I love chicken pot pie and I love soup... only makes sense to combine them! This came out soooo delicious and it was extremely easy so I will be making this again, you better believe it! This will also freeze beautifully so it's a perfect meal prep item!

For this week I wanted to have a little theme, so tortillas seemed good to me! For dinner this week I thought I'd try to use tortillas in some capacity each night, and this is wha happened!

I did a little experiment baking fresh from the fridge and then an overnight freeze. both were really good, but I think the ones from the freezer tasted better! Would make sense since the dough had ore time to rest, but both very good options! Definitely make these!

Another delicious week- easy weeknight meals!
MONDAY:
-Tomato chicken, rice, and broccoli.
Boneless, skinless chicken thighs- salt and pepper. Cover with a can of diced fire roasted tomatoes. Top with some minced onion flakes and chicken bouillon powder. Cook at 350F for 2.5-3 hours. The rice was minute rice- perfection. Broccoli was frozen, boiled, and drained. Butter, lemon juice, salt, and pepper.
TUESDAY:
-Dinner at my parents!
WEDNESDAY:
-BBQ marinated steak, roasted broccolini, and some cucumbers.
Marinated the steak strips in bbq sauce, salt, and pepper- cooked on the grill. Roasted the broccolini at 400F with olive oil, salt, and pepper. When thy were done, I squeezed lemon juice all over. Peeled the cucumbers, sliced in half, and topped with a little kosher salt.
THURSDAY:
-Girlllll dinner. Toasted ciabatta bread, roasted cherry tomatoes, and burrata cheese.
FRIDAY:
-Big mac salad.
Burger sauce is 2:1 ratio mayo to ketchup, then just a little yellow mustard, worcestershire sauce, onion powder, garlic powder, salt, pepper, and pickle juice to thin it out. No measurements here- go off what you think tastes best!

This week I made a huge pork butt to use throughout the week. I ended up doing a classic pulled pork sandwich, some delicious bbq pulled pork nachos, and the grand finale of Cuban sandwich enchiladas!
These were all so delicious, easy to make, and fast! Other than the fact of the original pork cook. I love cooking this way- prepping protein for the week and using it in different ways throughout. Give it a try, play around!!

Another delicious week is upon us. What did you have for dinner this week??
MONDAY:
*One pot tomato sausage pasta. I have no measurements for this but what I used was chopped onion, sweet Italian sausage, a short pasta shape, basil, lots of parmesan cheese, and canned tomatoes. I used bone broth for the liquid, but you can use whatever you'd like!
TUESDAY:
*Steak on the grill and my favorite lemon broccoli.
WEDNESDAY:
*Grilled chicken and bagged Cesar salad kit. Threw some crispy chopped bacon in for fun.

Another yummy week, was a little tough mentally, but food wise, delicious! What did you have for dinner this week?
MONDAY:
*BBQ steak tips, string bean salad, and Taylor Farms creamy dill pickle salad.
-Green bean salad: Trim and boil fresh string beans to your liking and drain. Right into a bowl and mix in (in this order) fresh minced garlic, salt, pepper, white vinegar, and olive oil. Give it a good toss every once in a while. Best if made in advance and I leave mine on the counter, but you can also store in the fridge.
TUESDAY:
*BBQ chicken, cucumber salad, and fried leftover rice.
-Cucumber salad: Peel and slice the cucumbers to your desired thickness. In a bowl, add (in this order) salt, pepper, white vinegar and olive oil. This is best made in advance and can sit on the counter or in the fridge- mix every now and then.
WEDNESDAY:
*Chicken Sandwich, pasta salad, and a tossed green salad.
-Garlic lemon aioli: In a bowl mix mayonnaise, lemon zest, lemon juice, salt, pepper, and grated fresh garlic.
-Mom's pasta salad: Her "dressing" is just mayonnaise, salt, pepper, onion powder, and garlic powder.

When I get home from a period of travel, I want something warm, comforting, and simple... but not skimping on the flavor! This French onion chicken dish did just that! Super simple, one pot meal, all the good stuff! I put mine over pasta this but this would really work over anything from rice to potatoes, to even broccoli! Give this a try, it's just the dinner to get you back on track and give some comfort!

Oh my GOODNESS. I have found my new favorite thing to make. Very surprising to me since I really don't like these kinds of desserts, but this one did not disappoint, wow. On today's episode of what's going in the freezer we have egg rolls and chicken patties!
-I like to cook my egg roll filling prior to stuffing and rolling so I fried up some ground chicken, scrambled eggs, shredded cabbage, shredded carrots, and green onions. To add a little flavor I threw in some soy sauce, Japanese barbecue sauce, and sesame oil. I used some store bought egg roll wrappers and stuffed them up! I flash freeze these so they don't bunch together and then bag them up for future use! You can pan fry, deep fry, air fry, or bake in the oven!
-For the chicken patties I threw some boneless skinless chicken thighs in the food processor until a paste like consistency. I added salt, pepper, onion powder, garlic powder, mustard powder, and celery seed. Form them into patties and flash freeze these as well. After they are frozen enough to not stick together, stack with parchment paper in-between, and store in the freezer! When you want one, just take one out and cook how you want! I personally can't wait to make my own crispy chicken sandwich!

-For the string bean salad I like to trim fresh string beans and boil until still a little crunchy. Drain and put into a bowl. Right away put in- in this order- finely chopped garlic, white vinegar, salt, pepper, and olive oil. Ideally this should sit for at least a couple hours and I think it's best at room temp.
*THURSDAY:
-Choose your own adventure dinner!
-Only thing I really did for this dinner was I fried up some Halloumi cheese sprinkled with a little Za'atar. The rest was other picky bits and some leftover string bean salad.

Fun little short one today, but these muffins are anything but short! These tasted amazing, they were so easy to make, and they really aren't that horrible for you! These will be great for freezer prep or if you have a brunch coming up. I had a little trouble blending once I added the flour mixture, so I just went for a manual mix the rest of the way, but all good! Tieghan tops her with a little melted peanut butter and salt, but I didn't feel it was all needed so I stick with just the salt. These were perfection!

If you make anything from this channel, MAKE THESE! I'm more of a waffle girl, but oh my goodness, these pancakes were insanely good and may have turned me into a pancake girl as well. These were so simple and really were a perfect warm and hearty thing to eat on a cold winter morning!

▪️2 Cups Flour
▪️1 tsp Kosher Salt
▪️2 tsp Baking Powder
▪️1 tsp Baking Soda
▪️2 Tbsp Sugar
▪️2 Eggs
▪️2 Cups Buttermilk
▪️2 Tbsp Melted Butter, plus more for serving
1️⃣ In a medium bowl, add the flour, salt, baking powder, baking soda, and sugar. Stir to combine.
2️⃣ In a separate bowl, mix the eggs and buttermilk.
3️⃣ Pour the wet ingredients into the dry and mix until combined, but do not overmix. You want to have some clumps in your batter which will make the panckaes fluffy. Fold in the melted butter.
4️⃣ In a large nonstick skillet or a griddle, heat a thin coating of oil over medium heat. Once the skillet is hot, add about 1/3 cup of the pancake batter and cook until little bubbles form on the surface and pop and the bottom of the pancake is golden brown, about 2 mins. (Lift the edge of the pancake with your spatula to check.) Flip and cook until the other side is golden brown and the pancake is cooked through, about 1 min and 30 seconds. (I usually pierce the middle of the pancake with my spatula to ensure it’s cooked though.)
5️⃣ Serve with warm maple syrup and butter and enjoy!

Mom's Chicken Parm
-Just your normal dredge with egg, flour, and a little panko. Spices she used were oregano, garlic powder, salt, onion powder. Coat all the chicken and fry until golden. Grease a baking dish, layer sauce and cheese on the bottom. Top each cutlet with cheese, sauce, more cheese, and a tiny bit of sauce. Bake until bubbling, the chicken is cooked through, and the cheese is melted.

-1 (14oz) can of Eagle Brand sweetened condensed milk
-1 tsp vanilla extract

*Line an 8x8 dish with foil sprayed with oil. Melt the chips and sweetened condense milk together until smooth in the microwave. Pour the mixture into the prepared dish and place into the fridge until solid.

-Chicken, rice, and cucumbers! Cooked some boneless skinless chicken thighs seasoned with some salt, ginger, garlic powder, and Bachan's Japanese BBQ sauce. I made rice seasoned with sugar, salt, rice vinegar, and sesame oil. I also thinly sliced cucumbers and also seasoned with sugar, salt, sesame oil, rice vinegar, and some more of that Japanese BBQ sauce.

-BBQ chicken pizza! I topped my store bought dough with BBQ chicken, swiss cheese, asparagus, and some leftover rice! This pizza features Ayoh! by Molly Baz in the flavor dill pickle mayo.

Run, don't walk, to the store and grab what you need because you simply MUST make this, it's so good! I love a ham and cheese croissant, so putting it into a bake with some other really great flavors, sold. This is a super easy recipe you can play with to make it your own, or switch it up all together and make it sweet! Either way, I hope you make it!

You HAVE to make this cake. I was skeptical at first because I thought it would be a little dense and maybe a tad dry but oh my goodness, I should have known better. Bon Appetit has never let me down and it wasn't going to start now. This cake was so incredibly flavorful, moist, and absolutely perfect. 1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt
½ tsp. baking powder
¼ tsp. baking soda
½ cup mild-flavored (light) molasses
½ cup (packed; 100 g) dark brown sugar
½ cup (1 stick) unsalted butter, room temperature
1 Tbsp. finely grated ginger (from about a 3" piece)
1 Tbsp. finely grated orange zest (from 1 medium orange)
1 tsp. ground cinnamon
¼ tsp. freshly ground pepper
1large egg
GANACHE
3½–4 oz. 70% dark chocolate, chopped
½ cup heavy cream
¼ tsp. Diamond Crystal or Morton kosher salt
CAKE
Step 1
Place a rack in middle of oven and preheat to 350°. Line bottom of an 8"-diameter cake pan with a parchment paper round. Lightly coat parchment and pan with nonstick vegetable oil spray or room-temperature unsalted butter. Whisk 1½ cups (188 g) all-purpose flour, 1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt, ½ tsp. baking powder, and ¼ tsp. baking soda in a medium bowl. Mix ½ cup mild-flavored (light) molasses and ½ cup water in a measuring glass.
Step 2
Whisk ½ cup (packed; 100 g) dark brown sugar, ½ cup (1 stick) unsalted butter, room temperature, 1 Tbsp. finely grated ginger (from about a 3" piece), 1 Tbsp. finely grated orange zest (from 1 medium orange), 1 tsp. ground cinnamon, and ¼ tsp. freshly ground pepper in a medium bowl until light and creamy, about 5 minutes (if butter isn’t soft enough and mixture is hard to mix, smash butter with a rubber spatula at first to combine, then switch to the whisk). Add 1 large egg; whisk until emulsified, about 1 minute. Add dry ingredients in 3 additions, alternating with molasses mixture in 2 additions, beginning and ending with dry ingredients. Vigorously mix until combined, about 2 minutes (batter may look curdled and that’s okay).
Step 3
Scrape batter into prepared pan and smooth surface with a small offset spatula or a spoon. Bake until cake springs back when gently pressed, 40–45 minutes. Transfer pan to a wire rack and let cake cool in pan 10 minutes. Run offset spatula around sides of pan, then invert cake out onto rack and let cool completely.
GANACHE AND ASSEMBLY
Step 4
Place 3½–4 oz. 70% dark chocolate, chopped, in a medium bowl. Heat ½ cup heavy cream and ¼ tsp. Diamond Crystal or Morton kosher salt in a small saucepan over medium just until beginning to simmer; pour over chocolate. Let sit 2 minutes, then whisk gently until smooth. Let ganache cool until pourable, about 30 minutes. (Or, chill, stirring halfway through, until pourable, about 10 minutes.)
Step 5
Spoon ganache over cake (leave upside down; this will give you a nice flat top) and, using offset spatula, spread evenly over surface, letting some drip down sides. Let cake sit until ganache is fully set, about 30 minutes. (Or, chill about 10 minutes.) Transfer to a cake stand or platter to serve.

This hot gobbler is one of the first sandwiches I decided on for my imagery sandwich shop, it's one of my favorites! Thanksgiving leftovers are subject to all kinds of things, but the sandwich will always be a classic.
What I Used:
-Ciabatta loaf (something soft, yet a little crusty)

These little nuggets of heaven are the perfect addition to any cookie box, holiday dessert table, or just to snack on throughout the week! So crazy easy to make, you'll be making these over and over. Careful, these are addictive!
What You'll Need:
-5 cups oyster crackers
-2 sticks of butter
-1 cup brown sugar
-3 Tsp ground cinnamon: divided
-1 Tsp vanilla extract
-2 Tbs granulated sugar
-3/4 Tsp salt
Method:
1. Line a sheet tray with tin foil and spray with non stick spray.
2. Preheat the over to 350F.
3. Spread the crackers into an even later on the sheet pan.
4. In a sauce pot on the stove over medium heat, melt the butter.
5. Add brown sugar into the butter and stir to incorporate.
6. Bring to a slow boil and stir constantly for 2-3 minutes.
7. Off the heat, add 2 Tsp cinnamon to the mixture and the vanilla extract.
8. Pour the butter mixture evenly over the crackers.
9. Put the pan in the oven for about 5 minutes or until it's bubbling.
10. Mix the remaining cinnamon, sugar, and salt together and sprinkle evenly over the crackers.
11. Set aside in the fridge or freezer until completely set.
12. Break apart and enjoy!!

Kind of a boring week, but delicious all the same!
*MONDAY:
Baked Camembert with garlic and rosemary and some toasted bread.
*TUESDAY:
Cheesesteak Pasta: I don't have a recipe for this because I was just playing around, but what I did use was... some thinly sliced steak, an onion sliced, a couple handfuls of pasta cooked through. To make the sauce make a roux with equal parts butter and flour. Add beef broth and stir until thick. All all the ingredients into the pan with some provolone cheese and you're done!
*WEDNESDAY:
Open faced meatball sub. I used some prepped meatballs from the freezer (video: youtube.com/watch?v=H4Ve98aTVTE ) Toasted up a roll along with the meatballs. Topped with sauce and mozzarella cheese. Put it under the broiler and let it melt!
*THIRSDAY:
Frozen french onion soup from Costco!
*FRIDAY:
-Roasted bone in/skin on chicken thighs: 375F for 40-50 minutes with a broil at the end.
-Roasted brussel sprouts: toss trimmed sprouts with olive oil, salt, pepper, garlic powder, onion powder, and lemon pepper. 400F oven, cook until your desired doneness!
-Crispy smashed potatoes: boil little potatoes until fork tender, transfer to a baking sheet with olive oil and then smash the potatoes. Top with olive oil, salt, pepper, onion powder, and garlic powder. 450F oven and roast until your desired doneness!

I love a good one pot mean- often very delicious and comforting. Best of all, less dishes! I love chicken piccata so this new way to me of having it is a winner in my house!
I really did not fall a recipe but this is what I used : )
-4 chicken thighs- seasoned with salt, pepper, garlic powder, garlic powder, and paprika
-Lots of garlic
-2-3 Tbs capers
-1 cup of long grain white rice
-1 1/2 cups chicken stock
-2 lemons: juiced and zested
-1/4 cup heavy cream
*Oven at 375F. Cook covered for 30 minutes. Remove the cover and cook for a further 20 minutes or until the rice is done, all the liquid is absorbed, and the chicken is cooked through.

This was a yummy week!
*Monday: Steak, brussel sprouts, and mom's pasta salad
-Marinated the steak in BBQ sauce, dijon mustard, salt, pepper, onion powder, and garlic powder. Tossed it on the grill, perfect! I boiled frozen brussel sprouts until they were cooked through, drained them, and added butter, white vinegar, olive oil, salt, and pepper to taste. My Mom's pasta salad is just mayonnaise, salt, pepper, garlic powder, and onion pepper. She also adds cucumbers and sometimes some cubed cheddar cheese.
*Tuesday: Grammie's meatloaf, egg noodles, and broccoli
-The meatloaf starts with ground beef, salt, pepper, worcestershire sauce, sautéed green peppers and onions (chopped), crushed saltine crackers, an egg (I didn't have an egg so I used some dijon mustard), and some ketchup. Mixed it up and threw into a 375F oven cooked until done all the way through. Topped it with a glaze (brown sugar and ketchup), broil for a minute or so but watch it, it'll burn! The broccoli was frozen and boiled until done. Drained- add lemon juice, butter, salt, pepper, and olive oil. Egg noodles just cook until done per package instructions. Add butter, garlic powder, salt, and pepper to taste.
*Wednesday: Meatloaf sandwich!
I love playing with leftovers.
*Thursday: Chicken broccoli and rice casserole
-In a big bowl combine cooked and shredded chicken, cooked and chopped broccoli, chopped and sautéed onion, cream of mushroom soup, mayonnaise, minute rice, and cheese. Toss into a casserole dish and top with shredded cheese. Bake covered in a 350F oven until heated through and bubbling (mine took abut 45 minutes), take the foil off and broil at the end to get the top brown.
*Friday: Take out- steak and cheese

This soup is killer! I used the recipe below for inspiration, however, I did take my liberties- I switched some things out like basil for spinach, added some new things like sausage and pasta, and took away some things like the celery. These are my absolute favorite pop tarts and I've been wanting to make them for a while and now I finally am! These turned out so delicious and they were actually a lot easier than I was thinking! MONDAY:
*Chicken and green bean stir fry: Marinate thinly sliced chicken in soy sauce, teriyaki sauce, garlic, ginger, and sesame oil. Sauté onions, garlic, green beans, and ginger. Remove from the pan. Coat the chicken in a thin layer of corn starch and throw in the pan to cook through. Combine it all together and finish off with the sauce- a little soy sauce, teriyaki sauce, chicken stock, and corn starch. Bring sauce to a boil and you're done! Serve over rice and enjoy.
TUESDAY:
*Chicken kebabs: Marinate the cubed chicken in garlic, lemon pepper, and a lemon and garlic dressing. Skewer the chicken and onion chunks and toss it on the grill to cook through. Serve up with whatever sides you like! My string bean salad and cucumber salads were prepped in my previous video linked above.
WEDNESDAY:
*America chopped suey: Cooked ground beef completely with oregano, salt, and pepper to taste. Add in canned chopped tomatoes. Add in cooked pasta and combine.
THURSDAY:
*In-n-Out style animal tater tots: Cook the tots to the package instruction and then just build your tots to your liking! I used some leftover steak, grilled onions (prepped in my previous video linked above), yellow American cheese, lost of pickles, and some lettuce.
FRIDAY:
*Leveled up buttered pasta: Cook pasta according to package instructions- reserve some pasta water! Off the heat- add butter, a lot of parmesan cheese, crumbled cooked bacon, pasta water, salt and pepper.

Ingredients:
• 5 lbs chicken legs and thighs (bone in)
• 1/2 cup of @newmansown Garlic Vinaigrette & marinade
• 1 tbsp paprika
• 1 tbsp Britscookin Cajun seasoning
• 1 tbsp Britscookin Garlic & Herb
• 1 yellow onion (sliced)
• 1 lemon
• baby red potatoes
Instructions:
• In a bowl, combine chicken, paprika, marinade, juice from half a lemon, Cajun seasoning, and garlic and herb seasoning. Refrigerate for at least an hour, preferably longer.
• Arrange your chicken and vegetables in a baking dish, top with lemon slices, and sprinkle with garlic and herb.
Bake at 425 degrees for 45 minutes.
