Spaghetti 300g-400g (this makes 3-4 portions. Halve everything and use 200g spaghetti for smaller portions for two people) Thin-sliced pork, 200g Maitake mushrooms, 250g Shiso leaves, 5
Sauce Soy sauce 3 tbsp Dashi powder 1 tsp
Real wasabi, few inches
1. Boil pasta in salted water 2. Prep: tear up the maitake mushrooms into bite sized pieces. Roll up the cleaned shiso leaves and cut into slices (julienne). Combine sauce ingredients, but leave the wasabi alone for now. 3. Add a little oil to a large pan and add the pork. Cook until just starting to colour. 4. Turn the heat to medium high and add mushrooms. 5. Drain spaghetti and add 3 tbsp of pasta water to the sauce. 6. Add spaghetti to pork and mushrooms, followed by the sauce, and stir. Turn off the heat. 7. Prep wasabi by removing the stems, then paring off the outer skin. Grate as much as is desired and put it on your pasta. If you're using tube wasabi, you can put it in whenever you like, as the spice doesn't dissipate with heat like real wasabi. Recipe for the Steak Donburi with Wasabi: 1 steak (cut of your choice) 1/2-1 tsp salt and pepper
1. Salt and pepper the steak and bring to room temperature. 2. Add a touch of oil to a skillet, then fry the steak on medium high heat for 1 min 15 on each side (longer for thicker cuts) 3. Remove from pan and cover in foil for 5 min. 4. Add sauce ingredients to pan and heat through. 5. Turn off heat and return the steak to the pan to mix with the sauce. 6. Cut and serve on rice with a drizzle of sauce and a blob of freshly grated wasabi. Don't grate the wasabi until everything else is done!

How to make these udon gyoza: 1. Mince the spring onions 2. Peel and grate the garlic and ginger 3. Cut up the defrosted udon into bite sized pieces 4. Beat the eggs 5. Combine all udon gyoza ingredients and mix thoroughly 6. Pour a small amount of vegetable oil into a pan and let it lightly coat the base 7. Make the gyoza by scooping a piece with your spoon and shaping it with your hand 8. Lay the gyoza onto the pan 9. Cover and cook for three minutes. Flip, cover and cook for a further three minutes 10. Flip once more, and cook uncovered for two more minutes until crispy

How to make this soy milk cream cheese: 1. Heat the soy milk until it is steaming, but not bubbling. Turn off the heat and stir to remove any skin. 2. Add lemon juice and stir. It should curdle and go lumpy. 3. Leave to cool for 10 minutes. 4. Prepare a sieve over a bowl with kitchen towels. 5. Pour the soy milk mixture into the sieve. 6. Leave for 30 minutes to let the liquid drain. 7. Put the remaining solids into a blender and blend until it stops being lumpy. 8. Add salt and coconut oil and blend until smooth. 9. Transfer to container of your choice and chill in the fridge for at least 3 hours. 10. Store in the fridge for 3-5 days.

Admittedly it was pretty difficult to make it look pretty, so I made little cloud cheesecakes. But it was amazing as a dessert dip with some sweet biscuits, so that’s the form I would recommend!
How to make these cloud cheesecakes (or cheesecake dessert dip) 1. Bring your cream cheese to room temperature (I left it out for two hours, though you can carefully microwave it), and add the sugar. 2. Using a rubber spatula, mix until creamy and smooth. 3. Separately, whisk the cream with the vanilla essence for about 7 minutes or until medium-stiff peaks form. 4. Combine the two mixtures, and mix carefully until homogenous and weirdly fluffy. 5. Serve in your preferred form.

This marbled cheesecake brownie was actually meant to look like a spiderweb for Halloween, but it didn’t quite fit the bill. But it was an insanely tasty dessert so I had to share it with you!
How to make these cheesecake swirl brownies: 1. Preheat oven to 180°C and butter and line your cake tin. 2. Bring a shallow pot of water to boiling and then bring to a very low heat, (or turned off completely if hot enough) placing a heat-proof bowl on top. 3. Into the bowl, add cut up butter and chocolate, and stir until smooth. 4. Remove from the heat and whisk in the sugar for about a minute. 5. Make sure the bowl has cooled to a touchable temperature (be careful!), then add eggs and vanilla. Whisk until smooth for about a minute. 6. Add salt, flour, and cocoa powder. Mix until *just* combined. Do not over-mix or your brownie will turn out cakey. 7. Next, make the cheesecake swirls by combining all cheesecake swirl ingredients. 8. Get your prepared cake tin, and if making the full recipe, add 1/4 of the brownie batter to the base. (We’ll use one more quarter, and the other half you can use in the same way for the second cake). 9. Dollop cheesecake batter and brownie batter in alternation, then run your knife through them to create your desired pattern. 10. Bake for 25-35 minutes, depending on how gooey you like your brownies. (I said 35 in the video, but in reality it was closer to 29) 11. Let cool, then enjoy!

It’s not like I used to eat crumpets and tea every day, but I did love crumpets and they’re impossible to get here! So I decided to make them myself…
Ingredients for these British crumpets: Sugar 1 tsp Bread flour 100g Cake flour 50g Warm water 200ml Salt 1/2 tsp Baking powder 1 tsp Yeast 1 tsp Warm water 3 tbsp Butter as needed
How to make these crumpets: 1. Combine yeast and 3 tbsp warm water. 2. Combine all other dry ingredients and 200ml water in a separate, large bowl. Whisk for 2 minutes until smooth/ 3. Add yeast mixture. Whisk for 30 seconds until smooth. 4. Cover with a damp tea towel and leave for 15-30 minutes in a warm place until foamy and ever so slightly risen. 5. Grease crumpet rings with a lot of butter, leaving no space uncovered. 6. Lightly grease the base of a dutch oven or pot with butter, then add the rings, cover and heat for 2 minutes. 7. Pour 40ml (60ml for thicker crumpets) of batter into each ring. Turn heat to medium high and cook for 30 seconds. 8. Turn down to medium low for 5 minutes, or until mostly cooked. 9. Remove the rings and flip the crumpets, cooking for 30 seconds - 1 minute or until golden brown. 10. Remove to a wire rack, then place in an airtight container in a cool dry place. Best served toasted the next day with a nice helping of butter.

If you can get your hands on some pastry, these are actually so easy to make!
Ingredients for these mummy pies: Pastry (puff pastry or otherwise) Nutella at least 2 tsp per pie Marshmallows 1/3 per pie Chocolate chips two per pie Melted butter 1/2 tsp per pie
How to make these easy halloween snacks: 1. Defrost the pastry if needed 2. Cut the marshmallows into thirds, then cut those in half to make expressive eyes 3. Cut the pastry into the desired sizes, making one square a tiny bit bigger for the bandages. For every two rectangles for the base, I used one rectangle for bandages. Roll them out nice and thin (much thinner than I did!) 4. Cut up the bandage rectangle into strips. 5. Cover the bases in Nutella, then lay on the bandages, leaving space for the eyes. 6. Cover in melted butter (optional), then bake in the oven for 10-15 minutes. 7. Place cut marshmallows in the spaces and add chocolate chips for the pupils. Tip: Once you’ve put the marshmallows and chocolate chips on, place the pies in the warm oven (switched off) for a few minutes. The marshmallows and chocolate will stick together so they don’t fall off when you eat them!
