mix the flour, sugar, baking powder, baking soda, salt and nuts together. Set aside.
2. In another small bowl whisk together the buttermilk, melted butter, eggs and vanilla. Add this to the dry ingredients. Mix until combined.
3.Stir in the chopped bananas.
4.Wipe the griddle or frying pan with a little oil and fry on a hot griddle about 360°. Turn the pancake when you see the little bubbles come up and start to break. Pancakes should be golden brown.
Syrup:
In a medium size saucepan, whisk coconut milk and cornstarch together. Add other ingredients. Bring to a boil and remove from heat. Store in the refrigerator up to 2 weeks. Serve with: Serve with butter and coconut syrup.🙌🏻🥞🥞🍌🍌☀️☀️✨ Enjoy!

Thai Chicken Pizza 🍕
Ingredients
Peanut Sauce:
1/4 cup balsamic vinegar
2 1/2 Tablespoons granulated sugar
2 Tablespoons brown sugar
2 Tablespoons soy sauce
1/2 teaspoon crushed red pepper
1/8 teaspoon coarse salt
1 fresh garlic clove crushed
2 Tablepsoons chunky peanut butter
2 pizza dough balls to make two 10 to 12 inches pizza; Tuscan Sun Pizza dough recipe page 133
2 Tablespoons olive oil
2 fresh garlic cloves crushed
1 cup chicken breasts cooked and torn into pieces or shredded
6 thin slices fresh Buffalo Mozzarella cheese
1/2 cup shredded Mozzarella cheese
1 1/2 Tablespoons shredded carrot
Sliced red onion to taste optional
1/4 cup cilantro leaves
1/2 cup whole peanuts
Directions
Pre-Heat over to 500 degrees
Prepare the dough for your pizza. Or use 2 frozen dough balls, thawed.
Prepare the Peanut Sauce:
In a small sauce pan over medium heat bring the vinegar, sugar, brown sugar, soy sauce, red pepper, salt and garlic to a boil stirring frequently.
Remove from heat. Whisk in the peanut butter. Set aside. Sauce must be slightly warm to spread on pizza.
Prepare the pizza dough:
Roll out your dough ball at a time. Place the dough on an oiled pizza pan or baking sheet. Or, on a pizza peel with a little flour and cornmeal to move pizza to a stone or tile.
Mix 2 Tablespoons olive oil in a small bowl with garlic. Brush the mixture over the entire pizza dough.
Spread on half the Peanut Sauce. Spread the chicken pieces around. Disperse the cheeses evenly. Sprinkle carrots and onion, if using. Bake in a 500 degree oven for 6-8 minutes on bottom oven rack until crisp. Remove from oven and sprinkle on the cilantro and peanuts.

Snowball Cookies ☃️❄️
Ingredients-
1 cup Salted butter
3/4 cup Sugar
1 tsp Almond extract
1 tsp Vanilla extract
1 1/2 cups Kamut Flour or 2 cups all-purpose flour
* You can make them plain or add a couple of chocolate chips inside and then roll into a ball or
1 cup Pecans finely chopped ( optional )
Directions-
1- Move oven rack to the middle of the oven. Preheat the oven to 375 degrees.
2-With an electric mixer in a medium size bowl, cream together butter, sugar, almond and vanilla extracts for 2 minutes. Add flour and nuts. Blend well. Cover and chill if desired at this point.
3-Measure a tablespoon of dough and shape around a kiss to cover it completely. Roll into a ball and place on an ungreased cookie sheet.
4-Bake at 375 degrees for 12 minutes until set but not browned. Roll or sprinkle in powdered sugar. Cool and Enjoy!

KAMUT POPPY SEED BREAD🍊✨
MAKES 5 mini loaves (6×3½-in) or 1 large & 1 medium loaf
TIME 5O Mins
BAKE 325 Degrees
BREAD
3 cups White Kamut flour
1 teaspoon French gray coarse salt
1½ teaspoons baking powder
2½ cups sugar
1½ cups milk
1 cup + 1 Tablespoon oil or melted butter
1½ Tablespoons poppy seeds
3 large eggs
2 teaspoons vanilla
1½ teaspoons almond extract
* 1/4-1/2 cup of discard if using
GLAZE
2 teaspoons butter, melted
2 teaspoons milk
¾ cup sugar
¼ cup fresh squeezed orange juice
½ teaspoon vanilla
½ teaspoon almond extract
1. Cut brown parchment paper to fit bottom and up the sides of 5 mini pans. Spray with baking spray with flour. Set aside.
2. In a medium bowl, whisk together flour, salt, baking powder and sugar. In separate bowl, whisk together milk, oil/butter, poppy seeds, eggs and vanilla and almond extract. Pour liquid ingredients into dry ingredients and combine with dough hook or wooden spoon.Do not over-mix. Pour evenly into prepared mini pans.
3. Bake on middle rack at 325°. 42-44 minutes for minis. 50-60 minutes for 2 large loaves.Continue baking until a toothpick comes out with a little bit of crumb on it.
4. While bread is baking, whisk together melted butter, milk, sugar, orange juice and vanilla and almond extract. Set aside. (Glaze will cover entire loaf/loaves).
5. Let bread cool for 5 minutes on a cooling rack. Take bread out of the pans. Separate brown parchment paper from bread and place back on cooling rack. Poke a few holes on top with fork. Place a cooling rack on top of a baking pan so you can catch glaze as it drips over the top of bread. Pour glaze evenly over warm bread. Freeze in freezer bags for up to 2 months
VARIATIONS
Use fresh lemon juice instead of fresh orange juice.

02:05 Add 1 c milk to the dough
02:15 Lightly mix and then knead the dough
02:46 Cover with plastic and let rise for 2 hours
03:15 Choose a cast iron pan and parchment paper
04:08 Roll out the dough, spread the butter, cinnamon and sugar
05:03 Roll the dough up tightly keeping the edges even
06:02 Bifurcate! :D
06:24 Braid the dough and shape for the pan
07:46 Bake at 350 degrees for 30 min
08:27 Make the simple icing or glaze to taste and add to the wreath
THE CINNAMON WREATH
1) Mix dry ingredients:
1 tsp French Gray Salt
1/2 tsp baking soda
1 tsp baking powder
2 1/4 c Kamut® flour
2) Add 1/2 c softened butter and
2 Tbsp sugar
3) Add 1/2 c sourdough discard
4) Add 1 c milk
Mix it all together.
Knead the dough.
Let the dough rise 2 hours in a draft-free place.
Gently knead the dough and roll out.
Butter the dough.
Add white and brown sugar.
Roll up the dough.
Cut in thirds and braid the dough.
Add to the pan on parchment
Bake at 350 degrees (convection if possible) for about 30 min or light brown
Create the icing
1 Tbsp soft butter
1 cup powdered sugar
5-7 Tablespoons of Heavy Cream
Add cream to get either a thick or a thin icing.

Christmas Casserole Recipe
9 x 13 Baking Dish
Butter the dish generously
Enough Slices of Homemade Bread to line the pan
1 lb of Hot Sausage
1/2 lb of Sage Sausage
Wet mixture:
2 c milk
1 tsp dry mustard
6 eggs
1 can Cream of Mushroom soup (Or roux cream sauce)
1/2 c milk

THE FOOD NANNY KAMUT BREAD RECIPE
Makes 2 regular (9 1/2 x 5 3/4 inch) loaves or 6 mini loaves
Ingredients
2 Tbsp active dry yeast 7 cups White Kamut flour, divided
3 cups warm water (105º F) 3 1/2 Tbsp melted butter or olive oil
2/3 cup honey, divided 1 Tbsp French gray coarse salt
1. First prepare a sponge with the flour. In a large bowl, mix together the yeast, warm water, 1/2 cup of honey, and 4 cups flour. Cover and let rest for 20-30 minutes (until doubled in size) in a warm, draft-free place.
2. Add 2/12 more cups flour along with 1/2 cup more honey, the melted butter, or olive oil, and salt. Mix well. Knead for at least 5 minutes. Add the last 1/2 cup flour if dough seems too sticky - 1 Tbsp at a time. Grease bowl, place dough in bowl and cover. Let rise for 30 minutes (until doubled in size) in a warm, draft-free place.
3. Preheat oven to 400º. Spray or butter the pans generously. Punch down the dough to remove air bubbles. Divide evenly and place in greased pans. Cover and let rise until doubled.
4. Place pans inside of the oven when dough is ready. Turn the temperature down to 350º and bake loaves for 30 minutes for large loaves, 25-30 minutes for medium loaves, or 17-18 minuts for minis. Loaves are done when bottom of bread is lightly browned. You can tilt the hot pan just enough to check the bottom. Do not over-bak.
5. When done, immediately remove loaves from pans and place loaves on cooking rack. If desired, brush loaves with butter.
