So you're thinking of opening a food truck, a restaurant or catering full time? I'd like to share with you a few things since I've both catered and owned a restaurant in the past.
Right now is a great time to get into catering because there IS a great demand for it. Lots and lots of opportunity out there for those willing to work at it and go out and do what you love to do.
However! It’s not just cooking, if you really want to do it right it’s a business – it's shopping, selecting, storing foods and equipment, prepping foods, holding the foods after prepping, holding the foods after cooking, holding cooked foods in between those two, the list goes on...Slice Briskets Like the Best Texas BBQ RestaurantsArnieTex2022-10-25 | One of the most controversial topics in BBQ is HOW to slice briskets?
Or what is the best way to slice briskets? In this video I'm gonna share three tips on how to slice briskets like the best BBQ houses and demonstrate exactly how to slice it perfectly.
Tip 1 is to slice across the grain. In order for the brisket to be super tender it needs to get cut across the grain, which is the same as saying “against the grain” in case you heard that term. But remember - the brisket is made of two different muscles. The point meat and the flat. And the grain does not run the same on both of them. So if it’s meat side up or fat side up “another very controversial conversation” it may need to slice it differently.
Tip 2 is to rotate the second half of the brisket while slicing. Most all BBQ restaurants slice – with the fatty point meat on top in order to slice across the grain and get the best out of the point on top. But at this point you are not across the grain of the flat meat which is below the point.
And Tip 3 is you can use your thumb or fingers as a guide to help you maintain consistent slices, generally the flat slices are about ¼ inch or the thickness of a pencil, however the point is much softer so you may need to go a bit thicker to about ⅜ or even ½ of an inch or so, depending how soft or overcooked the brisket might be.
There is no right way or wrong way to slice briskets in my opinion. There are some traditional ways and there are some different ways and ways to maximize yield.
Now a couple of other things to think about is if you are slicing for the backyard, or for event catering you might need to use a different method than the traditional restaurant method.
Also each brisket is a little different in size, in thickness, in shape so those factors may determine how you should slice too

My SALSA ROJA is just savory and dang delicious. Chile piquin, chiltepin, garlic and Roma tomatoes is all you need to make this red salsa. Now, barbacoa translates basically to “barbecue” in English – so does that mean we’re gonna barbecue some barbecue? Not exactly, we’re gonna making BARBACOA de CABEZA aka a WHOLE COW’S HEAD.
But wait, there’s more! In South Texas barbacoa pretty much means BEEF all the time…but in other places barbacoa can be beef, goat or lamb. Confused yet? Don’t worry… cuz this cooking process is SUPER easy.
And yeah, yeah, yeah barbecue is all about tradition but sometimes…you don’t want to dig a hole in the ground to cook an entire cabeza just to enjoy some fresh, delicious and traditional barbacoa.
That’s what’s traditionally called “en pozo” – in a hole in the ground – and that’s how my Dad and grandpa used to make it on the farm. Well I got my above ground pozo right here! My (brooks?) drum smoker.
I’m gonna start by smoking this cabeza just a little bit (elaborate more here? What temp? How long?) and to finish it it we will transfer it to a roasting pan wrapped in foil with a bayleaf and cook it all night till it’s done (about how long? At what temp?).
So why would you want to cook a WHOLE cabeza for barbacoa and not just grab a pound from the meat market?
Well, first of all you get ALL of the lean lengua and all of the moist cachete meat which will let you blend a perfect bite of barbacoa in your tacos.
Secondly, by cooking it in the drum instead of the oven or crock pot we get to put some smoky flavor on the cabeza which will make the experience all the better..

Very few plates at a Mexican restaurant grab your attention like a plate of sizzling fajitas. First you hear it, then you smell it…then you wish you ordered that platón instead of the chicken enchiladas.
In this video we’re cooking up Restaurant Style Fajitas. I decided to grab some outside skirts for maximum tenderness, but beware when shopping for them. This particular cut goes fast in stores as restaurants demand such large quantities of it. Either side of skirt will have you eating good either way.
And here is the weekly Pro Tip: Don’t over cook them! Common sense, I know, but you would be surprised how easy these can get away from you. Both the scorching plancha and the sizzling platter can keep the fajitas cooking even more and dry out what would otherwise be delicious and tender meat. Shoot for a medium or even medium-rare before you plate it on skillet to serve.
I always say that BBQ is simple, and although we aren’t on a live fire today the principles still apply. A scorching hot heat source, a great cut of beef and a little technique is all it takes for a dinner that will blow away any one who is lucky enough to chow down.
