Watch Maureen make this delicious healthy diabetic friendly pumpkin bread recipe! It is delicious and a great alternative to some of the higher calorie, higher sugar holiday dessert options. If you like what you see and want to try it at home, here is the recipe:
Pumpkin Bread
1 1/2 cups of flour
1 tablespoon pumpkin pie spice
1/2 teaspoon of salt
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1 1/2 cups of sugar
1 1/2 cup of low-fat vanilla yogurt
Three egg whites
1 cup canned pumpkin
preheat oven to 350°
combine dry ingredients and set aside
Mix together yogurt, sugar, and egg whites. Whisk together well
Then add in the pumpkin and mix
Add in the dry and mix until moistened
Bake for 60 minutes in a loaf pan or until knife inserted comes out clean
