Chicken Fingers
2 Large Chicken Breasts
6 Eggs
2 Cups All Purpose Flour
2 Cups Panko Breadcrumbs
2 Tablespoons Salt
2 Quarts Vegetable Oil
Buffalo Sauce
1/4lb Unsalted Butter
2 Cups Franks Red Hot Sauce
1 Teaspoon Salt
1 Teaspoon Garlic Powder
1 Teaspoon Cayenne Pepper
Blue Cheese Dressing
4oz Blue Cheese
1 Cup Mayonnaise
1 Cup Full Fat Sour Cream
½ Cup MFC Ranch Dressing (Substitute with your favourite brand)
1 Tablespoon White Vinegar
1 Tablespoon Salt
Stingers
4 Hoagies
1 Large Tomato
1 Medium White Onion
½ Head Iceberg Lettuce
2lb Ribeye, shaved as thinly as possible
8 slices of American Cheese
8 slices of Swiss Cheese
8 pieces Chicken Fingers
1 recipe Buffalo Sauce
1 recipe Blue Cheese Dressing
COOKING METHOD:
Chicken Fingers
1. Slice each chicken breast lengthwise into 4 evenly sized pieces.
2. Set up a breading station with three bowls:
- 2 Cups All Purpose Flour
- 6 Eggs, whisked
- 2 CupsPanko breadcrumbs
3. Bread each chicken piece by dusting them in flour, dipping them in the egg, and then coating each piece evenly in panko breadcrumbs
4. Repeat with the remaining chicken pieces.
5. In a large pot, heat 2 quarts of vegetable oil over medium heat until it reaches 350°F.
6. Fry the chicken fingers in batches until golden brown and fully cooked, about 5 minutes.
7. Remove each piece with tongs and place on a wire rack set over a baking sheet to cool slightly before using.
Buffalo Sauce
1. In a medium saucepan over medium heat, combine:
- ¼ lb Unsalted butter
- 2 cups Frank’s RedHot sauce
- 1 teaspoon Salt
- 1 teaspoon Garlic powder
- 1 teaspoon Cayenne pepper
2. Whisk vigorously until fully combined and smooth.
3. Remove from heat and reserve until needed.
Blue Cheese Dressing
1. In a blender, combine:
- 4oz Blue Cheese
- 1 cup Mayonnaise
- 1 cup Full Fat Sour Cream
- ½ cup MFC Ranch Dressing (Substitute with your favourite brand)
- 1 tablespoon White Vinegar
- 1 tablespoon Salt
2. Blend until smooth and reserve until needed.
Building the Stinger
1. Thinly slice:
- 1 tomato
- 1 white onion (skin removed)
- ½ head of iceberg lettuce
2. Set aside until needed.
3. Toast the hoagie buns in a 350°F oven for about 4 minutes.
4. In a large cast-iron skillet over medium-high heat, brown 2 lbs thinly sliced ribeye until fully cooked and golden brown. Season with salt and pepper.
5. While cooking, use a spatula to chop the ribeye into smaller pieces.
6. Remove from heat and set aside.
To build the sandwiches:
7. Slice each hoagie in half lengthwise.
8. Hollow out the top half of each hoagie.
9. Evenly divide the cooked ribeye between 4 hoagie buns.
10. Top each portion of meat with 2 slices American cheese and 2 slices Swiss cheese.
11. Dip 2 chicken fingers per sandwich into buffalo sauce, letting excess drip off. Place them on top of the ribeye and cheese.
12. Drizzle with about 2 tablespoons of Blue Cheese Dressing per hoagie (adjust to taste).
13. Top with sliced onion, tomato, and shredded iceberg lettuce.
14. Cut each hoagie in half before serving.

COOKIN' METHOD:
Preparing and Cooking the Meatloaf
1.Preheat your oven to 350°F.
2. In a large mixing bowl, combine:
- ½ white onion, grated
- 1 egg
- ½ Cup Breadcrumbs
- ¼ Cup Whole Milk
- 1 Teaspoon Toasted Fennel seed
- ¼ Teaspoon Cayenne pepper
- ½ Tablespoon Paprika
- 2 Tablespoons Worcestershire sauce
- 2 Tablespoons Ballpark mustard
- ½ cup MFC Original BBQ Sauce
- 2 tablespoons MFC Original BBQ Spice
3. Mix thoroughly until well combined.
4. Add 2 lbs lean ground beef and 1 lb lean ground pork.
5. Using your hands, mix everything until all of the ingredients are evenly incorporated.
6. Transfer the mixture into a loaf pan, flatten the top, and use your index finger to create an even groove around the edges of the pan.
7. Sprinkle the top evenly with 2 tablespoons MFC Original BBQ Spice, then brush on an additional ¼ cup MFC Original BBQ Sauce.
8. Bake until the internal temperature reaches 155°F.
9. Remove from the oven and allow to cool slightly before serving- For best results, refrigerate the meatloaf overnight before slicing and serving.
Making the Meatloaf Sandwiches-
1. Spread ½ tablespoon Ballpark mustard and ½ tablespoon mayonnaise evenly on one slice of bread.
2. On the other slice of bread, place 4 bread-and-butter pickle slices.
3. Slice the cooked, rested meatloaf into even 1-inch slices.
4. Place a slice (or more, as desired) on the bread with mustard and mayo, then top with the pickle-covered slice.
5. Repeat to make as many sandwiches as needed.
6. Wrap in parchment paper for later, or enjoy immediately.
Baked Mac & Cheese Casserole
1. Preheat your oven to 350°F.
2. Cook 2 boxes of MFC Cream Sharp Ched noodles according to the package instructions.
3. Drain the pasta, then, while it is still hot, stir in:
- ¼ cup unsalted butter (room temperature)
- ½ cup whole milk
- The two included mac and cheese seasoning packets
4. If the mac and cheese is too thick, add 1 tablespoon of whole milk at a time, stirring until the desired consistency is reached.
5. Spread half of the mac and cheese into an appropriately sized casserole dish.
6. Top with 1 cup of shredded marble cheddar.
7. Add the remaining mac and cheese, then top with another 1 cup of shredded marble cheddar.
8. Sprinkle the top with ½ bag of blended or crushed Funyuns.
9. Bake for 30 minutes, or until the cheese is melted and the top is golden brown.
10. Allow the casserole to rest for 20 minutes before serving.
Greek Salad
1. Cut the head of iceberg lettuce in half, then wash and dry each half thoroughly.
2. Cut each half into quarters and remove the stem.
3. Slice each quarter into 2-inch pieces and place in a large bowl.
4. Add ½ head of red onion, thinly sliced.
5. Toss the lettuce and onion with as much MFC Greek Salad Dressing as desired.
6. Top with:
- Sliced green bell pepper
- Thinly sliced coins of English cucumber
- Tomato wedges with the stem removed
7. Using your hands, crumble 4 oz feta cheese over the top and serve with ½ a lemon on the side.
8. Serve with additional MFC Greek Salad Dressing on the side.

INGREDIENTS:
1 small pork butt (approx. 1.5–2 lbs)
1 tbsp olive oil
1 tsp garlic powder
1 tsp onion powder
Salt and freshly ground black pepper, to taste
200g udon noodles (fresh or frozen)
2 tbsp sesame seeds
1 tsp freshly ground black pepper
2 tbsp unsalted butter
2 garlic cloves, thinly sliced
1 tbsp olive oil
2 tbsp tahini paste
½ cup finely grated Parmesan cheese, plus more to finish
2 egg yolks, divided (1 for sauce, 1 for garnish)
1 tbsp chives, finely chopped
COOKING METHOD:
Roast the Pork Butt:
1. Preheat the oven to 400°F (200°C).
2. Rub the pork butt with olive oil, garlic powder, onion powder, salt, and pepper.
3. Place on a wire rack set over a tray and roast on the middle rack for about 35 minutes, or until internal temperature reaches 150°F (for medium, slightly pink).
4. Let the pork cool at room temperature, then chill in the fridge to firm up for slicing.
Prepare the Noodles:
1. Bring a pot of salted water to a boil.
2. Cook the udon noodles for about 4 minutes, or according to package instructions. Reserve some noodle water.
Make the Sauce:
1. In a dry pan, toast sesame seeds and ground pepper over medium heat until golden and fragrant.
2. Add unsalted butter, sliced garlic, and a splash of olive oil to the pan. Cook until garlic is softened but not browned.
3. Stir in tahini paste and grated Parmesan cheese. Mix to form a sauce.
4. Add the cooked noodles to the sauce, loosening with reserved noodle water as needed.
5. Off heat, stir in 1 egg yolk for richness. Adjust seasoning and grate more cheese if desired.
Assemble the Dish:
1. Thinly slice the chilled pork butt using a meat slicer or sharp knife.
2. Line slices around the inside of a serving bowl.
3. Twirl the sauced udon noodles into the center.
4. Nestle 1 egg yolk gently in the middle.
5. Finish with a spoonful of finely chopped chives beside the yolk.

INGREDIENTS:
1 lb ribeye, partially frozen
4 cups beef stock
½ white onion
3 carrots, peeled
3 celery stalks
2 green bell peppers, whole
4 garlic cloves, divided
1 tsp dried basil
1 tsp dried oregano
1 tsp garlic powder
1 tsp onion powder
½ tsp celery seed
½ tsp sweet paprika
½ tsp chili flakes (adjust to heat preference)
1 cup giardiniera pickles
½ cup pickled peppers (or mixed into giardiniera)
½ cup Duke’s mayo (or preferred mayonnaise)
8 slices sourdough bread
2 tbsp olive oil
4 slices provolone
½ cup shredded mozzarella
¼ cup shredded cheddar
Salt & pepper, to taste
COOKING METHOD:
Prep the Ribeye:
1. Place the raw ribeye in the freezer for 30–45 minutes, until firm but not frozen solid (this makes it easier to slice thin).
2. Once chilled, slice thinly using a meat slicer or sharp knife. Set aside, refrigerated.
Make the Dipping Broth:
1. In a pot, combine beef stock, all spices, ½ white onion, 3 carrots, 3 celery stalks, 2 whole green peppers, and 2 crushed garlic cloves.
2. Bring to a boil, then lower heat and simmer for at least 30 minutes, until aromatic.
3. Remove the green peppers when they’re about 40% cooked (still crunchy). Transfer them to a bowl, splash in some giardiniera liquid, and cover to steam lightly.
4. Strain and Hold Broth:
5. Strain out the mirepoix and solids from the broth.
6. Pour the clean broth into a new pot and keep hot on low heat.
Giardiniera Mayo:
1. Finely dice the giardiniera and any extra pickled peppers.
2. Mix with Duke’s mayo. Taste and adjust seasoning if needed. Set aside.
Garlic-Crusted Sourdough:
1. In a cast iron pan, heat olive oil and toast both sides of sourdough slices until golden.
2. Place on a wire rack and immediately rub each side with a cut garlic clove.
Melt the Cheese:
1. On half of the toasted bread slices, layer provolone, mozzarella, and cheddar.
2. Melt under the broiler or in a hot oven until bubbly.
Cook the Beef:
1. Drop thin slices of ribeye into the hot seasoned broth. Cook briefly (just until no longer pink), then remove with tongs or a slotted spoon.
Assemble the Sandwich:
1. On a slice of cheesy bread, pile the cooked beef generously.
2. Add a few spoonfuls of giardiniera mayo and the lightly braised peppers.
3. Top with another slice of cheesy garlic bread.
4. Serve with a side of hot beef broth for dipping.

INGREDIENTS:
Boneless Skinless Chicken Breast
Lettuce, shredded
Tomato, sliced
Lemon Pepper seasoning
Ranch
All-Purpose flour
Garlic Powder

Olive Oil
Panko Bread Crumbs

Hamburger Bun
COOKING METHOD:
1. Place the chicken in a ziploc bag. Pound the chicken until flat and thin.
2. Add olive oil to a shallow frying pan. Fill a 1/3 of the pan.
3. Add lemon pepper seasoning to the bread crumbs, and salt and garlic powder to the AP flour. Mix well.
3. Dredge the chicken in the flour, eggs, and lemon pepper seasoned bread crumbs.
4. Add chicken the pan to shallow fry. Fry both sides until golden brown over medium heat. Once fully cooked, add to the side and season with additional lemon pepper seasoning.
5. Toast the buns over low heat.
6. Slice the tomato and shred the lettuce.
ASSEMBLY:
1. On the bottom bun, add shredded lettuce and sliced tomatoes.
2. Add the fried chicken with a dollop of ranch.
3. Finish with the top bun. Cut in half and enjoy!

1 Cuban pepper
1 white onion
2 jalapeños
1 green bell pepper
4 garlic cloves
1 cup beef stock (for blending)
4 cups beef stock (for braising)
½ cup tomato paste

2–2½ lbs beef chuck, cut into 1” cubes
Potatoes & Bacon
1½–2 lbs fingerling potatoes
6–8 strips thick-cut bacon (or enough for ~1 cup lardons), cut into ¼” pieces
4 tablespoons olive oil (for frying)
Potato Salad Dressing
1 cup mayonnaise
1 cup sour cream
Potato Salad Add-ins
1 cup shredded cheddar cheese
1 cup chopped green onion
Salt and pepper, to taste
Sandwich Assembly
¼ white onion, small diced
4 slices dill pickles
2 slices white bread, toasted
Butter (for spreading)
Crushed potato chips (for garnish/serving)
COOKING METHOD:
1. In a blender, combine 1 Cuban pepper, 1 white onion, 2 jalapeños, 1 green pepper, 4 garlic cloves, and 1 cup of beef stock. Blend until smooth.
2. In your preheated slow cooker, add the blended pepper-onion mixture, ½ cup tomato paste, 4 cups beef stock, and 2 cups of Matty Matheson BBQ sauce. Whisk everything together until fully incorporated — this will be the base of your braise.
3. Cut the beef chuck into 1-inch cubes and add to the slow cooker. Set to high and cook for 4 hours.
4. Meanwhile, place the fingerling potatoes in a pot and cover with salted cold water by 1 inch. Bring to a boil over medium-high heat, then reduce to a simmer. Cook until potatoes are easily pierced with a fork. Drain and set aside.
5. Cut your bacon crosswise into ¼-inch lardons. In a skillet over medium-high heat, cook the bacon, stirring frequently and adjusting the heat to prevent burning, until the fat renders and the lardons are browned but still chewy. Transfer to a paper towel-lined plate.
6. In the same skillet, add 4 tablespoons of olive oil. Gently crush the cooked fingerling potatoes and add them to the hot oil. Fry until golden and crispy.
7. Once the beef is done, remove it from the slow cooker and place in a bowl. Using a whisk, mash and shred the meat until it’s pull-apart tender.
8. For the potato salad dressing, whisk together 1 cup of mayo and 1 cup of sour cream.
9. In a large bowl, combine the crispy potatoes, 1 cup shredded cheddar cheese, crispy bacon lardons, 1 cup chopped green onion, and the dressing. Season with salt and pepper to taste, and mix until well combined.
10. To assemble the sandwich:
– Small dice ¼ of a white onion.
– Toast 2 slices of white bread and spread butter on both.
– Pile the pulled beef onto one slice, sprinkle with diced onion and 4 slices of dill pickle.
– Top with the second slice of toast.
– Serve with a side of potato salad topped with a handful of crushed potato chips.
