Locust Bean Gum is a powerful thickening and gelling agent used across the food, pharmaceutical, and cosmetics industries. Available in various grades, it offers flexibility in gel strength, clarity, and viscosity, especially when used in combination with hydrocolloids like xanthan gum, agar, or carrageenan.
However, Locust Bean Gum is notoriously difficult to mix. The powder starts hydrating as soon as it hits the water, often forming lumps or “fish eyes” if not dispersed quickly enough. Even premixing or operator vigilance can’t prevent agglomerates when using conventional agitators, which lack the shear force to break them down.
