Amazing and simple wonton soup, better than anything you can find in the frozen aisle of the supermarket or in your local takeaway.
Here's the recipe:
For the filling:
300g minced chicken
King prawns deshelled and deveined (one for each wonton dumpling)
20g spring onion sliced thin
Ground white pepper
Chicken seasoning powder
Egg yolk
Sugar
Thin soy sauce
For the soup:
Fresh water
Sugar
Chicken seasoning powder
Thin soy sauce
Ground white pepper
1 Pack of siew mai wrap pastry
Onion oil to decorate
Chopped spring oniong to decorate

Lots of you reached out and requested videos on making curry pastes, so we thought we'd start here with Massaman curry.
This is probably the curry paste with the longest list of ingredients. So don't feel daunted when you see the recipe.
Here's the recipe:
For the paste:
2 whole nutmeg
10 whole cardamom
Half tsp cumin seeds
1 tsp of coriander seeds
A few anise star
2 small pieces of cinnamon
5 cloves of garlic
1 shallot
5 small sliced pieces of galangal
6 cloves
2 lemongrass stems
Half tsp whole black pepper
4 bunches of coriander root
1 tsp shrimp paste
6 dried thai birds eye chilli
6/7 dried large sweet chilli
Rind of half a makrut
a tsp of salt if you use a pestle and mortar just to aid with the pounding
For the curry:
You can use any protein of your choice, but traditionally this curry is not prepared with pork.
1 can of coconut milk
2 tbsp fish sauce
1 heaped tbsp of palm sugar (we added a bit more after tasting)
1 tbsp tamarind sauce
Optional:
Add half a sliced white onion near the end
Add some potatoes parboiled and halved
Roasted whole peanuts

It doesn't get much better than Khao Soi? This creamy and spicy Thai noodle soup can be found all over Chiang Mai. Vibrant. Rich. And THAT FLAVOUR. It’s definitely got a laksa vibe to it but truth be told, for me it's even better than laksa.
There's thousands of versions all over Thailand utilising different ingredients, the version we have for you here is a shortcut version using red curry paste. At some point we'll show you the version from scratch. But this will keep you going until then.
Here's the recipe:
This should be enough for 4-6 servings, but I warn you one bowl isn't enough, you'll be back for more.
11 Chicken drumsticks ( you can put less, but generally you would put two in each serving)
200g red curry paste
Half tbsp curry powder
1 can of coconut milk
Some water
Quarter tbsp of salt
1 pack of preserved mustard greens
1 heaped tbsp of palm sugar ( we put another half later)
3-4 banana shallots (or any large shallots, you can substitute red onion)
Spring onion to decorate
A good quality cooking oil
Broad wonton noodles (one pack should be sufficient for 4-6 servings)
3 tbsp fish sauce (you may need to put more, we added one extra)
Optional chilli oil to add when serving
Couple of wedges of lime for each serving

Chef Tou does it again, this is an updated recipe for Thai duck salad or Yum Phed Yang that we did before here's the old recipe for our duck salad.

Now we've turned the heat up and made it crispy and succulent.
Here's the recipe:
For the duck:
340g Duck breast ( keep the skin on)
Self raising flour to coat
A pinch of coarse black pepper
1 tbsp of light soy sauce
Good quality oil
For the salad and sauce:
3 tbsp of fish sauce (we added one more after tasting)
5-6 Cherry tomatoes ( halve or leave whole, Chef Tou completely forgot to add them to the finished dish 🤣🤫
Red and green Thai birds eye chilli ( as many as you can handle)
1 Banana Shallot or two to three regular shallots
Quarter of red, green and red peppers thinly sliced
Half white onion thinly sliced
Palm sugar ( half tbsp to start, we added a bit more)
Garlic ( 5-6 cloves )
Lime juice ( start with one first, we added another half after tasting)
Mint 20g
Spring onion 20g
Coriander 20g
Chinese celery 20g

This is Chef Tou's amazing Oxtail noodle soup recipe. I've been eating this dish for years and it never ever disappoints. It's great for the family as once cooked you can keep it in the fridge for a week and just heat it up when you need it. Hope you enjoy this family favourite.
Here's the recipe:
5 kg oxtail ( feel free to use less)
Enough water to cover the meat ( you may need to top it up)
1 pack of rice vermicelli
2 large sticks of cinnamon
6 star anise
2 whole bulbs of garlic (no need to peel it)
3 large pieces of ginger (no need to peel it)
handful of coriander root
3 to 4 tbsp of our garlic, coriander root and black pepper mixture
3 tbsp light soy sauce
1 tbsp dark soy sauce
2 tbsp golden mountain seasoning
3 tbsp dark sweet soy sauce
3 tbsp oyster sauce
Skin from a whole pineapple
Chinese celery, coriander & spring onion to decorate

Kai tom nam pla, or gai tom nam pla, is a traditional Thai dish with tender chicken simmered in a flavourful broth. Enhanced with fish sauce, herbs, and spices, it’s a protein-rich meal that’s usually paired with rice.
Here's the recipe:
1kg Chicken thighs and drumsticks leave the skin on (feel free to use less)
Handful of garlic
Handful of coriander root
Tbsp of whole black pepper ( just give it a bit of a whack)
6 lengths of lemongrass (the old part not the green part, give this a whack too)
Handful of coriander leaves and stems
6 tbsp of fish sauce
2 tbsp of light soy sauce
2 tbsp of dark sweet soy sauce
Quarter tbsp of dark soy sauce (optional, this is more for the colour of the chicken)
For the sauce:
20-25 Thai birds eye chilli (needs to be hot)
10 cloves of garlic
Half tbsp of palm sugar
3-4 tbsp fish sauce (keep tasting and adjust as necessary)
1.5 tbsp Khao Khua (Toasted sticky rice powder) watch the video for details
Juice from two and a half limes (keep tasting and adjust as necessary)
Bunch of coriander root
Handful of coriander leaves and stems

3 ladles of coconut milk ( we added an extra one during cooking)
2 Heaped Tbsp of panang curry paste (we used Nittaya but up to you, just obviously keep tasting and adjust fish sauce and palm sugar accordingly)
Palm sugar (Use 1 Tbsp first, keep tasting, we added another later on)
Fish sauce (Use 1 Tbsp first, keep tasting, then we added another half Tbsp, then another half)
Thinly sliced Kaffir lime leaves to decorate
Thinly sliced large sweet chilli to decorate

This is an incredibly moorish, umami laden dish. Fried Wild Betel leaves covered with a minced prawn stir fry.

As many Wild Betel leaves ( Bai Cha Plu) as you want ( make sure it's not betel leaves which are Bai Plu in Thai, this is a completely different plant that's very bitter but looks very similar.
1x Egg
7 tbsp rice flour
200g King prawns
20g spring onion sliced thin
20g coriander
20g large sweet chilli
Half tbsp light soy sauce
1 tbsp oyster sauce
Three quarter tbsp sugar
1 heaped tbsp of garlic, black pepper and coriander root mixture

Wow this one is one of my absolute favourites, this is the most requested dish by our customers. Now you can make it at home for your own family.
Here's the recipe:
SAUCE:
4 Tbsp of white vinegar (we started with two but realised we needed more)
2 -3 Tbsp of sugar (started with one and a half)
1 Tbsp salt ( started with half)
3 Cloves of garlic
3 Thai birds eye chilli
SPRING ROLLS:
50g sweet basil
50g fresh mint
1 julienned carrot
Lettuce leaves
Cooked prawns
Rice paper ( bigger is better, easier to roll)
selection of herbs and veg to eat it with, we used dill, mint and lettuce leaves.

Hi guys, apologies for the long absence. We've been taking a bit of a break and been organising a new till system in the restaurant.
This dish is a cracker and this is the first time i've tried it. It's called Yum Makhuea Yaw after the star ingredient which is Thai long eggplant. You should really try to source the long eggplant / aubergine the taste is amazing, especially after roasting it.
Here's the recipe:
1 Thai long eggplant
100g Minced chicken
2 eggs
5-6 prawns
1 Banana shallot sliced thin
20g spring onion sliced thin
20g coriander leaves and stems
3 Sprigs of coriander root
1 tsp of sugar ( we used a bit more, but keep tasting)
8-10 Thai birds eye chilli
Half tbsp chilli powder ( crush the toasted sweet chilli to get this)
3 tbsp fish sauce
2 limes ( we might not use them all, we'll start with 3 tbsp)

1 tbsp Tamarind sauce
As much long bean/ snake bean as you like, replace with french beans if you can't find snake beans
Cherry tomatoes ( go for it, as much as you like)
1 lime

Kua Kling is an absolute classic southern Thai dish. We'll use minced chicken, but you can use any other minced meat. This dish is stir fried with a southern curry paste laced with turmeric. It's spicy and fragrant with a hell of a lot of flavours going on. This dish is sometimes confused as being a curry, it's not a curry but it does utilise making a curry paste to stir fry the ingredients in.

This is a great dish that you get all over South East Asia, but maybe the best one is in Thailand. Spicy, Umami laden dish that is amazingly easy to prepare and cook.
250g prawns
100g stink beans
2 large shallots sliced thin
10 cloves of garlic
2 tsp of shrimp paste
2 tbsp of fish sauce ( use 1 to start off with)
10-12 Thai birds eye chilli
10-12 dried Thai birds eye chilli
pinch of black pepper
1 tbsp oyster sauce
A few tbsp of oil
dash of water
dash of sugar to taste
Some sliced sweet red chilli to dress

I think this is the easiest recipe that we've done here at Fitou's Thai Kitchen.
I mean it only has FOUR ingredients, easy peasy right. So this sauce is called Nam prig Noom, prig noom refers to the type of chilli, large young green chillies. This sauce originates from the North of Thailand and so is less spicy but high in flavour, it is usually placed on the side of your plate or used as a dipping sauce for raw vegetables.
Fair warning it's incredibly moreish.
Here's the recipe:
10 large young green chilli (prig noom)
4 shallots
14 Cloves of garlic
2-3 Tbsp fish sauce (replace with salt if Vegan)
Juice from half a lime
Serve with rice and some raw veggies

The REAL Yellow curry, a watery, spicy amazing curry from the south of Thailand, not Gaeng Gari which is often labelled as yellow curry in the West. This curry is jam packed with fresh Turmeric.
Here's the recipe:
Half coconut neck/ heart of palm
Handful banana shallots sliced thin
Handful of turmeric sliced thin ( we used extra)
Large fresh water prawns
15 cloves of garlic
15 birds eye chilli
15 dried birds eye chilli
2 tsp of shrimp paste
Half litre of water for the blender
1.5 litres of water for the curry
4 Tbsp fish sauce although we used an extra one
4 Tbsp of lemon juice although we used an extra couple and a bit of lime juice

This is another amazing sauce from the lexicon of Thai cuisine, Nam Prig Ong. This sauce is from the north of Thailand and looks like a cross between a Mexican salsa and an Italian ragu sauce.
Hope you enjoy this sauce as much as I did.
Here's the recipe
100g minced chicken
2 banana shallots sliced thin
10 Cloves of garlic
Cherry tomatoes (as much as you like, we used about 15)
Half Tbsp shrimp paste
Some vegetable oil
10-15 Dried Thai birds eye chilli
Dash of water
1 Tbsp Salt (we added another half Tbsp)
2 Tbsp Palm sugar (we added another Tbsp and a half)
1 Tbsp of tamarind sauce (we added another 2 Tbsp)
Chopped coriander to dress
Some raw vegetables preferably something crunchy

35g Roasted peanuts

400g White sugar
200g Preserved garlic
50g Chilli powder ( crush the toasted sweet chilli to get this)
250g Tamarind sauce
2x Large tomatoes
20g Salt
A cup of water for the blender
Decorate with Coriander leaves and whole dry roasted chilli
